just wanted to say that I LOVE yall's videos! being a southern guy living in the south sushi isn't exactly mainstream and I love being able to try all of these rolls myself, it really opens up a whole new world for this small town guy and I can't tell you how much you guys mean to me!
Best duo ever! Love how the cameraman asks all the relevant questions for viewers to understand the cooking process. He also adds the best description to the end product and it’s taste!
hiro and staff, love the videos. your a inspiration to me. I enrolled back into college to pursue my passion for cooking. thank you chef and your crew.
I'm gonna be honest I'm only 15 but I've started making my own sushi at home due to this channel love it and support the food thank you for the experience
Chef, I am a disabled man. I have a disease called Muscular Dystrophy, and it makes it very hard to move my fingers. I have watched ten of your videos in the last 30 minutes. Your skill is unparalleled, and I have such a desire to learn these rolls. I have started practicing it in my home, and you've inspired me to get even better! Thank you very much.
Just come back to the U.K. from getting married in Dalian, China. My wife is going back to Tokyo. I'm not feeling good about it as you can imagine, but watching your videos and dreaming of our future roadtrip to Miami from Atlanta, GA...makes me feel better. Thanks so much; your videos are helping people in ways you may never have imagined!
Love these videos, this roll looks fantastic. absolutely love eel. You guys need to have T-shirts made with chef Hiro's face saying "good afternoon. I'd buy one :D
Rising tides raise all boats. Sharing your recipes grows interest in sushi. More people try it at home, more people come to your restaurant to try it. You guys are good venture capitalists. I wish you continued success.
Looking back at your old videos and then now I can really see that your wonderful chef has really gotten much more comfortable in front of the camera and his English has really improved! Keep up the amazing work I love your videos

Hiroyuki Terada - Diaries of a Master Sushi Chef what’s sauce that you on top,Please I’ve seen many of black sauce on top for sushi roll but I don’t what’s actually sauce , Please master

when he was naming the ingredients. the dark blue words were Kinda hard to read on the black background. not trying to be rude, just wanted to point it out. amazing as always though
All that you guys do is an inspiration! and the sushi always looks incredible! I will definently have to try this roll, I love eel! Can't wait for the next video!
You guys rock can never get enough of watching how you make the Rolls I'm not as good as you but you inspired me to make my own can't wait to try yours someday
The imitation crabp is a no no , i actually prefer not to go to sushi restaurants that serve that crabp, and one of the asparagus was wrinkly, also Hiro you left the black part from the stem on a piece of avocado, i think your restaurant would be the exception though since i have been following for a while, the restaurant is in my bucket list and would like to have a feast like the one you prepared for Robert and guests from deer meat for dinner. Continued succes to you and the crew.
And what was with the plastic bag of eel...? Totally could have skipped showing that it came pre cooked and sauced in a ghetto bag and just showed it come out of the warming oven stuck to the tinfoil. But hey, I'm the guy that serves hotdog sushi and triscuit mini pizzas to house guests so.. who am I trying to kid.
It's basically just specially treated eel. It's the same if you brought salted fish or something. And also the microwave is the method you're supposed to cook the eel. It might not be your taste, but it's probably really good. Also this is something easy you can cook at home. (well some parts are still hard)
Imitation crab has a really bad reputation in the US, but it's because it's used as crab imitation. In reality, it's a fish cake. It's similar to hating tofu because you see it used as imitation meat, of course it'd be crap, but it may be better used as tofu instead of meat cheap replacement. Also, i suppose his imitation crab, the one he uses, is not the same crap some cheap restaurants use.
Greeting from Netherlands! My thanks this awesome chef and crew for making these videos. Preparing sushi at home has been one of my passions for about 2 years now. I still have a lot to learn, and your videos give me both skill and inspiration. Love this viper roll! My hunt for BBQ eel is starting 😊
+addict245 it really depends how much of cream cheese they put in, in some sushi places it's nice in some places it feels like you are just biting cream cheese straight out of the package.
WOW ! i never would have thaught to infuse sushi with bbq , that is genius hiro! Thank you both for the time you guys spend and knowledge that is shared to us hungry viewers
I'm watching this at 10 a.m. on a Monday morning my mouth is watering looks so delicious.... likely today I'm going to eat sushi at lunch time hope I can find one as good as this looks
Your videos are inspirational towards learning how to prepare sushi properly and imitate the delicious dishes you guys make :D keep up the awesome work!
Thanks Hiroyuki for showing your skills and techniques it really helps me at home for my family they love Sushi 🍣 and the person taking the video asking questions 👍
really like that you put the ingredients into the video as well, makes it just easier to follow along and stuff. haven't really tried eel in a long time but my mother really likes it so I might finally give it a try with this roll
Great instructions, thank you!! Didn't make the whole viper roll, but your instructions on how to prepare the unagi were very helpful. Slice the package in half, heat at 400F for 5 minutes and serve on roll. Ended up making an "Unagi Crunch Roll"...Unagi and some avocado on top, and tempura flakes inside. Will have to learn how to make eel sauce so it can be drizzled next time.
Chef you are a great inspiration, I have already cooked many of your dishes. I am a big fan of your videos. When I am in Miami I will definitely visit your Restaurant.
Some friends & I get together to make susi and paint on canvas every once and a while. I am so sad that I am the only one who likes eel sushi, but I keep trying to get them to try it. I have only used the canned eel, didn't know they had it packaged that way. Going tonight for another get-together. I will look for eel packaged like that at the Asian market. THANK YOU!
Yet another excellent dish by Hiroyuki Terada... (good work to the cameraman too) I was salivating the whole time while watching this, I really love BBQ eel, my favourite sushi is Unagi Nigiri, especially with the sauce, I really like the gelatinous texture of the eel... Although I'm not really a fan of imitation crab, but with this viper roll, I suppose I could live with myself and eat 2 plates full... Hahahaha The best thing about sushi is, I don't have to wear my dentures to eat it :) I always enjoy watching your videos, in all my 47 years I've never left Australia, but if I could ever afford to travel overseas, (unfortunately I doubt it though), I will commit to making my first visit to NoVe... :)
btw, this is such a great insight into the operation of a sushi kitchen that I wish other restaurants specialising in other cuisines would do something similar!

