Iceing and draining does help, but the two most important things are to remove all glands in pigs and deer. The second is cooling the meat and getting it on ice. Not stuffing a bag of ice in the chest cavity like an idiot. YOU have got to get the big muscles on ice. Shoulders,hams and defiantly your backstraps.. cracks me up seeing some moron with a deer in the bed of their truck when it's warm outside with a bag of ice in the chest cavity. That is practically only cooling the inside tenders, and they wonder why their deer taste like crap. I have seen processors turn animals like that away.
