When you are on tour with the Professional Bowling Association you travel all over the country - including the lovely southwest US. One night I was invited to an underground bare knuckle fighting match (as a spectator) and after watching several matches me and my bowling buddies took off. We stumbled upon this food truck and believe it or not they made something very similar and at that moment it was the best thing I ever ate. Your video literally took me back to that night! It looks so delicious and your use of authentic ingredients is so refreshing to see. Gracias
You and me both. I live in Louisiana, and have all the great Cajun foods, and would trade it for Mexican food every day. Something about the traditional seasonings, and prep.
These look darn good, Kirb. I just finished deep cleaning my offset chargriller and am prepping chili lime shrimp tacos. This will be my next endeavor.
Cooking is actually my stress reliever. It gets my mind off of things, so I am relaxed when I cook. I am glad you see it. That chili cheese pasta was a hit with the kids, they ask me all the time to make it. Thank you, Be safe and stay blessed my friend.
Hi Kasanita Vi, I have 2 types, one with a wet marinade I used in my taquero days and one I do at home for a quick seasoning. If I have the time, I love the flavor from the wet marinade. I like to let it sit for 2 days before cooking. Wet marinade ua-cam.com/video/Tv34hc58Nmg/v-deo.html Dry rub ua-cam.com/video/fNu1G2lZHW8/v-deo.html
I honestly can't say if it will hold and cook 15lbs. Most I've ever cooked was 8lbs in the 8 qt using those times. Even at 8lbs, it was close to the limit.
@@CookingwithKirby I’ve seen some pretty good looking mole sauce in Mexican stores, I know my grandma uses a glass jar with a yellow label for her mole and it’s amazing. I’m sure homemade tastes better tho but for connivence purposes you could use a jar if that would be better

Hey Kirby, if I were going to do 15lbs, would you still recommend 25 mins per pound? I'm using an instant pot.
I honestly can't say if it will hold and cook 15lbs. Most I've ever cooked was 8lbs in the 8 qt using those times. Even at 8lbs, it was close to the limit.
Oh man looks great bro
Thanks bro, How ya been brotha? You coming down to the valley anytime soon? The homies are catching monsters in the Alamo.
@@CookingwithKirby I’ve been good bro and I’m heading up there next week or the week after bro before the heat kicks in
My boss said that these tacos are good after a hangover 😂 I work at a mexican restaurant in Utah.
What if I only have a slow cooker? (Crockpot) can i follow the same recipe just let it cook longer?
In the slow cooker, set to high for about 4 - 5 hours. Just make sure its pull apart tender. You should be able to achieve the same results.
Kirby = no time for games
Haha Thank you Eric
Finna use your recipe tho
It doesn't hurt to remake it. Get them #thiccthighs fitted Homie!

Could you do molle chicken? Or Fideo?
Ya I can, I just had my aunt from Mexico show me my grandma's recipe. I'm not gonna lie, its a lot to make the sauce for mole.
