I have watched my mother in law make this same dish but she used jasmine rice instead and allowed the meat and stock fish etc to settle at the bottom before adding the rice (and cooking on low heat). The protein got a little crunchy while the rice got done perfectly on top before she added the vegetable and stirred!!! hmmmm it was soooo soooo delicious. and she calls it jam jam rice, haha just jam everything inside.

My wife makes this better than anyone I know... Damn, she is damn good with it.... And she makes hers so hot with pepper that it hits all the right spots when you are eating hot and sniffing carhtar from you nose cos of the hot pepper.... Eating it is always like therapy.... Now that am not in Nigeria, I am craving it and have asked her to explain all the process, I have all the ingredients here except for the locust beans.... I am thinking of using dry ogiri in place pending when the iru I ordered for arrives..... Good vibes... 😂😂😂
