- Introducing how to cook gobo (burdock root) in 3 different ways-- Japanese style. I hope you can find gobo in your area.
This tasty side dish can be made in the traditional Japanese style (kinpira gobo) or with a more modern twist (chips and gobo salad). Have fun experimenting with and discovering new flavors!
*Clean/wash the gobo and carrot well, no need to peel the skin !

Just realized my yard is overrun with wild Burdock, time to cook!
Wild Burdock ?! Envyyyy !
I am a wild food educator and have always praised what burdock does for our health. Even though I like to forage for it - much easier going to a Japanese or Chinese grocery store! Thank you for this video! You know what I am doing today now!!!!
Thanks for your comment.
fantastic! We bought two 3 foot roots today, I will be making these recipes. Thankyou.
Thank for the recipes! Never thought to use miso paste and lemon in gobo salad. It’s so delicious 😋
Arigatoo for your comment ! : )
I love these recipes. I live in the US and this is the first time I've used gobu at home. My market carries it fresh, so I got two large stems and made the two salad recipes. So easy, healthy and tasty! 🥢
Wow, you are lucky to be able to find gobo in this time of the year ! Thanks for your comment.
The recipes look so simple. Thank you for making this video. I had burdock root salad years ago and have never forgotten it. I've wanted to make it ever since but had no idea how. And here's your video to help me. Thank you again.
Thanks for your comment. Try 2 other gobo recipes as well .... gobo might be out of season for now (?)
My husband bring this burdock home. I really dont have clue how to cook it. Thankss
I made your Kinpura Gobo last night, and it was amazing! Today, I just finished making the Gobo salad. It is soooo good!! I made almond mayonaisse before and used that in place of the mayo.I saved the center for stock making as it was too tough, and was the reason my Kinpura Gobo dish was tough. My salad is not tough, so I cannot wait to try the Kinpura Gobo again tomorrow without the tough center! I served the Gobo salad on hot vinagered rice, and place avocado pieces and a few cherry tomatoes on top. So delicious!! Thank you for the great recipes!!
Beautiful. A joy to watch this video 😍 I was searching for recipe ideas to cook some Burdock.
awesome recipes! gonna try it tonight!
I just bought this root on a whim when my girlfriend and I were visiting Mitsuwa Market near Chicago, IL. Thank you for posting such simple, easy to follow recipes for me to try!
Thanks for your comment, good luck making it !
Fantastic recipes! I will make the 2nd recipe tomorrow. Lol...Gobo and carrot are always such good friends! 😃
Arigatooo!
We love to hear from you !
Great, thanks for your comment !
Nice n Simple 🔥👀
Thanks, Chris !
So useful, thank you.
Good to hear, Arigatoo !
wow nice I never knew :>
Many recipes I see recommend soaking the gobo before cooking, is that necessary?
No, not anymore.... no need to soak or peel its skin. Soaking gobo makes very dark water which is thought it is bad stuff have to remove. But now finding out that dark color is actually polyphenols (antioxidant). All nutrients contain in the skin (like apples, etc), so keep the skin, wash very clean to remove dirt before cooking though.
Thanks for your comment !
Thank you, I made this and it was so delicious!
Kikuzen Cuisine Well I’m glad I saved the water and drank it!😆 couldn’t bear throwing it all out! Next time I’ll save myself the bother!😆
@@myenergyhi237 Wow, you drank the Gobo water ?! I never done that.... Oh well, why not, we drink Gobo Tea.
Finding Burdog root in japan
Oh wow I always peel the skin. Maybe I'm losing nutrients that way.
Yap, it said the skin has the most nutrients .... wash it clean though. Thanks for your comment.
2nd dish isn't vegan, since mayonnaise contain eggs.
Come to think of it .... you are correct. It's vegetarian, not vegan !
But, you can use "vegan" mayonnaise, though.... you know.
I'm going to try it with my homemade cashew vegan mayo!
Great, sounds yammy ..... Good luck !
@@KikuzenCuisine I have a question, I have heard of only using the outside part of the burdock and discarding the middle because it is very tough. My knife gets stuck. Is my burdock just old? Because when I made it is was very very chewy and had to spit some out.
