I learned to cook Cajun and Creole from a paperback I got for .99 cents at a used bookstore about 30 years ago. Bought many more cookbooks, still have 'em. Your videos like this put those paperback cookbooks into easily taught recipes. Nice work!
Isn’t it cook the little gems you find like that. When I was 7 I found a severely tattered old Boy Scout handbook in my uncle’s belongings after he passed away just shy of 20. I learned so much from that book. We didn’t have scouts in our area at the time. I eventually Joined when we formed a few troops nearby. Still use so many things from that old tattered handbook to this day. Wish I could find that thing.

@@Cam-lv4cl never had ceviche with Cuda so can't compare. I'm in Pinellas county, near Tampa, and saltwater fish weekly. Jack's are great for cerviche and sushi due to the firmness like tuna. Bleed them out immediately, cut out all the red meat when cleaning

Can't recommend cooking fish you caught yourself enough. Not only is it tons of fun and you can't get fish fresher than that, it gives you a new perspective on the food you eat. I hope you get to enjoy that experience!

We both enjoyed the fish and had a memory that will last a lifetime. The peace that comes with fishing is unmatched
I'm from Springfield LA, that's the way we make it excepted we throw a little flour on the catfish and sear each side of the catfish before we place it in the gravy.

It has been a long time since I've had some Alligator Gar. When I was a kid, my dad caught a huge Alligator Gar on the Colorado river and when we got back to the camp, he gutted it and tossed the whole thing right onto the coals of the campfire. When it was done, the meat just fell off the bones.. It was absolutely delicious.
I love this guy. Doing some cajun cooking with "Catfish" and drinking a "Bloody Mary" with a celery stick. How could you not love this. I would love to fish with this guy and try that cooking out. I really never knew anyone ate gar until I saw it on this channel. We used to catch monsters just south of downtown Dallas when I was in Highschool. But we'd just get them up on the bank and take a picture of those prehistoric monsters.

Those 150 W LED lights are no joke. He has six of them. I installed one of those at our church and it looks like a soccer field at night.
