Heartwarming Homemade English Muffins | Dorie All Day

- Sure you can buy good English muffins at the supermarket, but homemade ones have a beautifully developed wheat flavor with gentle hints of sourdough. They toast brilliantly and have that satisfying bit of extra chew. Dorie's version is cooked on a griddle, finished in the toaster, and slathered with butter and jam. Yum! INGREDIENTS
1 cup (240 milliliters) warm water
1/2 cup (120 milliliters) milk, at room temperature
2 tablespoons flavorless oil, such as canola
3 3/4 cups (510 grams) all-purpose flour, plus more for dusting
2 tablespoons sugar
1 1/4 teaspoons fine sea salt
1 1/4 teaspoons instant dry yeast (such as Saf, Fleischmann’s, or Red Star)
Cornmeal, for dusting
Butter, for griddling
Butter and/or jam, for serving

Dorie explains this nicely! I made them, and she gives good tips here. I will make these again, as they are fairly easy. I would suggest not to flatten them down to much when grilling, and watch your pans heat level as you want them to cook and not burn for 7 minutes each side. Lastly use a fork to split open, and they do freeze! Really a treat!
We absolutely need more Dorie. Please give her a show!!!
I've been a fan of Dorie's recipes and cookbooks for years, but I had no idea what a delight she was in person (well on video). Thank you for this. Plan to try these over the weekend. I love how simple she makes it... how much fun she is... and how she doesn't require English muffin rounds or what not.

For anyone who is on the fence, I just made these today with the video and online recipe ... they're absolutely delicious! Highly recommend weighing out your measurements and resting the dough overnight. So moist with a beautiful crisp on the outside!

Thank you Food52 for bringing Dorie back for more delicious delights. I have been on the fence about making my own English Muffins but have now changed my outlook.
With those store bought muffins I split them, slather some butter on them then put them on the griddle. As I find the toaster desiccates them too much and is not a nice texture.
But these are different and worth the time put into preparing them.

It’s a moot point - you definitely want the WRITTEN recipe! How many times have we heard the wrong amount spoken vs the actual recipe, then everyone gripes and asks what’s the real amount? All the time. The ONLY recipes I’ll cook off the screen is America’s Test Kitchen - those folks are freaking precise. lol
Dorie is who I imagine when Michael Scott says Holly has the sweetness and warmth of a lady baker. I'm pretty sure she's baked on a professional level.
