Golfer's elbow commonly presents with pain over the inside of the elbow with gripping, twisting and lifting. It is a tendinopathy of the common flexor tendon of the forearm. Tendinopathy is a condition where there is tendon pain, decreased function and reduced exercise tolerance.
For really irritated tendons, it may require TEMPORARILY reducing or avoiding the provocative activity or exercise to let the tendon calm down, prior to starting this exercises.
When addressing this condition, it is important to not only increase the strength and capacity of the flexor tendon. But also to address any deficits or lack of mobility in the entire kinetic chain, notably, the shoulder, shoulder blade and mid-back (thoracic spine)

If there is no pain associated with the noises/snapping its high likely it is fine. As we get older and after injuries/pain, joints can just snap/pop. Nothing to worry about

Should these be done while still in pain and are there stretches we should do to prevent tennis and golfers elbow?

You can do this when there is pain/discomfort. Some helpful criteria.
      1) The pain should be mild, 4/10 OPS or less
      2) Any pain increase should calm down within 2 hours after exercise is completed
      3) Pain should not be elevated the next morning

I fell and broke my knee and injured my elbow. This golfer's elbow hurts worse than my broken knee. I will try these.

Tendon issues can be very painful. These should help, start slow and expect it to take some time (usually months).
