    According to the US Food and Drug Administration (FDA), to be labelled pure single-fold vanilla extract the liquid must contain 13.35 ounces of natural vanilla beans in every gallon of alcohol. Commercial double-fold pure vanilla extract contains 23 ounces of vanilla beans per gallon of alcohol. The FDA recommends the spirit should be at least 35% alcohol (70 proof). Ideally, 40% alcohol (80 proof) should be used. For the home baker, the FDA requirements equal 0.10 ounces of vanilla beans in every 1 ounce of spirits. If you’re using average-sized vanilla beans, 6 to 8 beans equal one ounce. For plumper vanilla beans, 1 to 3 beans equal one ounce. For smaller vanilla beans, you’ll need 15 or more to make up one ounce. If you prefer to use a cup measurement, the proportions are roughly 3 whole vanilla beans per 1 cup of spirit (80 proof). Again, this depends on the size of the vanilla bean. It’s best to weigh your beans using a measuring scale to ensure you get the perfect beans-to-spirit ratio for single-fold vanilla extract. If you want a stronger vanilla flavor, double the beans you add to the same amount of alcohol for double-fold vanilla extract.

      The FDA standards broke down for extract is 1 oz by weight of vanilla bean to 8 oz of alcohol your choice of bean and alcohol ❣️ ❤❤

      Is it the paste inside that flavors the liquor? Also, I read that homemade extract isn't extract, because of the way it's made. Agree or disagree?

    I started making vanilla extract about three-year now. I have vanilla beans from all over the world. I made some with vodka, rum, spiced rum, brandy, everclear, and more. Learned a lot about the process. I love it. ❤️

    Yup, I’ve been making vanilla extract for several years. Usually with vodka but I really love to use spiced rum. Wow that gives an awesome flavor !!! God bless Katie!!

    I started my original jar of homemade vanilla in 2015. I purchased the jar and beans in a set from the Amish store. The instructions on the jar suggested glycerin. But I used vodka. The jar was 20 oz with 4 beans and it’s still going strong! I have emptied the jar in a separate jar and refilled the jar to sit for 6+ months before using again. Long about 2017 I bought more beans and started another jar for my daughters. I just keep the girls jars filled up and we all just love the fresh vanilla!

    I will never buy vanilla in the store again. I started mine last year, 3 bottles. Seemed like it would take forever but here we are! My favorite use is adding it to my homemade pancake mix, nothing better!

    my favorite is madagascar vanilla beans. I use 1 oz of beans to 8 oz. of Titos vodka for single fold, and I weigh the beans, and 2 oz for double fold. I let mine set for a year. It is delicious. just delicious. I also started a mother jar. Ina Garden got me started. I was watching her one day on youtube and she said her mother jar was 27 years old. it is amazing. If you can still smell alcohol then your vanilla is not "matured".

    I took containers and a fifth of vodka with vanilla beans, to a family reunion and filled containers night before reunion. Daughter and I had a big laugh when I told her to make sure door was locked and curtains closed tightly because my home county is a dry county where you can't buy alcohol!!!! I cut a bean in half abd put in containers and filled up with my vanilla. Everyone was so happy and pleased with their gift. I shop all year for pretty containers so always have on hand. This is such a special, unique gift, which makes it more special. Enjoyed visit today.

      Funny story: we are from near where Jack Daniels is made in Lynchburg, TN. We have taken two tours of the facility. They let tourists sniff the whiskey but not taste it because…..Moore County (Lynchburg) is a DRY COUNTY! 😂🤣

    I made my own vanilla today for the first time. I was able to get the Tito's vodka up here and some wonderful Madagascar beans from Amazon. Should be ready by Christmas for baking. I'm so excited! 😁 Thanks for this video!

    I enjoyed your video & like your tips on using different types of vanilla. I’ve learned from various sources, one being Ina Garten, that after you pour out a portion of aged vanilla extract from the large container it was made in, you can then simply top the large container off with more of the alcohol, cap, shake and continue this way for many years using the same original vanilla beans! Ina’s been using hers for over 20 yrs!

