Been doing some ice cream using a ice cream machine (not condense milk version). The key to prevent rock hard ice cream is a ratio of erythritol to allulose mixture. How much ratio will depend on the amount of 'water' (nut milk) to heavy cream ratio. You've to play around what works, but usually allulose is like 1/4 to 1/3 of total sweetener. The ice cream turns out like regular thick good gelato pint. If you don't want the ice cream to melt too fast, use lesser allulose.

Hey guys, hope all is well. That is so delicious, Thankyou so much. Haven't done any flavours yet, just the vanilla, but so good and only 7.8g of carbs as sugar for 300g of keto ice cream (as a reference 300g worked out to be one of those large round plastic containers full that you get when you get Chinese take away or gravy from the shops, I told the wife they would come in handy and I kept them for a reason) compared to 85.2g of carbs with 67.8g of it being sugar in your regular Peters ice cream for the same amount. I'm so happy. Thanks again.......Damon from Australia. Also what I found easier because the cream comes in 600ml bottles, was to just use one of those for the condensed part (only 25ml less than 2 1/2 cups) and then another 600ml to make the ice cream (100ml more than 2 cups) So only 75ml difference all up. So for the ice cream I used 600ml cream and 480ml of the condensed. But next time I will just use 2 cups of condensed to make it easier and only 20ml difference and so much easier than trying to measure it all out and stuff and it worked out fabulous. One more thing is next time I'll probably try half the sweetener, as I found it really sweet (perfect for the sweet tooth's like my wife, who adored it). And yes I see what you mean, I was doing 3 spoons for the container and 1 spoon for me, 3 container 1 me. Next trick is to have a crack at the cones. Thanks again you beautiful people. YUMMO.

I just made the condensed milk again. In my pot, it was getting thick at about 10 minutes. I turned it off and let it sit on the burner with it off. With the residual heat, it’s perfect. So you may not need 30 minutes. Your mileage May vary

You remind me of my gran...she never used a recipe or measurement...it was all done by feeling texture with her hands and went by sight. I just found a hot fudge recipe very similar to your sweetened condensed milk. Just add melted chocolate. I have cans of coconut milk with Best by 3/2024, so i will try it. Cooking down the coconut milk by half
No Cook Easy Ice Cream. 1 cup heavy cream 2 egg yolks(adds creaminess) 1/4 cup sugar substitute(I use erythritol) sweetener 1 tbs sugar-free pudding mix Five 4 ounce jelly size Mason jars Combine with hand/stand mixer until it peaks but is still flowable. If you want you can add chopped up Lily's sugar free chips or chopped nuts at this point. Spoon into jars and tap on counter to level out each jar. After 2-2.5 hrs in the freezer you'll have soft serve consistency ready to eat. Once totally frozen take off lid and let sit 15 mins to thaw. The pudding mix adds maybe 2 grams carbs per jar at most so this is very low carb. I've tested blood sugar readings many times and never once got any rise at all. So many combinations... Pistachio / butterscotch / banana Creme etc. Super easy.

Hello my dear Ela, I hope you are well. 10 or 15 minutes in the freezer then check it. I was just meaning we shouldn't freeze for long. And it's because sweetener is not the same as sugar. Using 2 tbso of hot water I will dissolve the coffee/mocha first then let it cool. I did not think of adding it to the condensed milk but that might be very yummy Bless you my friend. I just got a new ice cream maker and have been looking for keto ice cream recipes; I am going to try these. When you say 2/3 cup of monk fruit sweetener, which one did you use? I have very small bottles of it and it would take several bottles to make 2/3 cup. Are you using something like Lakanto that has erythritol mixed in it?
Hi Steve, GC here. I use Monkfruit classic cos allulose is so expensive. If you want to make a plain ice-icream you need to grind the sweetener finer. But if you're adding nuts/berries it won't matter. Nice to meet you and you're welcome 😊

I don't understand how the entire recipe can have 0 net carbs when one cup of heavy cream has about 6.4g net carbs. Remember that the carton will list 0 carbs because they round down when under .5g, and the serving size in only 1 Tbspn.
Hello Eliot. I used an Aldi brand which was listed as zero. So if I can't rely on that what should I rely on? Nutritional info is only a guide. Please work out your own.
@@CookwithMel1 It's not that you can't rely on it, but the carbs listed on the carton are for 1Tbsp. If you google "net carbs in 1 cup" you will get a more accurate carb count.
Hi Judy, I have not forgotten I'm working on the Dairy Free one right now. It's got some different elements to it. One of the tricks is to turn the coconut milk upside down so the liquid separates, and you don't use the liquid part in the recipe. 10 or 15 minutes in the freezer then check it. I was just meaning we shouldn't freeze for long. And it's because sweetener is not the same as sugar.
Using 2 tbso of hot water I will dissolve the coffee/mocha first then let it cool. I did not think of adding it to the condensed milk but that might be very yummy

Hi Mel! Happy New Year! I just made the condensed milk and have a question. How long should the condensed milk be refrigerated? I cooked mine for an hour but it's not thick like yours. It looked like yours when strained though.

I just got a new ice cream maker and have been looking for keto ice cream recipes; I am going to try these. When you say 2/3 cup of monk fruit sweetener, which one did you use? I have very small bottles of it and it would take several bottles to make 2/3 cup. Are you using something like Lakanto that has erythritol mixed in it?

Hi Steve, GC here. I use Monkfruit classic cos allulose is so expensive. If you want to make a plain ice-icream you need to grind the sweetener finer. But if you're adding nuts/berries it won't matter. Nice to meet you and you're welcome 😊

I don't understand how the entire recipe can have 0 net carbs when one cup of heavy cream has about 6.4g net carbs. Remember that the carton will list 0 carbs because they round down when under .5g, and the serving size in only 1 Tbspn.
Hello Eliot. I used an Aldi brand which was listed as zero. So if I can't rely on that what should I rely on? Nutritional info is only a guide. Please work out your own.
@@CookwithMel1 It's not that you can't rely on it, but the carbs listed on the carton are for 1Tbsp. If you google "net carbs in 1 cup" you will get a more accurate carb count.

Hi Judy, I have not forgotten I'm working on the Dairy Free one right now. It's got some different elements to it. One of the tricks is to turn the coconut milk upside down so the liquid separates, and you don't use the liquid part in the recipe. I'm just going to do a 2 ingredient bread and I'm still working on Challah bread too.

No, but get powdered if you plan on making a plain ice cream so you don't get grainy texture. If you mix it with nuts or berries I for one couldn't taste it 😋
