Give 'em a squirt of BBQ sauce now and then towards the end. Very tasty. The bacon keeps them tender and they don't dry out. Plenty of time to wait and hydrate while they're cooking too!

I noticed your roux was ligther in colour for this particular dish compared to others i have seen you make. is this typical for cajun dishes such as this or just "felt like that today"? :) not hating or anything. simply trying to learn :)

The ole ribeye of the sky or flying filet mignon! I normally just remove the breast using a small cut under it. Then pull up. Also those hearts on a skewer with just coarse sea salt BBOOYYYYYYYYYYY HOWDYYY! I'm going to try your method, it looks like it yields a lot more meat.
