This recipe is 🔥!! I didn't use iru and I substituted the bonga fish with smoked ... this is the best native jollof rice I have cooked ... big ups Kiki !
I did not know about Irú, and had to Google it. In Togo, it is called Afinti. Irú or Eware (Edo) is a type of fermented and processed locust beans (parkia biglobosa) used as a condiment in cooking. Similar to ogiri and douchi, it is very popular among the Yoruba & Edo people of Nigeria. It is used in cooking traditional soups like egusi, okro, ewedu and ogbono soups. [Wikipedia]
I feel like I've been cheated. I watched the whole meal get put together and I cant get a plate! But I appreciate your willingness to share the preparation of this wonderful meal.
This is so beautiful and appealing to the eyes. I think I should also give it a try as I did after watching your coconut fried rice, and it was a 'wow' 😋😋
I've never made traditional jollof and I always have palm oil at home!! This all looks so delicious and appetizing!! Thank you so much for sharing. Okay! Off to get some bonga, dried prawns, but not so sure if I'll get Iru. 😕 🏃🏽♀️🏃🏽♀️🏃🏽♀️🏃🏽♀️🏃🏽♀️
i just cant concentrate, sometimes i miss ingredients dropped in the pan, so i have to swipe the video a few steps back, i really love the online cookery school
Sis, your cooking is superb. I only came to know about your channel today. Today's native jollof rice made me to subscribe straight away. Thanks so much for sharing. God bless you sis.
Kikifoodies - I noticed you didn’t add Tomatoes to THIS Jollof recipe as opposed to ALL of your other Jollof videos! Any particular reason you chose to omit tomatoes? Do you have family & friends who don’t include tomatoes in their Jollof? This presentation is so vibrant & beautiful! 💜
How do you make sure that the basmati rice does not become too mushy and over cooked when you put it in the tomato sauce? It seems basmati cooks faster than parboiled
Jollof rice is originally a Senegalese dish. Nigerian and Ghanians also prepare this dish using different ingredients. This particular style of preparation with palm oil, basil, roasted prawn, crayfish, herring fish, and fermented locust beans is called local palm oil rice in Nigeria.
Have you ever tried this with olive oil or regular oil instead of palm oil? I once tried this, but the smell of palm oil bothers me soooo much. If it's not garden egg sauce, I don't want to smell or taste palm oil 😬
Oh that's true,I had to rewatch it.. I guess it's an extra seasoning, when you go to the market you will see all sorts for boiling beef..It doesn't have to be same with her's
Such a big fan of this channel. Done so many recipes from you. Thank you!!!

I'm Ibo and didn't know this. 🙆🏽♀️
@@boochi7087 iru is not ogiri but it is similar because they are both fermented and they smell

This is the first Jollof Rice I've seen made without tomato paste and tomatoes.
Looks good anyway!
Nice observation! I was planning on making this without tomatoes anyway because it gives me heartburn/ reflux.
This looks great! Any substitutes for Iru?
Try to find an umami seasoning for a substitute but Amazon also sells locust beans aswell
Delicious

Can’t believe I’ve never had jollof rice before but how BOMB do these look 😱😱 Feeling kinda embarrassed now 🙈
Jollof rice is the bomb 💣
Naija 🇳🇬❣️
Kiki pls what’s ur brand of rice?
Why did you cover it with foil while cooking? Is there a particular reason for that?
How do you make sure that the basmati rice does not become too mushy and over cooked when you put it in the tomato sauce? It seems basmati cooks faster than parboiled
I usually wash it over and over and use less water
@@kozyz6155 thank you!!
This look delicious!!! Where did this dish originated from??
Ghana
Actually, it's a Nigerian dish also. The iru (little black seeds) is optional. And you could go for any dried or smoked fish.

Hey what can I use to replace the bonga ?
I would love to use this recipe but it's a bit confusing. E.g. What does 'crushed seasoning' mean?
It means crushed Maggi or knorr. I think bourllion is also in cubes so she crushed her's
@@esoheorobosa3831 I felt so. But then the video states 'knorr' before 'crushed seasoning'.
Oh that's true,I had to rewatch it.. I guess it's an extra seasoning, when you go to the market you will see all sorts for boiling beef..It doesn't have to be same with her's