IS there anywhere I can order this BBQ Eel?
+Crystal Wolfbane you can find them in Chinese supermarkets they are super yummy :)
Sadly I live in a place with no Chinese marketplaces and no car to get to any. The only way I can get this kind of stuff is if I order it. >.

+Cesar Lopez seriously
There’s no bad time for great sushi in my mind! 🤓
Since u mentioned it ... these videos have drastically increased my sushi making skills haha.... thank you for that
You guys have an eel sauce recipe? I love that stuff!!!
Buy it
In ratio:
Mirin 6
Sake 4
Soyu 2
5 medium sized rock sugar (adjust according if amount is lesser)
Flambe the mirin and sake and put in the rock sugar. Once ALMOST melted, add in the Soyu and reduce to desired consistency. Note the once cooled, it will be thicker.
Doesn't matter which amount you use for the ingredients as long as its in ratio. For example:
Mirin 360ml (6)
Sake 240ml (4)
Soyu 120ml (2)
Rock sugar 3 medium sized
If it's:
Mirin 600ml
Sake 400ml
Soyu 200ml
Then rock sugar is 5 medium sized
Unagi sauce you can buy
Hiro.... I love making sushi but you bring it to a whole level with your beautiful creations. You inspire me.
Answering "good afternoon" was so Hiro, I kind of miss it haha
😊
SO MANY DIFFERENT FLAVORS IN ONE! Amazing

DELUXE! LMAOOO! Didn't think I would see you here but these videos are oddly satisfying eh? XD
Not today illuminati
Hiro I started making my own sushi and I'm really getting the hang of it, my wife couldn't be happier. Thank you so much for the videos.
eel is my favorite fish for sushi but i dont like crab, what is a good replacement
I think No need a replacement just without crab. Simple Eel roll. or Eel Nigiri is better for me, be honest.
Hiro Terada / Day Off okay thank you :D
Squid

ziba ill try them all :D
I always get hungry watching you guys!
AWESOME!!!
Wow first time hiro answered the "how are you?" For the first time and looks like he had a hard time thinking what to answer XD

😆🤣😂ILL BE HER MODEL👄👄👄👄
Hiroyuki !! The master of the MASTERS !!
Gordon Ramsay: absolutely delicious but you forget one thing salt and pepper😂😂😂
No need for seasoning. The cooked unagi already has flavours. Season more and your kidney will grow stones. 😂😂😂
PlayStation4 Slim it's already seasoned in package
I really love and respect you Hiroyuki-San! I am a huge fan!
Is this the most humane way to kill an avocado tho 😔😫
Yes. He beheaded the thing so that it loses all consciousness while it's being split down the middle and torn in half.
died of laughter (i get the joke)
is this the most humane way to execute a comment tho 😔😫
GOOOD, AFTERNOON 🙄
You guys are great. Thank you so much. So far, everything I make is a HIT 😍😍😍
You guys rock can never get enough of watching how you make the Rolls I'm not as good as you but you inspired me to make my own can't wait to try yours someday

anybody else think cream cheese ruins any sushi roll?
I think it makes it creamy in a way. I love cream cheese in my rolls. Maybe it's just my preference haha.
I concur
+addict245 it really depends how much of cream cheese they put in, in some sushi places it's nice in some places it feels like you are just biting cream cheese straight out of the package.
meeeeee!!
1000% disagree.
Actually shocked to hear someone say that.
So many of my favourite rolls have been MADE by the dash of cream cheese
wow chef you are amazing everytime i see you thank you and camera man your a awesome person too
pre cooked eel and imitation crab? I'll pass.
I heard Mcdonald use precook product
Yea, I don't get how Japanese chefs respect this imitation crab.. or ready made curry cubes.
i dont think they respect it, they just like how it taste and if you like how something tastes, why cant you use it?
Whats wrong with pre cooked eel :p
+dfs fe well said :)
