They are expensive in the grocery store and often dry. Online you can find more for cost effective resources.

As you use it, refill with more vodka. Lifetime of vanilla!
I like using Bourbon for the liquid. Split the pod down the middle and scrap the beans along with the pods into a sealed glass container. Add 1 cup Bourbon or Vodka to every 1 ounce of pods(beans) cover beans. Store in dark area, shake every week. Wait at least 8 weeks to use, but 4-6 months is ideal. The longer brewing time allows the flavor to fully develop.
It’s worth noting this is in fact cheaper because you have a larger quantity for a MUCH longer period of time, and your vanilla extract can always be replenished with added vodka and beans.
I started making my own vanilla extract about 4 years ago. I didn't begin with that many beans but have added to my supply over the years. I've made it with vodka, bourbon, and brandy. All are delicious and have different flavors. I prefer 80-90 proof; anything higher is a little boozy for me. If it does have too much you can heat it and cook off some of the alcohol. I would never buy it again!

@@xe2014, it depends on how many beans you use. We live in Lithuania, so we use the metric system, and for my 1 year brew I used about 2 beans per 100 ml (3.38 oz) of vodka. It comes out great! I am also doing a test batch that will be brewing for 2 years, and I used 1 bean per 100 ml of vodka. If you search how to make homemade vanilla extract here on UA-cam, you will get a variety of bean to vodka ratios. I’d say start with 2-3 beans per 100ml vodka. Test it around a couple months and see if you like it. If you want it to have a deeper flavor, you can wait a month longer. Don’t let the 1 year intimidate you, cause the first batch is the only one you really need to wait for. If you keep on making it every year, you should never run out. Also, it makes great Christmas gifts. Start brewing it at the start of the year, and it will be ready at Christmas time.
You can start using it at the 2 months mark obviously the longer it sets the better but we don't usually use a lot of vannila extract so by the time we get to using the whole thing its already 10- 11 months old, you can also make more when you have about 2 months worth left from the old one.

I make this but slice the vanilla beans longways with a sharp knife. Also have used dark spiced rum instead of vodka. Love them both. And, as you said, saves a lot of money.
You can even pour out the extract and then reuse the beans with more alcohol. You can also use bourbon for added flavor.
Is that what makes it cheaper? Because I just bought group rate at $11 per ounce!
I use less beans and it's still amazing. If you cut open the beans you get there faster.

I forget the video this was from, but they had a bulk bottle of extract from Costco/Sam's (or you can get them during the holidays in some stores) and whenever you do use vanilla beans for a recipe, take the remains of the vanilla bean pod and put them in with the extract and top off the extract some. Over time the extract will get more vanilla-y and you won't have to wait a whole year to use it.

You can add flavors to the vanilla for specialty flavors. I use a margarita flavored liquid you can buy in party packs. I make cakes and the extra choice of flavors works with the simple syrups and frostings. My customers love having flavor choices for their cake ideas.
The first batch is the longest wait. Plan it out so you always have a rotation going! 👍🏻

Years ago when vanilla beans weren't ridiculously expensive my mom used to make vanilla extract this way. She bakes a lot so we always had a bunch of bottles with beans in them in the cabinet :P She would slice them lengthwise so the seeds would also be exposed to the vodka, and it seemed to take less time to extract the flavour. I think she'd use them about 6 months after bottling? She'd also scrape the seeds from one of the beans into the dish she was making.
Not drying out the beans is not important. Its the extract thats important. Higher proof gives you a higher extraction rate, as does increasing surface area. Cut the beans up. The flavor is in the sappy goo (not the seeds), so you need to open them up.
It also goes with a cooking sugar syrup. Like you make marmalade for storage. Same sugar then water. Split the vanilla bean. The vanilla is inside. After 2 month you can use it.
FINALLY! Someone giving correct measurements and time for extract.
Grade is moister of bean. A grade has more water, B grade has less water and is better/Cheaper for extract.

