you'd be surprised just how easy it is to make things from scratch but we just dont do so for the sake of time. Anyone can make pasta assuming they just have some extra time and flour and eggs (which everyone should have). Anyone can make Mayo with just oil and eggs (again everyone should have). it's pretty interesting

Actually you're supposed to taste the ingredients so you (1) make sure they haven't gone bad and (2) to judge how strong the flavor is so you can judge how much to use. Although, not all of her snacking was required...😀😀🍝😍

Beth is a breath of fresh air among the other home cooks. She's very up to the challenge and she wants to do it even though it's a whole new ingredients to cook with.
Beth nailed every single step perfectly. Frank didn't stump her with the fancy ingredients one little bit. She's never made pasta before and yet she did it perfectly. She really does know her way around an italian kitchen.

Italians always talk about how their cuisine is based on simple dishes reflecting poverty and difficult growing conditions. That was not true in the USA. Italians showed up here, and everything was abundant. Eggplant Parmesan became Veal Parmesan, dishes started to drown in sauce, and meatballs became HUGE!!!!

I know right? I'll be the first to admit I'm a bit heavy handed on the salt. However nothing drives me more insane than seeing cooks put like a "dash" of salt when seasoning meat, veggies, etc. I use at least two tablespoons of salt in my pasta water. My family loves my spaghetti but I hope I'm not killing them in the process. 😜

There’s a great fried pasta recipe out of Puglia Italy called pasta all'assassina (assassin’s pasta). I’ve made it many times and it’s delicious! Check out Pasta Grammar’s version on UA-cam. Fantastic!
Look, I'm Italian and we don't even think to do that, BUT if you consider that he leave his wrecked(💔)spaghetti cook in the sauce, the pasta will be ready at the end.... Anyways this is just an American recipe, there isn't anything of Italy in there 😂
My mom believes she is Italian. So she says I'm Italian but my dad is Mexican. I am way more Mexican than Italian, sure I like some spaghetti every now and then but my whole Mexican line of family is addicted to tea, including me. I can't handle spice though, sometimes I love it in a salsa but other times I can't stand it.
I’ve never seen this video series before but this was so sweet - I really loved how Frank didn’t demean the ingredients because they weren’t fancy or expensive and that he gave her a recipe that was challenging and not watered down - I find really often in these types of videos that the “professionals” are really hyper critical and kind of talk down to the techniques of other people or judge people for not making their own stuff from scratch or canned things so this was so refreshing and sweet to watch. I really hope they get to cook together one of these days!
You can see the pain in Frank’s eyes when he’s forced to taste with a metal spoon and not an R2D2 plastic spoon he got out of a cereal box. Stay strong Frank.
This might be the most wholesome episode of this series yet. Beth and Frank are great foils, and having them both cook Italian food was a no brainer. In typical Frank fashion though there was no actual Spaghetti and Meatballs made in this video, we had a totally different pasta with pesto and a toasted fidello dish with Beth's ingredients. Still all looked delicious though.
I love them... Their videos together are always so cute! I also really appreciate how little Frank changes the ingredients. The other pros always change a ton of stuff but Frank always uses what he's given and just blows it out the water every time! I hope they get to cook together soon!!!
Sometimes I garnish my pasta dishes by taking them out of the microwave 30 seconds before it is done and add a slice of processed cheese. ..........How did I end up on this channel anyway?
Usually the home cook flails and needs a lifeline. These two are masters of the same craft, so there were just a few details to be confirmed about particular ingredients. I loved the way this went and the obvious respect they have for each other.
I love both Frank and Beth. I loved her reaction to the cost, and like a true Italian grandma, she is not going to waste anything. It is going to go home with her. 😆

Are we just going to gloss over that we missed out on a frank 4 levels paella episode because the channel told him no?! We could've had the most insane paella ever and they hampered it.
There are some dishes that are near and dear to the hearts of those in its country of origin. Which means if you don't do it exactly like thier grandma did it they're going to turn your comments section into a toxic wasteland and start flooding you with death threats. Paella's one of those dishes, they likely just don't want thier usually fantastic comments section to be hate-bombed. A channel like Frank's could do it no problem, he's small enough that UA-cam's algorithm would rarely show it to countries outside the US. but with one this size it could get ugly.
If paella is done, it needs to be perfect according to tradition. There was a cooking channel called Sorted where one guy did a burrito with the flavours of paella and it was called Paella Burrito. The Spaniards went mad and obviously were offended about it.
Exactly people get so ridiculously heated about certain dishes. tbh I'm surprised the Italians™ aren't all over this comment section fuming about Frank breaking the pasta into pieces. Maybe it's because the whole "Spaghetti and Meatballs" dish isn't traditionally Italian so they don't care anyway.