      Hello sweet lady, I have seen cacao beans but not coffee or vanilla. Not sure about the alcohol you mentioned but my guess would be as long as it is the right proof (my nighttime brain can’t recall the number I noted in the video🤦🏻‍♀️), then it would work. 😉💙

    If you use a lower percentage alcohol like Amaretto, would it just take longer or would it not work at all?

      Hello, I have Amaretto in my cabinet but have never used it to make vanilla. I did a little research for you and found that only "high proof" should be used. I hope that helps and I am grateful for your visit and comment.

    Good morning I've ben watching videos getting the info and feel of doing this. My question is should this diy vanilla extract work in homemade ice cream? Will it be tast like vanilla or vodka? Thank you.

      Great question! Yes, this vanilla never tastes like vodka (which really doesn't have a taste to begin with). I *only* use homemade vanilla in everything. Now, if you make it using rum, you are going to have that rummy flavor but that is a great addition when making, for example, Pineapple Upside-Down Cake or Pound Cake.
      I am glad you asked about homemade ice cream. A trick to produce smooth and silky homemade ice cream is to actually use homemade vanilla. The alcohol in the small amount of vanilla that you'll use will actually prevent the ice cream from freezing hard as a rock and from having all sorts of ice crystals. Alcohol doesn't freeze so, in your ice cream, it will help produce a smooth and silky product. The ice cream will be frozen but not hard. Try it!

      @HeritageWaysKatie 🤔 ty for answering, i do the icecream w/o machine, the kind with mixer. The reason i question about the alcohol is my younger sister medical (double transplant reserver) can't have alcohol amongst other food restrictions. Soo when Holliday cooking is happening, we are careful w/everything.

      @@nicolecarter3360 I've read your question, an i have always been told an to is you can research it but when cooking with alcohol or baking. The alcohol is cooked out an you are left with flavor. So in making ice cream i grew up with it being made with a cooked cream mixture where from one of those little beans you can take out the seeds an use in that yummy ice cream.

    I just found your channel and I saw on another one that they said you can process it in your instant pot and it’ll be ready in a week or two. Have you ever tried that or heard of that?

      Hello and thanks for the question. I have never heard of this in my 30 years of making vanilla. I have never cooked/processed the vanilla and have never read of this. Of course, I encourage folks to do whatever they want in their own kitchens but, it seems to me, that adding heat to the procedure would compromise the ingredients in many ways. I am no scientist but that just makes sense to me.
      I am afraid that their are many "short-cuts" going around the internet these days that just don't need to be taken. In my humble opinion, folks are too impatient to wait on old-fashioned processes.
      Well, I hope that makes sense. It is only my opinion. ❤️🏡❤️

      Good morning, funny thing…after I responded to you, a video popped up in my feed about making vanilla in the IP. 🤓 I watched. It was made by a “professional” looking fellow with a ton of followers.
      After watching, I *still* would not cook my vanilla when making it. Ever. Just think, when making most cooked recipes, like pudding for example, the recipes will always say to add the vanilla at the end, or even after the heat is turned off. This is to avoid an odd flavor by cooking the vanilla.
      Yes, baking a cake is cooking the vanilla but that is different from stewing a jar of it by itself in an IP😜
      I got to thinking….it is interesting how folks (not you, but I guess most of us, really) will do what someone says only bc they are famous or have lots of fans, etc. 🙃 Just took me down a rabbit trail of thinking…

    The Madagascar bean you showed is an extremely poor grade of bean. The Madagascar beans I purchased from a different company look as good as your Tahitian bean shown. They are just as long, plump and moist as the Tahitian bean. I’m sorry that you used your Madagascar bean as an example of what normally comes from Madagascar. I suggest that you keep looking at other companies for better Madagascar beans.