Lmao I remember back in CA they - and the extract - were ridiculously pricy. Baking in general honestly, I was shocked by the prices there.
As a German being back here after my exchange in the US, it feels much more affordable again. Not cheap exactly but for example vanilla really isn't as pricy as I have seen it many times there. I even thought about sending some over to my host family because having a bean was rather rare.

You can put in a vacuum chamber and make it much faster or blend the beans and put it through a coffee filter
That much vanilla bean bought locally for me would cost me way, way more than just buying it i think. I'll have to look online for that lol
I split the beans before placing them in a jar. Everclear is less expensive than vodka. If I am going to make it for Christmas gifts then make it in August. No complaints ever! Also, shop the internet to find lower prices, and/or look on fb for pages as some buy in bulk and share the savings.

You should split the beans to release the seeds. Also you can use it in about 3 month and if you want you can just replace what you use with more vodka, the beans give up flavor for about a year and at year end you should either replace your beans with new ones and you can keep adding more vodka as you use it or throw them out and use it up. Right now I have vanilla extract aged for a year and a half.
I wouldn’t say replace store bought vanilla fully because you have to wait a year for the fresh batch. but hopefully afterwards you don’t waste all the homemade stuff you made and start a new bottle for the next years batch. Definitely a good homestead recipe. Sounds fun honestly.
You can also make it with the discarded pods after using the beans inside. It works just as well and doesn't waste a couple dozen pods. Which are VERY EXPENSIVE

My mom got some from a funeral they made it with the guys dates and instructions that when it gets to half just refill with vodka it’s by far the best vanilla extract I’ve had
oh I work as a chef and in our kitchen if we want vanilla extract for our sugar cake we usually flambé the vanilla sticks with some whiskey then we would have a good amount for about 5 large sheets of cake. it's also a lot faster.
I went to Mexico last year and I bought a big bottle of vanilla extract for a few dollar, best vanilla I've ever had and it would last me forever
I made it with 92 proof rum and let it sit for 2 years. Shook it every week for 3 months then every other week for the remainder of the 2 years. It is very good.

If you'd like more out of your vanilla beans, scrape the beans off the inside of the pod & use in recipes where you'd like stronger flavour & the lil specks of vanilla. Then make the extract with just your saved leftover pods. It's just as good and you get double the use out of thd beans.
I've been using 151 everclear for years and never had any dry out, and 6 months at the earliest but the longer the better. Plus cut the bean open, so the seeds can come out, and last shake it every day at the beginning, and as it darkens you can shake it less, I shake everyday for the first 2 weeks then 1 or 2 times for the next 6 weeks, and after this 1once a month.
I e done this and it takes WAY less than one year to get a decent extract. 3 months wait time was good enough, but it didn’t become great until 9+ months. Totally worth it!
Look into getting your vanilla beans from local coops or online. They're sooo much cheaper. I got a half pound bag of vanilla beans for less than the baking goods store wants for 4 sticks.
I would scrape the vanilla goodness on the inside of the pods first and use that for something before leaving the scraps of the pod in the vodka, feels like im getting more out of it and its also what claire saffitz does
I tried that one time with bourbon. About 3 months into it I wanted a cocktail, so I took a shot out of my vanilla bourbon. It was so delicious, I ended up polishing off the bottle.

Its actually better with rum. 90 proof bacardi silver is good. Ive got a set going with sailor Jerry's spiced rum brewing right now. Hopefully the spiced rum gives it a good flavor. Also 6 months I would say a minimum sitting
I just use the used seed pods, not the whole thing. I use vanilla often for baking, so it's a win win for me.

