- Healthy vegan freezer meals. Easy way to vegan meal prep for the week. These recipes are healthy, easy and delicious and can be eaten for lunch or dinner. I like to make a big batch and eat the leftovers for lunch. Batch cook a whole week's worth of meals. These plant based recipes are high in fiber, vitamins, minerals and protein. You can cook these in the instant pot, slow cooker, or stove top.

Vegan black bean enchiladas
2 cans of black beans
1 small bag of frozen bell peppers and onions
1 tsp of cumin
1 tsp garlic powser
1 tbsp of soy sauce
pinch of salt
1/2-1 cup of salsa
vegan sour cream
vegan cheddar cheese
Vegan chickpea and sweet potato stew
1 can of chickpeas
1 large sweet potato
3 cloves of garlic - minced
1 tsp fresh ginger - minced
1 cup of water or vegetable broth
1 tbsp soy sauce
1 cup of coconut milk - canned
pinch of salt
1 can of crushed tomatoes
1 cup of chopped broccoli
1 tsp lime zest
top with cilantro
Cheesy vegan pasta bake
1 lb of pasta
2 cups of chopped broccoli
2 cans of lentils
Bag of vegan mozzarella cheese
Jar or two of pasta sauce
1/2-1 cup of vegan sour cream - I really like Kite Hill

Thank you so much, it's so hard to find freezer meals for vegans!!! Also, if you are interested, here's a few tips! For freezing your bags, if you lay them flat to freeze, you can then pick them up after frozen and stack them vertically, like books! Also for your lime trouble, you grab the lime and you can roll it along the counter like a ball, that will squish the insides and let it soften up. You can also microwave them for about 20 seconds after they are cut in half, it helps sooo much for getting juice! Hope that helps!

Thank you! These make about 5-10 portions depending on the recipes. I usually make big batches so that I can eat leftovers for lunch all week.
I might have missed this but do you leave the food in the silicone bags to cook them in the instant pot or boiling water? Have saved the video for when my vegan kids come home, will be great to have things ready to go. Love the recipes and the fact that you can freeze them

Hi, Ruth! Thanks so much for reaching out and for watching my videos. There are about 4-8 servings in each dish, depending on the dish. I cook for my husband and myself and I usually make big batches of food and eat leftovers for lunch for the week. Makes it so I don't have to cook as much, which saves a lot of time.

When cooking the silicon bags in the IP do you keep them sealed during cooking or opened?
You don’t want to cook the bags in the instant pot. Dump the contents out into the instant pot. If you have a hard time getting them to come out, put it in warm water for half an hour to let the contents thaw just enough so you can get it loose.
Or you can take the bags out of the freezer the night before and let them thaw in the fridge
Do you ever cook the dish before freezing it? The videos I’ve watched show that method and I imagine that it’s better for some veggies to be cooked before freezing so the texture holds up.
It depends on the dish and the veggies in it. A lot of the meals can be cooked before and then frozen.

Do you need to add any water to the first recipe when cooking in an instant pot?
It includes a cup of vegetable broth/water in the freezer bag so as long as you add that to the bag before freezing, you're good to go

I can’t freeze cooked pasta always comes out nasty when I re heat
The pasta dish I showed turned out great. Try cooking them al dente when boiling them, so they don’t overcook when getting reheated
What's your favorite freezer meal?
I was using up random ingredients in my fridge and made black bean egg rolls last week! Prebaked them, froze them, then put them in the air fryer when I was ready to eat with salsa
