I'm from Brazil and here this type of sushi is extremely popular, you'll find it in any Japanese restaurant, we just don't eat it with avocado. We also coat it with panko bread crumbs and fry it, which is great, try it sometime. We call it hot philadelphia or hot rolls.

What’s the trick to keep all the cucumbers from piling up and sticking to the side of the knife as you are chopping? There must be something. Thanks for the video!
Mine piles up too, I just knock it over when it gets high. I think it all depends on how you cut it, some chefs will use the tip of the knife and slice through each piece which prevents sticking, but I think it takes longer.
I want o make these for a Christmas family party. Will it be OK to make the rolls and wrap them and put in fridge and cut them and plate them the next day? Does anyone know? I would hate to ruin a whole batch of sushi but I won't have time on the day of the party. TIA
Sorry for the late reply, hope your Christmas party went well! To answer your question, I don't recommend leaving sushi overnight mainly because the rice starts to harden and fall apart. But if you have no other option, I would take it out of the fridge about 30-40 minutes beforehand so that it "warms" up a bit.

After having bariatric surgery, I struggle with digesting rice. Breaks my Latina heart. 😞 I miss eating sushi. Have you ever tried making sticky quinoa? It’s digestion friendly for me.
I haven't tried using quinoa myself but seems like it's doable, there's a bunch of recipes online. I'm sure the consistency will be different but worth trying!
You can, I know some chefs do. I personally don't though because it alters the flavor and as long as you're eating the sushi in a decent time, the avocado should be fine.
That's actually a very good question because smoked salmon can be cold smoked or hot smoked. Cold smoked keeps the salmon raw while hot smoked salmon is cooked. I like to use cold smoked salmon for Philadelphia rolls but you can use either one depending on your preference. Hope that helps!

Glad you found the video helpful! Cutting is tricky, sharp knife and making sure it's wet and clean is the key.
The only issue is getting the rice correct. Also slightly cooked asparagus is a great addition or sub for avo . Imho 💪🏼

An avocado can be easily taken out of its skin in chunks (pit removed) using a similarly curved butter knife, no need for peeling and slicing. 🙃
