    I can smell it from here and it smells heavenly. My sister gave me some of their homemade vanilla extract that has been sitting for a year and WOW!! Soooo much better than store-bought.

    I just started 2 bottles of spiced rum vanilla extract . Plus orange extract . Can’t wait until they are finished . Looking really nice so far . I did cut my vanilla open and cut them in half to fit better in the bottles . ❤❤ love learning from you !

    I got my beans from Native Vanilla, because I liked how they got started - someone who was in Papua New Guinea as a child went back as an adult and saw how the growers were being treated unfairly - paid very little by the wholesalers, sometimes not able to sell their crops at all - so he started a company that enabled them to sell all of their product at a fair price. Like Heidi I bought a good supply, so I don't know how things are right now, but at the time of my purchase (2-3 years ago) they were very competitively priced.

    I followed the suggestions and also got my beans from the FB Group Indri’s Vanilla Bean group. Single fold 1 oz beans to 8 ozs of vodka or your preference. I let mine sit for a year and 2 yrs for bourbon. It has turned out fabulous. I have also made vanilla paste which can be used just as you do with extract. I started my 1st mother jar this year and will continue adding. I currently have 3 different types of beans from different areas of the world brewing and I can’t wait to give them a try. I also dry my beans after extracting and make vanilla sugar.

      I used to make vanilla sugar, too, for my scone mixes I sold at my tea house years ago. I still have some vanilla beans, D'Allesandro brand, but I can't remember where I bought them online.

      @@BRANDYHAMILTONS add dried beans either crushed or broken pieces to a jar of sugar. I have seen some take beans directly after extracting, cut it into pieces and place it in a sugar jar. Then once the pods are dried, they make vanilla powder (I have not tried this yet). I have not used mine for baking (been moving) but I hear it is fantastic.

    I love the perpetual idea! Gonna implement this asap! Thank you so much! I started mine over a year ago and just bought a half gallon of Spiced rum in a dark bottle, added about 20 beans and waited 6 months... been just using it from the bottle since! Got the beans from amazon on sale but looking into azure soon! Not having to buy beans to restart every time will be extremely kind to the budget! 😁🥰 Blessings and thanks again! 🤍

    Again, another great video! Thanks so much! I bought madagascar beans on Amazon when they were on sale. Still pricey, as vanilla beans are, but at least I caught the sale!
    I have 5 or 6 of those little jars down in my basement I put back about 6 months ago. They aren't as dark as I thought they'd be by now so I'll let them sit another few months. I wanted to give them as gifts this Christmas, but maybe they'll be ready for next Christmas! I believe I will start the perpetual extract! Thanks for the idea!

    natural antidepressant = use honey as a base in a mason jar, add fresh ground black pepper, and vanilla bean extract, the more amount = the more effect, blend or stir intensely until it combines, take a tsp or 2 for a dose. i personally start with about 2.5 tsp of pepper, and 2 tbsp of vanilla, add turmeric and ashwagandha for bonus points! experiment!

    I put 10 split Madagascar vanilla beans, one cinnamon stick, and 1/2 teaspoon of saffron in a 1-cup glass jar. I then filled the glass jar with Jack Daniels Tennessee Whiskey. I primarily use my perpetual vanilla extract in my homemade ice cream recipes.

    I have bought my beans from vanilla kings. they have different grades but i forgot what i paid. i did buy the highest grade and it has been over a year ago. i do remember the price wasn't prohibitive. if you do a subscription you get a break. i stayed on the subscrition until i felt i had enough to last me a loooooooog time 😅😊❤ love what you do and appreciate all the work that goes into you videos. i have implemented A TON OF YOUR IDEAS 🎉

    From Linda - There is nothing like homemade vanilla extract. I bought my vanilla beans from Lidl (Same as an Aldi but better), split the vanilla bean down lengthwise and used vodka and let sit for exactly one year. Have done it the same for 2 years. Next time around will be using your method Heidi. Thank you for another wonderful idea. God Bless you.

    I also get my beans from Indris Vanilla Bean group on FB. They offer group buys, as well as having a store. I've learned so much from this group! I have several different types of beans brewing right now and they won't be ready until May of this year. The last beans I purchased as part of the group buy were 7.00/ounce, with a beginner mixture of 3 different beans. They hit all price points with their beans. I've made a lot of vanilla paste - it is so much better than commercial. I also made/gifted vanilla salt, vanilla smoked salt, sugar, and whipped honey with vanilla.

