    In Mexico we use Amaranto for a lot of things, mixed with honey as candy, and sometimes, we put it in milkshakes to make them thicker, it also provides a lot of vitamins.

    Have always enjoyed watching your content. I feel like I watched your very first video on sourdough. Both you and Aaron exude confidence and your skills on camera/vlogging/editing seem to exponentially improve every time I watch something new. Keep up the great work!

      Aaron will be retiring in less than 2 weeks. He’ll be a full time student in college and full time PGA apprentice. He wants to make videos eventually too.

    I had Amaranth in a granola sold at Costco, nice texture. But never cooked with it.

      I’ll have to look up a recipe for that. I wonder if it gets cooked or goes in dry?

    I make up a pot of Amaranth as a hot cereal. Its a different flavor and texture from the norm - I love it. I add a spoonful of homemade jam for sweetness and flavor, a little milk, and that’s it!

      That’s how I’ve made it before and it was really thick and gummy- kids weren’t a fan. I need to tweak it a bit and see if I can get a better more enjoyable consistency- maybe the added cold milk after cooking helps? I’ll try again.😅 I’ve also added to oatmeal before to make porridge but again my ratios were off. Thanks for the suggestion and encouragement- I’ll try again.🌻🌻🌻🌻

      Thank you Carol!! This full time family keeps me super busy. Aaron and the kids are all homeschooling so I’m cooking more than ever- if that’s possible?!?😅 I felt like I slacked on videos recently with all the going’s on around here. We have been asleep by 7:30pm every day cause we are all whooped- I can’t keep my eyes open. But that means I’m awake by 5 am this the darkness occurring in my breakfast portions of videos. It’s dark by 6:30om and my brain says “goodnight.” And I welcome the rest!! 🌻🌻🌻😅😅

      I put applesauce in the soup and add apple chunks right before eating. Bacon bits added before eating is also yummy.

      They were wild!! How cool was that. I run into all sorts on my daily walks. I wish we could get one for thanksgiving. Years ago when we first moved here there was a flock of 3 turkeys. They plant them here in the basin every year. But they don’t survive winters very well. 🌻🌻🌻🌻

    Hi Katie. I’ve got some Amaranth as well but haven’t cooked with it yet. So I’m in suspense… how did it work with your soft white wheat berries? I’ve got about 75 lbs of soft white berries as they have been a good price at Azure and I bet mixing amaranth would make good biscuits if it worked out. Thanks.

      It worked really well!! The kids and Aaron both enjoyed the pancakes with amaranth. It smelled nice- a bit nutty to me. The pancakes rose well and were a nice texture from what I could tell. I’ll be adding it to other baked goods as well to use it up. I don’t like it cooked alone. But it’s nice mixed in other dishes.

      @@RowesRising I'm a no pun intended kind of gal too. This family is always cracking little jokes like that also.
      When i bake all my squash, i always lay it facing up because i like to put butter in the hole where the seeds were, oil and salt it up, then bake it. Went to my cousin's and made the spaghetti squash like that, butter, oil, salt and garlic powder, and my cousin said I was right, it is good like that. I just love butter, butter, butter...makes everything taste so yummy.

      That sounds so good! I just do face down so they don’t dry out. But you are right- less flavor seeps out😅

      @@RowesRising it doesn't really dry out, i think that the moisture bakes in because the squash it's gets a little brown on the outside. My mom always did it that way, so that's why i do it now. I bake a lot of the spaghetti squash, it remains in the bowl shape when i bake it facing up, and that way I can do the twice bake with whatever i feel like filling it with. One time i decided to flip it and the squash just went flop, and I wasn't happy because when i scraped the noodles, added whatever i was putting on it, the shell flattened out and my stuff ran all over the pan. I told my husband, that's it, I'm never trying it this way again. Hahahaha