I dunno, pesto and meatballs? That sounds sorta overkill, then again I’ve never had ramps, i’m assuming they don’t taste quite as overpowering as garlic so maybe it works. I certainly couldn’t do a traditional pesto with meatballs, pasta, and pecorino though….man that would be way too rich to eat more than a bite or two.

I don't blame Frank for getting his price estimate wrong. Grocery prices have absolutely skyrocketed the past year.

Chef frank is probably my favorite chef on Epicurious. I'd love to see a chef and home cook doing a budget and selecting ingredients themselves from a grocery store or Specialty store.

Look, I'm Italian and we don't even think to do that, BUT if you consider that he leave his wrecked(💔)spaghetti cook in the sauce, the pasta will be ready at the end.... Anyways this is just an American recipe, there isn't anything of Italy in there 😂

My mom believes she is Italian. So she says I'm Italian but my dad is Mexican. I am way more Mexican than Italian, sure I like some spaghetti every now and then but my whole Mexican line of family is addicted to tea, including me. I can't handle spice though, sometimes I love it in a salsa but other times I can't stand it.

I’ve never seen this video series before but this was so sweet - I really loved how Frank didn’t demean the ingredients because they weren’t fancy or expensive and that he gave her a recipe that was challenging and not watered down - I find really often in these types of videos that the “professionals” are really hyper critical and kind of talk down to the techniques of other people or judge people for not making their own stuff from scratch or canned things so this was so refreshing and sweet to watch. I really hope they get to cook together one of these days!
You can see the pain in Frank’s eyes when he’s forced to taste with a metal spoon and not an R2D2 plastic spoon he got out of a cereal box. Stay strong Frank.

After hearing Beth's accent I immediately knew I wanted her spaghetti.
Imagine having the guts to instruct a grandma about cooking. I wouldn't dare.
Well, they basically only told grandma what those "new" ingredients and tools are for and she figured the rest of the recipe.

This might be the most wholesome episode of this series yet. Beth and Frank are great foils, and having them both cook Italian food was a no brainer. In typical Frank fashion though there was no actual Spaghetti and Meatballs made in this video, we had a totally different pasta with pesto and a toasted fidello dish with Beth's ingredients. Still all looked delicious though.
beth took so much joy in the ingredients she got to use like the ramps and the eggs. seems like a really passionate, talented cook

If he didn’t hit the salt again around 16:45, I would’ve said it’s debatable, but that second hit was even more than the first one.
Pretty normal amount. Without salt it would just be bland and wouldn't taste like anything.

I love them... Their videos together are always so cute! I also really appreciate how little Frank changes the ingredients. The other pros always change a ton of stuff but Frank always uses what he's given and just blows it out the water every time! I hope they get to cook together soon!!!

Usually the home cook flails and needs a lifeline. These two are masters of the same craft, so there were just a few details to be confirmed about particular ingredients. I loved the way this went and the obvious respect they have for each other.

Are we just going to gloss over that we missed out on a frank 4 levels paella episode because the channel told him no?! We could've had the most insane paella ever and they hampered it.
There are some dishes that are near and dear to the hearts of those in its country of origin. Which means if you don't do it exactly like thier grandma did it they're going to turn your comments section into a toxic wasteland and start flooding you with death threats. Paella's one of those dishes, they likely just don't want thier usually fantastic comments section to be hate-bombed. A channel like Frank's could do it no problem, he's small enough that UA-cam's algorithm would rarely show it to countries outside the US. but with one this size it could get ugly.

If paella is done, it needs to be perfect according to tradition. There was a cooking channel called Sorted where one guy did a burrito with the flavours of paella and it was called Paella Burrito. The Spaniards went mad and obviously were offended about it.

I dunno, pesto and meatballs? That sounds sorta overkill, then again I’ve never had ramps, i’m assuming they don’t taste quite as overpowering as garlic so maybe it works. I certainly couldn’t do a traditional pesto with meatballs, pasta, and pecorino though….man that would be way too rich to eat more than a bite or two.
