  • Who’s ready for a Banh mi battle? Pro chef King Phojanakong from The Institute of Culinary Education and home cook Emily are swapping supplies and hitting the kitchen! We set Emily up with the finest ingredients from chef King’s kitchen along with his recipe for a decadent $167 banh mi. With lots of ingredients and even more questions to accompany them, food scientist Rose dialed in for a tutorial teleconference to help Emily along the way. Meanwhile over with chef King, a much more modest $19 worth of ingredients were being finessed in his quest to make a gourmet dish without his usual arsenal.       i think the last one with the fried chicken sandwich- i don't think the pro didn't add anything that wasn't in the box from that episode either. I think since they are back in the studio, they have less access to random things that's not from the box. I

      The only thing it could even seem he added was the pork fat, but he just trimmed that off the chops, and the other commented is right, the chicken sandwich also didn't have added ingredients.
      Seeing the professional chefs completely transform normal ingredients is so much better than watching them add things lmao

    This is probably the best video of these series so far. King was the Chef that just happened to have the video where I commented that enough was enough, they've got to stop substituting the ingredients in the home cook's recipe with the things that they prefer to use but not everyone will have.
    In this video, King makes additions to Emily's recipe without adding a single thing but rather repurposing parts of ingredients that he already has on hand, like the pickle juice and pork fat. Sure he added things, but it was with things the home cook had already him with and a little technique on top.
    I was always curious about re-using the brine from a jar of pickles for a quick pickle when I'm feeling lazy but never actually tried it. I'm happy to see it does work just fine.

      Once a normalcy is restored.. I want to see a 2 “versus” 2 ‘challenge.’ Chef and a “level” chef versus a Chef and a Level chef. On each ‘team’ they have the regular format of ‘expensive versus ‘cheap’ however, the Chefs throw in a different item to ‘throw off’ the other chef. So, four meals. One cheaper and one expensive, with twists.

    A banh mi in vietnam costs less than 2$. In the us, around 6-7$, so 19$ is quite expensive, but i think with those ingredients, you can make like 5 banh mi or more. So it is not so bad after all :)

      Don't forget to factor in cost of living, and the fact that they include the cost of the entire container of everything they buy, $5 of the $19 sandwich is mayo and fish sauce

      @@jonathandelrosario5843 The most common fillings are pâté and pork sausage (chả lụa), but it also varies across regions of Vietnam. In the north we have pâté, red sausage (xúc xích đỏ, kind of like Western sausage but with lots of pork skin) and pork floss, while in the south we add more cold cuts like ham.

      @@jonathandelrosario5843 I think the meat that you're looking for is giò chả or chả lụa. It is made of chopped or pound lean pork, potato starch, seasoned with fish sauce, black pepper and wrapped in banana leaves.

      But yea the price comparison is for dramatic effect. One episode the chef's meal included a small salad which they put like a tsp of balsamic vinegar in the dressing and used a huge bottle of aged vinegar costing $87 which was like 80% of the price quoted for the entire chef meal lol

      True it's for dramatic effects, but the same calculations also applied for the pro chefs (price of the entire bottle/packet etc. even when they just used a small amount). So I guess it's fair, except that the price of the chef's ingredients are inherently higher (which is kinda a main point of the show?)

      People are overreacting to 19 dollars Bánh Mì because it's too much in Vietnam, because it's about 1 to 2 dollars when I eat it when I was about 5 to 6 years old, so Vietnamese people overreacting to 19 dollars Bánh Mì is normal.

      @@23rdcenturyhobbit TBH, banh mi is kinda DIY sandwich. A baguette, cilantros, butter, a kind of protein-steak, pork or chicken-pickled veggies, and a “secret sauce”. Make one yourself. It’s easy ;)))

    I've used that in my life, so helpful, thanks Emily. "Nothing bad ever happens on medium" (and it's correlary--"nothing bad happens at 350 degrees" in the oven) And love King. He just is so happy with the basic ingredients--that's a chef! (I have yet to make mayo with an egg yolk only--can do with a whole egg though, but I need the mustard. Emily is no level 1 anymore--no mustard no egg white).

    I just love Emily. She always seemed cool being in front of the camera, even in the early epic ‘ketchup’ days, but she is still so accessible & normal as her cooking has improved. Still the quirky sense of humor. Makes me laugh. Makes me wanna cook more. Makes me feel like I achieved something when I cook. Can’t ask more than from a home cook on a cooking channel.

    Just a comment from a Vietnamese: banh mi usually costs $ 0.7-1 in my hometown and it still tastes delicious :< I miss it so much ever since I went abroad - and the diverse cuisine we develop throughout the times as well. Thank you Epicurious team for this episode, truly love how you are demonstrating the culinary of different countries and inspiring people to learn about other cultures

    I totally want to see all of the chefs get together for a party like semi-annually. Chef Frank will make the baguettes, Emily will make the mayo (she's an _expert_ now), Chef King will make the pickles, Lorenzo will make the Pate (because that has the highest humor potential), etc. Every party has a different theme.

    King trimming the pork fat to make his own lard made me realize how easily I can make my own schmaltz or tallow.
    I trim off fat from my chicken so meticulously and then toss it. Why did I never realize???

    I’ve watched Emily learn so much from being on this show. This “switch” style cooking show it’s awesome because it lets less experienced home cooks get their hands on something new that they would otherwise never want to spend their money on, and really learn some new techniques / appreciation for quality ingredients.

    "Bánh Mì" is essential a sandwich, you can make it the most common way people want or you could make it as creative as possible, because the word "Bánh Mì" literally mean bread, stuff it with whatever you like, sausage, omelette, grilled pork meat, whatever you have on hand.

    Actually in Vietnam, we usually don't make Banh Mi that fancy. Chef King Phojanakong is right about the baguette and pate, that is the most simple kind of Banh Mi you can find in our country. More than that, we have Banh Mi Pate Trung, which is a baguette that has pate and an omelette in it, then we enhance the flavor with cilantro, etc... Or some "fancier" Banh Mi like Banh Mi Charsiu, is a baguette with herbs and pieces of roasted pork belly.

    I really loved this! Both of them have such entertaining personalities, and it was really cool to see a chef get creative with basic ingredients without adding things! I also really enjoyed seeing them meet and talk at the end - it added a whole different level! I hope soon they can try each other's creations :)

    Emily, If you fear the knife too much for smashing Garlic, you can use a flat spatula. Though it should be metal. Plastic tends to either be too bendy to give good squish, or too brittle and risk snapping/shattering. If your meat tenderizer has flat sides on it's head that will work too. Just don't 'Hulk Smash!' and splatter garlic goo all over the kitchen.

    Now seeing patte being made - it inspires me. There's a place near me that has a handful of different pattes - like a pork and pistachio one. Maybe time to experiment with my own bahn mi.

    I think why I love this series so much is because it gives the pro chef the ability to show how good skills can elevate a recipe, and it gives more casual chefs the opportunity to learn those skills with premium ingredients to cultivate their skills. at the end of the day, they both make incredibly delicious food, so it's great. ❤

    a BIG tip for making banh mi, don't slice the bread into 2 hafts, cut the 1 side of banh mi and stuff the filling in, and don't preheat the banh mi, we Vietnamese heat banh mi on both sides after the stuffing is put in so that it has a crispy outside and meaty and soft inside, the baguette used was too fancy to the point it makes the banh mi tasted worst, use a mini baguette the cheap one with only the cust outside and air inside (lol) and that's how u make an original banh mi. The stuff above is good but not in a banh mi way, it's like an Asian style sandwich
