When I was a kid, my grandparents would raise 5-6 hogs a year to butcher in the Fall. My grandma would make cracklin cornbread, she'd cook the cracklins until they were chewy and put them in the cornbread mix with diced jalapeno. That shit was out of this world!

Here in Slovenia, we corse grinde the fat into small pieces, fry them with some onions, salt and put them in glass jars together with liquid fat. It's good for at least a year. We use this stuff (we call it ocvirki) for many different dishes. Simplest way is to put a spoon of it in a pan and throw two or three eggs in. Or you can just spread it on piece of bread. Can't really live without it :)

@spacetimegeezy I love Vegas. My second time. First time was in June. But I would say it's not great when the F1 is there. A lot of the sights are blocked off and there is F1 infrastructure everywhere. I would highly recommend going any time when the F1 isn't there. That's my opinion anyway.

In Croatia We call that "Čvarci" but We use onion and milk when cooking and after that We press them through strainer and you get cheese like circle and just put some salt in It and you get a hell ton of fat for base of ANY meal...the secret is you mix them till they finish because the more you cook them the bigger chance is that They will burn...I'm happy to see Americans have the same culture ❤👍

With most of the dry land there already settled by their own immigrants the Acadians wound up getting kicked out into the swamps and eventually became the modern day Cajun. So yeah, lots of Cajun food and culture is just old school French plus crayfish and hot sauce.

When frying anything I like to hold a large fry basket with one hand over the pot and a dipper in the other to allow most of the grease to drain off before I make the swing to the table. never made craklins but have two 30-gallon pots and two 15-gallon pots and one five gallons. I see this in my future.

I cool my cracklins in the freezer for an hour after rendering down Then I pop them. I feel it makes them more tender and soft with more crunch if that makes sense