    Thank you for this video! I thought you added 2-3 beans for 3 cups of Vodka! It’s been “stewing” for about18 months and it still smell like vodka and vanilla! I will buy more beans and add them! Thanks again!

      When you make vanilla "extract", measure by weight. This way, you have a better chance of success.
      There are also ways to use heat to get a usable product faster. That's what I do for one batch while I "cold brew" another batch.

    The first time I made vanilla using rum, I was so happy with it, I kept giving samples to people, until one day I realized I was going to run out before my next batch was ready. To try and hurry it up, I put alcohol beans and all in my blender and let the beans grind up finely. Back in the bottle, in a dark spot. It did get ready to go faster, but if the bits and pieces bother you, you need to strain it very well.

    I’ve had a perpetual (40% distilled water 60% veg glycerin) for years and have found my favourite way is to cut the beans lengthwise and scrape the guts into the extract … I love the tidbits that get incorporated, especially in ice cream and pastries 🤗

    I only make vanilla once a year. Every December I use my working bottle down with all the baking I do and refill it from my "mother" bottle, then refill my "mother" with more solvent. I have never used anything but vodka, now I will be trying the rum for a change.

    I get on the bulk orders with Vanilla Bean Kings. There is a facebook group and I have loved the quality and plumpness of the beans. I was getting discouraged with other places. Perpetual is the way to go! I gifted my daughters in law a 32 oz bottle of vanilla with beans for their start up. They were very grateful! I also use organic Prairie brand vodka so a great value as well for them.

    I've been making vanilla extract for 4 years now. I've gotten to where I have two bottles -- one for brewing and one for decanting. Baking is my hobby (inching into a side job), so it truly is cheaper to make it than to keep buying it! I recently opened a smaller bottle I'd made with dark rum, and it's an interesting difference from the vodka-based extract.

    You gave me the information I needed to make flavored extracts. For vanilla, I just used regular rum. I leave mine for a year. I did take your advice and used peach pits for almond extract and I used vodka with that. I used the peaches to make a peach extract. The almond and peach have a way to go before they’re ready, but I’m excited to try them. I buy my vanilla beans from Amazon, but so far only small quantities (I think 10 grade A). I am on my 2nd quart of vanilla that has been sitting about 13 months. When I pour it out for a new batch, I will add more beans. I also leave the seeds in the bottles I’m using. Many Blessings!!

    I buy my beans from Vanilla Bean King, I wait for their specials and then buy. I haven't bought any for over a year so I'm unsure of the current prices. I use Parrot Bay coconut rum as my solvent. It's my favorite. But I do plan to try some other solvents for taste differentials, such as Hennessy, Tequila, Bourbon, Whiskey and vodka. I have these small 4 ounce swing top bottles for this project. I know that there are different t types of vanilla beans as well, and each one pairs differently with each solvent, some are smoky, or spicy, and they pair well with solvents with a similar flavor profile. I love my current homemade vanilla, it will difficult to beat. 🙂

    Heidi: this is my 2nd posting about ordering vanilla beans. I would like to know what you and the other fellow homesteaders think about this subject. I am researching on the internet about what countries we can order vanilla beans from and I found conflicting answers about Mexican vanilla beans. One source said that ALL vanilla beans started in Mexico and the plants (or vines) traveled to other tropical countries in the world to be planted. Then I also read that Mexican vanilla beans are from the Tonka tree and are not real vanilla beans. I don't know if that is correct. It just proves we can't believe everything we read on the internet.

    Great video! I'm going back and forth in my head about buying 4 oz of beans for $64 at Azure. I trust Azure and I'm always skeptical about buying from Amazon. I will be taking your advice and picking up the spiced rum from Costco. The bottle is pretty cool.
    I would love to see you do a video on cleaning those bottles - especially the carboy gallon ones.

    I bought beans last year, 4oz, and used vodka. I tried some after 3 months and didn't like the flavor. I let it steep for another 5 months and it turned out fantastic. After straining, I refilled the bottles and now I wait at least 8 months.

