Homemade Potato Fries Salad with Bacon and Onion | Easy Pan Fried Potatoes

  • Soft and crunchy potato salad recipe. This is a great alternative to the classic potato salad recipe. What makes this recipe extra tasty is how we made our chopped potatoes. Instead of boil cook potatoes in salt water, we microwaved it and fried in on a pan. This method makes the potato extra crispy. Instead of vinegar and regular mustard, we used dijon mustard, mayonnaise and honey. The onions makes this taste even better but feel free to add eggs and celery as well. Crispy bacon adds even more crunch to this dish.

    Recipe Ingredients:
    - 80g Onion
    - 150g Bacon
    - 600g Potatoes
    - 20g Unsalted Butter
    - 1 Tbsp Spicy Mayo
    - 1 Tbsp Honey Mustard
    - 1 tsp Honey
    - Black Pepper
    - Parsley for Garnish

    Instructions:
    1. Chop your onion into thin slices, cover it with cold water and let it sit. This make the raw onion less spicy when you eat them later.
    2. Chop the bacon into smaller bits, pan fry on high heat. Let it sit until both sides are brown and crunchy, remove the bacon from the pan but keep the bacon fat. We will use this to cook the potatoes.
    3. Peel your potatoes, chop them into small-medium chunks, microwave your chopped potatoes for 8 mins. Poke a hole in the middle of the potatoes, if its soft then its ready, if not, microwave for a few more minutes.
    4. Add your cooked potatoes into the pan and cook it with the bacon fat. Leave in the pan until all sides are brown and crispy, remove the potatoes from the pan.
    5. Make the sauce: Mix mayonnaise, dijon mustard, honey and pepper together.
    6. Plating: add the crispy bacon, drained raw onions and sauce ontop of your crispy potatoes. Garnish with parsley.
