Lol. That is natural leakage from animal parts. It isn't unclean. She discards the initial stock because it will have a metallic flavour from the iron-rich offal which can negatively affect the flavour of the finished dish

It's fermented locust beans. It's different from our ogiri isi.
Ogiri okpei or dawa dawa can be used but you should chop or break it into pieces before you fry it in the palm oil. It's all delicious!