    I got my recipe for making homemade extracts from Homestead Heart because she has an alcohol-free recipe. I am not against alcohol but for myself, I just do not like the flavor of any alcohol that I have ever tasted. So I have been using food grade vegetable Glycerin and it has worked great for me. I have been doing it for about 4 or 5 years. I have even used 1/2 vodka and 1/2 glycerin, that also takes away from the alcohol flavor.

      I also have alcohol free recipes for medicinal and flavoring extracts and in fact have a new video on that publishing in a few weeks. However, when it comes to vanilla, I still prefer the spiced rum

    Perfect timing! I had just pulled out my 2 different types of vanilla areas, spiced rum (Costco) and vodka to make a few different vanilla extract. I didn't realize how many beans were needed. I did 5 beans per 8-10 oz approx. Looking forward to determining my favorite. Thanks for the help!

    Heidi, I do the same thing is add more bean to my vanilla extract. I leave my extract for 6 months and like you said Heidi, the longer you let it sits it has a much vanilla taste. I use Vodka

    I don't worry about specks, but I made a pie and put a bit of vanilla in the meringue. The specks threw at least one person off. Rum is my solven of choice. I'm super sensitive to alcohol and that's a massive understatement, but cooking burns the alcohol off.

    End of 2021 I ordered vanilla beans from Vanilla Bean Kings CoOp and put some in Vodka and some in C.B. Jackson. Both were left until Christmas 2022 when I poured some off for gifts and started using from it. The ones in the C.B. Jackson are still in the same (I need to buy a new bottle, or maybe I'll try a Spiced Rum next 🤔💭) The vodka vanilla I poured off back in August 2023 and poured fresh vodka over, I'll leave it until I need it but at least a year.
    I ended up preferring the C.B. Jackson vanilla over the Vodka vanilla for most things.
    I know nothing about alcohol so it was quite an adventure going into a liquor store, I was so lost 😂. I'm looking forward to seeing what everyone else uses.

    Thank you.
    After viewing numerous videos, I decided on Coconut Rum, based on a concensus of subscribers reviewing samples of ten different alcohols. The coconut flavor disapates.
    Also, letting mine steep for 18 months on recommendation of someone who has been selling at farmers markets for decades.
    As well, trying combinations of raspberry chocolate coffee beans, vanilla, cinnamon stick, cacao and clove.
    Waiting for June to sample. Lots to which to look forward.

    I always cut vanilla beans lengthwise. I use them in my Kahlua recipes n scoop out the inside to put in mixture. but you wouldn’t want to do that with perpetual vanilla extract.

    I'm going to powder mine,I make my own coffee creamer,and I've bought vanilla powder on amazon in the past. So expensive, can not find it anywhere and in the big city. Very informative, Heidi,thanks! I guess anything can be made into a powder,which is my go to. I've made mine with honey only,but might try the spiced Rum,vodka I can't seem to find 100%,it's usually 40-80 proof.

    I used Madagascar beans. One jar in vodka and one in Jack Daniels. It's just been a year and I'm not crazy about the one in vodka. The JD is ok but both still have a strong alcohol flavor. Maybe it's the beans? In my next batch I will try the spiced rum and honey.

    Just tried my first jar yesterday and used Everclear alcohol, 10 beans in a quart. I guess I will know on 6 months how it worked!
    I can't vacuum seal jars, but I have a vacuum sealer for the plastic food bags. I wonder of that would keep the beans?

    I believe only Washington State Costco's sells alcohol but could be wrong. Thank you for the info. I need to make a new batch of vanilla, never thought of adding honey.

    Good Morning Heidi! I have 4 pints I started last April! I realized in August that by I hadn’t added enough beans, so grabbed some from Azure Standard and added them at that time!
    Question; do the bottles need to be stored in a dark cabinet- and do they need to be shaken periodically??