I used flor de Cana rum and it is amazing. I first thought it was terrible when I tasted it then I tasted the commercial extract I had and realized how good it was
1 year who has time for that when vanilla beans are expensive and you need them for mostly everything lol You can put a slit them in the middle to allow the flavor to really bring out the vanilla flavor, put it in a canner wait till the seal makes the popping sound and store until you need it.
You can use it in about six months, can also use the beans in sauces, ice cream, or pretty much anywhere you would use the extract. It is stronger so be gentle handed with it unless you're making a big batch of whatever.
Just make a slit with your knife on each vanilla bean so that the liquor can get to it fully for the process to take place.

I just put mine right in the vodka bottle (after a shot or two to make room for the beans to fit ;-). I’ve never had to wait a year- just a few months, but the longer it sits, the better.
USE THE BEANS FIRST. It’s what we did in culinary school. We made good stuff with the beans, ice cream, diplomat cream, vanilla sauce for pies, and then put the spent bean cases in the vodka and it worked great

To everyone wondering about waiting a year. You were going to buy vanilla extract anyway, so continue that until your homemade stuff works and then you don't have to buy.

I have Meade in my closet from a year and a half ago. Give it a month and you’ll forget you even put it in there. You’ll remember a year from now you made that vanilla extract
I've made my own vanilla extract for years now. The difference is I make mine with brandy. This last batch I put up in 2018. The first batch I made in 1997. It lasted until 2018. It's delicious and the aroma is heavenly. I used to bake cookies and sell them so I ran through vanilla regularly. It became expensive so I decided to make my own. There's nothing like aged vanilla.

Yeah, we do something like this! We usually only wait 6 months and pour out half the extract and fill it up with alcohol again and leave it for another 6 months
I've done this and it works quite well.
I made a 12 oz bottle for my neighbor, and it was gone within two months of me, giving it to them. I said to let it sit for a year and shake it every now and then.

So I cut my slice my vanilla beans in half lengthwise, then chop them into 1 or 2 inch strips. This exposes more of the vanilla bean to the vodka, accelerating the leaching of the vanilla into the vodka… only takes 6 months!
Or you can travel to Veracruz México 🇲🇽 and buy some organic natural vanilla extracts, perfume, lotions, shampoos, soaps, etc they are awesome and cheap

It’s an investment. You can reuse the vanilla beans for years. Check out Mary’s nest on UA-cam. She has just decanted what she needed and refilled the bottle with move alcohol when needed

Don't worry guys it can actually can take anywhere between 1 month to a year to get vanilla extract but keep in mind the longer it sits the better it gets
Another way to get "vanilla flavor":
Vanilla Sugar:
Using the bean pods (ie: you can use the pods even if you've scraped the interior pith/seeds out of them, there's still plenty of flavor, there!)
Ratio: 2 opened pods to one cup sugar.
Settle the pods into your sugar as per the ratio above in a good container - I use Kwik-Tite plastic storage containers. I set the container at the back of my pantry and leave it alone for about 3 months. If you want to split it between several smaller containers, just don't forget to keep that ratio of pods to sugar in the final container.
Should put a cut in the beans. The extract will come out better.
I have tried that method and it does quicken the extraction. I find it still releases more sediment and seeds, so for a clean extraction I don’t cut but other times I do!

Vanillas beans are expensive though and that was a lot! Plus one year 🙈!? I have made vanilla before when vanilla pods use to be less expensive. It was nice but it did take long for it to extract. I prob didn’t use enough vanilla pods though. They were pricey even before they got inflated in the last 4-5 yrs. But I was able to get a bunch for a decent rate. In the last few years I think I saw vanilla pods go to as much as $5 each!
You can use a corked bottle as well!
In most baking applications artificial vanilla extract is virtually indistinguishable from natural. I reserve my vanilla beans or pure extract for raw confections like crème Chantilly or cooked desserts that feature the vanilla like crème brûlée.
This vodka infusion trick is good, but use your used vanilla pods instead. Also if you muddle them a bit you won’t have to wait a year, more like a month.
Or stick your used pods in white sugar for the best smelling and tasting vanilla sugar you’ll ever have.
