When chopping the head like in the video one loses some meat there, best to cut it in a V shape, start from the point where you chopped it and cut at an angle towards the front of the head.

I am surprised you didn’t rinse off the inside of the fish before cooking, and didn’t put any seasoning on the inside. If you don’t eat the skin, which a lot of people don’t, you don’t get much if any seasoning.

They DO have scales but softer than most other fish. If they didn’t scales they would not be considered kosher and could not be eaten by Jews. Bottom feeders like catfish don’t have scales and are not considered kosher.

Yes, they do, just smaller and normally not necessary to remove before eating unless it is much bigger.
