This has to be one of my fave episodes of swapping ingredients!! So many dishes, so much fun. I loved what Chef Eric did with Gabi’s ingredients, and I loved how Gabi tackled the techniques and ingredients of Chef Eric’s ingredients.
The first thing I noticed off the bat was that the cheaper ingredients had the premium brand of oyster sauce while the expensive ingredients had a cheap one. Very proud of myself for knowing that lol.
Notice how they price them? The cheaper ingredients are priced as to what you need per portion, the expensive ingredients are priced as to the whole unit (e.g full bottle), look at the price of the shrimp and how much ends up on the plate. They always do this to make the expensive ingredients seem even more so
There's something endearing with Eric almost hiding when he eats while Gabi essentially headbutts the food, going full python on those veggies and claws. Great video! Learned some new stuff.

I really wish you'd write the price per serving, rather than total cost I mean, sometimes there's a 100 dollar balsamico or some other thing, and you only use a fraction of such a product. So the total price is kinda stupid :/ Even here, you have 7 different bottles of stuff, on Eric's tray... but how much of them is used?
it's part of their formula. same with the pro saying "these are humble ingredients you can find in your bodega", etc :) it would be interesting but not terribly helpful
Eric is now one of my favorite pro chefs here, sitting comfortably with Frank and Saul.