      I keep all my extracts stored in a cupboard or cabinet and while I do usually keep them out for a week or so to shake daily, once I stick them in the pantry, I do not bother with them after that

    How do you vacuum seal a jar? Thank you. Would love for you to do a video on ways to reduce oxalates in various foods. I am recovering from oxalate
    Poisoning and am very painfully shedding the oxalates. I have asked several “experts” if fermenting or extracting with alcohol will change oxalate amounts is herbs, vegetables and fruits. I know boiling some and discarding the liquid will help. This process also dissolves the water water soluble vitamins and then we are throwing those away. Thank you, I really

    Hello Heidi, I don't know how you keep loading videos right after I do that exact particular thing! I just topped off my perpetual bottle last weekend. And I was thinking why am I doing it this way when I could just add all my beans right into the vodka bottle and keep them in there? I went to go get all the vanilla beans in my stash and do that, and then realized the vodka is finally getting a little low for that so it's time to get a new bottle and I will look for that spiced rum to try instead. I have never tried rum before. 4 years ago, I gave everyone little bottles of homemade vanilla with the bean in the bottle for Christmas. They were jars just like your little one with the white flip top lid. I can't remember all the places I got the beans. I think Azure maybe. Also, Frontier herb, world market and a local dairy delivery called Shatto Milk that also offers locally made goods. Long before I learned to make vanilla extract from reading about it in the tightwad gazette, I used to make vanilla sugar by keeping beans in my giant sugar canister. I still have that going as a perpetual vanilla sugar as well. Having the two layers of vanilla when I do make something with sugar in it like chocolate chip cookies is really lovely. After taking a break for a few weeks from UA-cam I logged back in very nervously and haven't seen a single offensive ad yet, my fingers are crossed that it never happens again.

    Heidi. It is so neat that you just posted this video because finally after a year of wanting to make homemade vanilla extract, I finally started my first batch about a week ago. I ordered my vanilla beans from Amazon, as it seemed the easiest thing to do. They are from Tahiti and seem to be moist and juicy. I want to order some from Madagascar also, which I will do the next time I order. I have been learning more about making vanilla extract this past week, so your video is very timely for me. I have a question that I would like to have feedback on, since I am a newbie at making vanilla extract and ordering the vanilla beans. When I was researching on the internet, I came across something that said that vanilla beans from Mexico ARE NOT true vanilla beans. They are from the Tonka Tree, not the vines that the beans come from in Tahiti or Madagascar. Is this true? If so, I will avoid ordering vanilla beans from Mexico. Correction: I found out that it is untrue that vanilla beans from Mexico are from the Tonka tree. That cannot be correct if vanilla beans originated in Mexico and were propagated to other tropical countries.

      While I do not drink myself, there are things people who would prefer to avoid alcohol need to understand about extracts, especially those being used to flavor anything, it is most commonly going to be in food and a very small amount in the whole batch. This means that when consuming it, the very small amount of alcohol would be absorbed by the food causing NO alcoholic reaction. However, if you cannot have alcohol in the house, then consider 3 parts food grade non gmo glycerin to 1 part water. The flavor will not be as intense so you will need to add more vanilla beans to this or at the very least, cut the beans both lengthwise and in half the other way

    Vanilla beans are really expensive here and I found a substitute back 2021, this recipe with the Sweet Woodruff might work well. Check out Forager Chef he has a recipe for it.

      It will make it taste sweet but the honey flavor, since I am only using 1 part to three parts rum, is barely noticeable if at all

    I have a SERIOUS question. Cheapest true homemade extract is at least 0.9 ounce per 8 ounce vodka. I paid $11 per ounce for vanilla beans! How will i save money?

      This is where the perpetual vanilla extract can save you money because you just keep using the same vanilla beans over and over, only adding a bean now and then (maybe one a year?)

    Hi Heidi, Question, I have a 3 yr old perpetual Vanilla extract made from organic ocean vodka from BevMo.
    Question would it be okay to move to topping off with spiced rum an honey or would I need to create a new perpetual vanilla extract using spiced rum and honey and not mixing solvents?

