My Grandma's Apricot Fried Pies -Air Fryer Style

  • Grandma doesn't know what she was missing , not having an air fryer. My grandma's apricot fried pies were my favorite! Now, I can make them with less calories and less mess. This is an easy recipe. It's a fun recipe to make with Opal, my grand daughter. We made them on Valentines day using medium size heart cookie cutters & sealed 2 cutouts with filling inside.     Ingredients
    1 box refrigerated Pillsbury Pie Crust (each box has 2 pie crusts)
    6-8 oz dried apricots
    1 Tbl butter
    1/3 cup granulated sugar
    water to cover apricots
    Spray Oil
    Recipe
    Put apricots in a saucepan and add water. Water should cover the apricots about 1 - 1 1/2 inch over the fruit. On high, bring apricots to a boil then reduce to low heat. Simmer for 20 -30 minutes or until soft. Check at 15 minutes to make sure water doesn't completely absorb. You can add more to cover the bottom of the pan if liquid is gone.
    When soft , add sugar & butter. I use a food processor to blend & mash the mixture. You can also use a potato masher or blend & mash.
    Roll out a pie crust on a surface that is lightly floured. I use a bowl with a 4-5 inch opening to cut out my crust. You can also possibly find a 4-5 inch cookie cutter, jar top, etc. After shapes are cut, press together the unused dough to roll out againd for more crust cutouts. Use both pie crusts in the box.
    Put 1- 1 1/2 TBL spoon of filling in center of each crust.
    I put a cup of water beside me, wet my finger and wet the inside outer edge all the way around of the crust, then fold it over & press to seal with my finger then use a fork to press around the edge. With a knife, poke 2-3 air holes in the crust. After all are ready , spray a little oil on top of each hand pie.
    Preheat your Air Fryer to 375 degrees.
    Add 3 to 4 pies at a time making sure to leave space between each. Fry for 5 minutes checking at 3 minutes. Remove the pies when browned. Sprinkle a little sugar on the pies while still hot. (optional)
    Save remainder pies in sealed bag or container. (after cooled). If eaten later, you can heat them in the Air fryer for 1 or so minutes or in the oven. They are good cold but best eaten hot/warm.

    They look scrumptious, Jodi! My Mother used to make apricot fried pies (and chocolate ones, too) for my brother-in-law, Plaze Othis Crow as a special treat, and we kids got one now and then. Since I love fried grease, I'd probably go for traditional frying, but the air fryer sure seems to make it a lot easier. As always, I enjoyed your video!!

      I’ll check. I haven’t made banana nut in awhile but I do have a good recipe a friend gave me years ago. I’ll look for it.
