Omg Peter is my favorite chef, hes such a master of flavors, he picked the best of Vietnamese foods along the country and make them to other level. Fusion restaurants normally suck, but he nails it, highly recommended for anyone who wants to have the best chosen Vietnamese food in a fine dining way and the whole spirit is there, every single dish flavors is on point. Ppl thinks its ridiculous to pay 100$ for a pho or for a banh my, but its just a super smart branding way to create attention, the rest of the menu is reasonable for the quality

He looks like Al Bundy and his humor is not over the top. He just hit you in the right spot. Forget network TV, nobody who has any self worth is watching the garbage on network TV anymore. Honeysuckle Blossom Chef Franklin is notorious for overcharging his food. He used to run a Vietnamese restaurant in Hong Kong and the review did complain about the price as well. He said 125gr of duck liver costs about 30-40 dollars . He lies about the price range. I worked in restaurant business too. There's no way supplier quotes the $10 dollar difference in price range like he does. And maybe he also uses high quality pork chop (I'm not an expert in meat, so no comment). I agree with you, $100 for Banh Mi with such quality is way overcharged.
He did said in the video that the 100$ Banh Mi is a special request and not on the menu I think he just mashup all the expensive stuft into the Banh Mi in order for it to be some what ~100$,for the sake of the thumbnail Also there are some extra dishes like fries,caviar and truffle mayonnaise soooo...

I discovered Vietnamese food about 25 years ago in Denver. I fell in LOVE with rice noodle bowls. A few years ago, a Bahn Mi shop opened up near my house. Another major win! Albuquerque has some good Vietnamese restaurants, too. But I miss the options in Denver!

Banh mi is the best ♡ next time visiting Vietnam we will definitely try some of these to see if there's a difference. I wish they sold banh mi in Bergen (Norway) - here it's typical with whole meal bread/baguetts with shrimp and mayonese or smoked salmon and scrambled eggs - it's nothing like banh mi haha. We do however have something similar to paté in Norway called "leverpostei" (literally translates to liver paste lol). We will try to make a video about weird Norwegian food soon :D
You can try Pate from French. I went to Germany last summer and my uncle took me to French. We went to supermarket and bought 40 French Bread, lots of Pate and just ate some right in the parking lot. My uncle bought some bread for church and then put the rest in the freezer, it still good after. He joke about French and Germany next to each others, but Germany's bread can hurt people as weapon if you leave it out a few days. He said Germany really need to learn how to make bread as good as French.

vietnam isnt country that is good for discovering sweet deserts and cakes,all sweets u can find here is few of donut and sweet franchises all around the world,and few very very basic cakes,cant compare to europe that i have been,cake or desert in all coffee shops,here its just basic of birthday cake nothing special
