      @@marybolles3736 I use clement family farm’s video and downscale it. It’s just beans and sugar grinder and sit and wait like extract though. He uses his beans that have already been extracted. I use my seeds for paste (Whitney Olsen recipe), my pods for extract and then sugar last. I just heard people are dehydrating and turning to powder but I haven’t tried it yet. Good luck if you try it!

    Dehydrate that discard, and use it for a shaker sweet spice etc..

    Hi Gemma, I can’t wait to make the paste and with it the compound butter on waffles or pancakes sounds amazing! One of my favorite recipes is your ‘Make Ahead Apple Crumb Pie’, love it! I was wondering if I can assemble the raw dough, put in the cooked apples and freeze it to be baked a few weeks later? Thanks for your GREAT recipes and videos, I’m actually a pretty good baker thanks to you!!

      I don't recommend you assemble and freeze it. Make the components of the pie ahead of time, then assemble when ready to bake. Just roll out the crust, fill with the filling, cover and bake. That way, the crust does not get soggy by getting soaked with the filling. Hope this helps.

    How long does vanilla bean paste last for? And do you keep it in the fridge or on the counter?

    I had a look at your corn syrup recipe and it states that you can replace corn syrup with golden syrup....can we do that for this recipe also?

    Could you save the bean-pod-waste you discarded and use it in … say … a candle, 🕯️ or Potpourri… homemade lotions etc? Or to use in a recipe in another way? Like adding to oatmeal or the like? Just curious. My knee-jerk reaction is to save everything and use it all. Comes from the “waste-not, want-not” era. 😂

    Is there a reason why you do not include the solids in the paste? Don't get me wrong, I will try your lively recipe, but I am used to seeing the seeds and having a thicker consistency. Thanks !

      You can opt to include them. I prefer to let it pass through a mesh sieve, so only the finer seeds and pod go through. It's used in many recipes as a flavor enhancer, the solid parts can leave an unpleasant mouthfeel. Hope this helps.

    I was told not to add the sugar to eggs to early because the eggs will start to cook. How early before you need them do you add the sugar?

      I have a cuisinart ice cream machine. But I usually use it in making gelato. I also have recipes that don't require its use.

    You made basically vanilla simple syrup - paste should be thick and have all those good bits you discarded and you are missing alcohol which extracts the vanilla and makes it shelf stable. Looks like a great recipe for syrup but its not paste.

I have an article on possible sugar substitutes in baking www.biggerbolderbaking.com/sugar-substitutes-guide/ but I'm afraid I'm not an authority on making recipes that will assure anyone it's diabetic safe or friendly. I think you'll need to clear a recipe with your physician, to be on the safe side.
