    About Master Sushi Chef Hiroyuki Terada:
    Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on UA-cam.
    At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

    Camera guy, keep doing you. Seriously. Hiro seems like a naturally quiet worker, so its great that you're there to ask questions to break that habit. If not, he'd probably go through a whole 17 minute video without realizing he wasn't talking :P

      This. Thank you. I think Hiro is fairly camera shy and just wants to cook. I am 100% sure you're right that without someone to prompt him he'd probably go the entire video without talking at all.

    I don't know why there are some peoples complaining about the camera man... he make the video funnier and more informative, making good questions and helping with tips and tricks. I really enjoy this format.

      It really transfers. i was a really messy cook but after watching him almost every night before i sleep ( haha a little creepy but really informative , calming and intertaining!) I became so aware of the mess im making, now i use paper towels and do the wiping thing he does all the time haha soon i will advance to little hand towels like hiro 😊

      That's how steaks are supposed to look. Our bodies are capable of safely consuming a lot more than you think. A rare steak is perfectly fine to eat. You could honestly eat a raw steak, but it might not taste the best.
      Cook a steak until it has a nice caramelized outer crust, then take it off. Trust me, the difference in taste between a well-done and a medium-rare steak is night-and-day.

      That looks medium rare to me. It's the perfect way to eat steak. This of course depends on your culture and culinary knowledge. In some cultures, I know any meat that is left uncooked is considered raw and inedible, but it's generally accepted in most cultures across the globe that steak should be cooked this way, or not any more than medium for the best taste. To some chefs, asking them for a well-done (all the way cooked) steak is like an insult to them (search up "Gordon Ramsay gets angry over a well done steak" on UA-cam and you'll understand).

    Suffering from a little bit of wide awake club at 4am I stupidly watched this video. I made it to the end by which time I was in a state of rabid starvation. Knowing there was steak in the fridge the temptation was too great and it ended up in two rare steak sandwiches at 04 30. Great food and this recipe will be soon tried at home, keep them coming.     I had sushi for breakfast. LoL. I agree. Well done steak = ruined steak. The sushi I made was just plain salmon with the crisped skin added inside the rolls. I also think I found real wasabi on Amazon. Sushi Sonic is the name of it and for $15 for a small jar it should be real. It is a freeze dried powder but the flavor is way different that the green colored horseradish you commonly find. The taste is so much milder and sweet. It's hot but doesn't burn your sinuses out of your skull and has a nice kinda grassy taste to it along with a pleasant sweet aftertaste. That roll was a huge, meaty creation. At least I ate before watching so I wouldn't drool all over the place. LoL! See you next time!

    Don't be telling people they are eating steaks wrong. If you come into my restaraunt and ask for a 60 dollar steak to be made well done, you will damn well get it well done. People enjoy food is different ways and should not be told they are enjoying that food wrong. They are paying for it, they deserve it how they want it.

      ohnevergoingtoquit you could give someone a well done cube steak and they wouldn't be able to tell the difference from a well done filet. I know restaurants often won't waste their good steak well done for this reason. shadier places will actually swap out steaks on well done orders

      Aside from the obvious "it's a waste of good food", restaurants benefit too from educating customers to appreciate a less-than-well-done piece of steak. Customers learn to appreciate quality, and will then seek out higher quality (read: more expensive) steaks. This can mean eventually going from a normal Angus to a Matsushima Wagyu, or in tuna terms, from akami to otoro.

      That does not matter thought. People are paying for what they prefer to eat. I would rather give them the meal they ask for then give them something they are not exited to eat because I am attempting to educate them on something they do not wish to be educated on. It's a business, you are there to please. Not to persuade. If they are gonna be educated on steak, it should be done on their own time. not when they are paying a lot of money for a meal.

    But when I eat medium-well steak, the gummy texture makes me gag and spit it out. You tell me I eat it wrong, but I CAN'T eat it less than Well-done, its inedible to me.
    This is why I don't order steak at restaurants, because the waitstaff and cooks are going to be judging and condescending...

      Ryuunohanami That's totally fine, but the chemical composition of steak calls for low temperature, if you want to get the full flavor profile. Overcooking breaks apart the chemicals that make it taste as much as it costs. If you can't eat steak rare, then order another cut of meat that shines at a different temperature.