      You must be the same one whose email I just responded to, yes, you can mix solvents, I do it often. When I first started my perpetual extract a two or three years ago, I was using homemade wine, spiced rum, and honey but decided even in that mix, I did not care as much for the wine as a solvent for vanilla so as I added back, I stuck to only the rum and honey mix

      You may need to watch it again to understand but I will give you a very simplified overview:
      1: start your larger jar (quart, half gallon, whatever you prefer) and allow to infuse for a few months.
      2. take out enough to fill up a smaller bottle (4-8 ounces) to keep in the kitchen for use
      3. top off the large jar with your solvent so it can infuse while you work through the smaller amount.
      4. repeat steps 2-3 next time you need to refill the bottle you keep in the kitchen

    I try to recycle glass jars whenever possible but always shied away from olive oil bottles. I thought it would be impossible to get the oil out of them completely with the jar opening limiting access. Can you please share how you clean yours before repurposing them for your homemade wine.     Stupid question, how r u vacuum sealing the jars? R u doing a steam bath canning process? I am confused as to how to vacuum seal the vanilla and vanilla bean jars so they do not spoil? When ur fermenting the beans, do u even need to vacuum seal the jar because of the alcohol in it?

      I do not drink either but one thing to understand is that when using the extract to flavor anything, it is usually going to be in food and a very small amount in the whole batch. This means that when consuming it, the very small amount of alcohol would be absorbed by the food causing NO alcoholic reaction. However, if you cannot have alcohol in the house, then consider 3 parts food grade non gmo glycerin to 1 part water. The flavor will not be as intense so you will need to add more vanilla beans to this

      Vegetable glycerine can be used instead of alcohol. Azure Standard carries organic vegetable glycerin. I found this advice in a search: "To make the extract, begin by mixing together three parts glycerin and one part water, then pour it into a glass bottle. Cut three vanilla beans open lengthwise for every cup of glycerin you use. Add the beans to the glycerin, making sure they're completely submerged. Then cap the bottle and store it in a cool, dark place. Shake the bottle once a week. It will be ready to use in two months.
      Your finished extract may not get as dark as alcohol-based vanilla extract and it will have a consistency similar to syrup. However, it will have just as much flavor and work just as well as any other vanilla extract."

    Good morning. I'm so sorry to disturb you with another silly question. I am still learning and sift through the facts. I heard that when it's time 1,2ys in, and your decanting the exact still has the alcohol(ly) smell? Is this true, i'm imagining 90% alcohol smell to a 2%vanilla smell. 2nd question (?) Is you can't shouldn't use it (diy extracts) in cold things because of the alcohol, only cook w/it.?😊 ty

      You do not have to wait 1 to 2 years to use it unless that is what you want to do. The shortest time to wait is two months but the longer it extracts, the better the flavor. However, this will not do away with the alcohol nor make the alcohol less strong. As far as using it, you can use it in whatever you want, hot or cold

    Can someone explain how a perpetual extract works? Can’t seem to grasp it. Just add back to the jar every time u take some? But then wouldn’t u have to wait another few months at least?

      Add back every time you fill your smaller bottle as I shown in the video, not every time you take a tiny amount out. I fill up an 8 ounce (it can be bigger if you want) bottle that I work through from the main jar. Every time I do that, that is when I top off the large jar. It may take me months to work through the smaller jar which is plenty of time for the larger jar to infuse with the freshly added solvent

    I have my vanilla extract for almost 3 years and still taste like alcohol. I put a lot vanilla probably my vodka was very very strong from Europe. I would like to have tincture maybe I should dilute it with water I don’t know what to do

      Did you cut the beans open 🤔 another comment mentioned that they put it all in a blender and that helped... maybe try adding a few more beans and blend it 🤔 😊

      I've heard that you can sometimes add an oak block and it helps with that. Also, for a true test of what your vanilla is like, I suggest putting just a little bit into some whip cream or milk. Then if you can still taste the alcohol, I'd add the oak block or add more beans.

    Why your honey is a liquid supposed to be crystallize? only crystallize honey is real like Costco honey is liquid only that mean fake

      Real raw honey takes time to crystalize, fresh honey does not come out of the comb crystalized or suddenly crystalize as soon as it is packaged up. I have other raw organic honey that I have had for longer that is crystalized. so this notion of honey that is not crystalized being fake is a lie when not taken within the full context. I have also got honey straight from the comb from friends that while we did work through it a bit quickly because it was so amazing, it never did crystalize. I am sure it would have if we had allowed it to sit for many months in storage

      I will also add, it is not anymore complicated than buying what you need to make your own bread from scratch. Stocking up on things in which you can make all kinds of goods from scratch means you never have to worry about running out. In the long run you are making your life LESS complicated, saving money, and making things healthier
