    Cal: 576 | Net Carbs: 5.5g | Fiber: 20.9g | Total Carbs: 26.4g | Fat: 42g | Protein: 30.8g
    Ingredients:
    360g/3 cups Chicken Flour (or alternative substitute like Almond Flour)
    60g/1 cup Bamboo Fiber
    80g/1 cup Egg White Protein Powder
    48g/5 tbsp Gelatine Powder
    I do not recommend pre-making a self-raising flour. It’s so easy to add baking powder/soda when wet ingredients are added. This will give you flexibility and allow you to use up one batch of flour quicker. It will also save space in your pantry and requires half the effort.
    Recipe to Make 90 second bread, buns, tacos and tortillas, chaffles and waffles:
    Serves 1 (batter weight approx. 112g)

    I love how humble you are, you didn't boast about your flour not once. Rather you showed us WHY this flour will help us. Thank you for the education too, I learned so much. You gave evidence of why you're saying what you're saying. I know that with a zero total carb flour there's no way we wont lose weight. You're amazing!

    I just found another video by African Keto Diet on how to make Chicken Flour. (2 years old) She says doing it her way makes the chicken flour odorless. As I find out more useful info I will add here:

    I used your CK (chicken) flour to make fried fish! Spectacular!! Process: Seasoned fish, dredged in Bamboo Fiber, then beaten egg with a little water, and finally dredged in your CK Flour. Let sit on a baking rack for 15 mins and then fried in Avocado oil using a cast iron skillet. Hubby said if I had not told him, he would have believed it was fried in seasoned white flour. Delicious!

    I’m now convinced to make chicken flour and yeah bamboo fibre is amazing addition to keto recipes. I couldn’t stand taste of oat fibre anymore and definitely can’t detect any taste from bamboo fibre.

    SOOOO EXCITED! When the title was 'flour for everyone'... I was doubtful.
    But You did NOT disappoint!! Along with that gingham apron!!
    Another vintage flash back!! I made light blue gingham curtains for my 1st kitchen back in 1973!!
    I just need make my own meat flour & I am in business!!
    I have been making a version of Courtney Luna's meat bread & it is very good!
    Nice that I just get to use the meat... but I'm sure the meat flour can be made in large batches also.

    Though I leave mine in the iron until they are crisp!

    Mel you are a genius!! I just mixed my first batch of your almond flour. I then used the flour to make your bun/ bread recipe . This is the first time in 5 years that a bread product actually tastes like, feels like and stays together like a bread product!!!! I am so in love!
    I am in America and was using a recipe that an American lady made. I was disappointed in how her recipe turned out. So I started searching UA-cam and found you. I am so happy I did. I see lots of baking in my future now. Thank you!!

      Try her pizza crust with the “Tangzong “ starter. Terrific. I was a bit hesitant about making the starter, but it was really easy. I use the almond flour.
      It was on a live.

    Thanks for this awesome recipe Mel!
    Take it from me: please save yourself the aggravation and simply purchase your egg white powder. Don't try to make it yourself unless you get your eggs for free and you have loads of patience and plenty of time. I yielded only 8oz of egg white powder from 5 dozen egg whites after dehydrating the messy liquid in my Excalibur. Gigantic pain in the butt process which took many hours of clean up AND turned out more expensive than buying the ready made egg white powder (which costs a fortune in Canada). I ended up paying 3.25/oz of powder and you can buy ready made for just over 2$/oz (in Canada).

    I have a friend who literally tested positive for every single food-including chicken and beef. I encouraged her to try beef that is grass FINISHED in case her reaction to beef was because the cow was fed corn -which is highly allergic to many people-for many different reasons.

      I cannot eat mass-produced eggs because I get an inflammatory reaction, but pasture-raised eggs are fine. I am sensitive to grains and soybeans, which I presume the chickens are fed, and the protein I react to must be passed into the eggs.

      Chicken, eggs, corn, soy, tomato allergies are unfortunately common. I've met many people allergic to one or more of these.

    I am a canner and have a lot of canned chicken breast. I put the chicken breast in my food processor then in the dehydrator back into a spice grinder turned out great thanks for the idea. God bless

      @@CookwithMel1I made the 90 second tortillas recipe without the chicken flour, but mixed in a tablespoon each of blue cheese and brewers yeast. It turned out slightly crispy and very tasty.

    Hey Mel! You're using the words bamboo fiber and bamboo flour interchangeable but I just watched a video from a channel called Bamboo Batu and he said the two are not interchangeable. The flour is made from the shoots of bamboo and the fiber is made from the whole plant. Anyway, the product you linked is for the fiber so I just wanted to be sure that's what you meant and to also let other people know there's a difference 😉. Blessings!

    I love this! It’s so easy to make your own chicken flour. Boil some chicken breasts, then stick them in a dehydrator @150 degrees Fahrenheit for about 6 to 7 hours. Grind the pieces in a coffee grinder or high power blender.

      Set the oven temp to 320f/160c and line a baking sheet.
      Drain the water from the chicken as best you can, then spread the chicken evenly across the baking sheet. Let it bake for 20 minutes and stir so that the underside can also dehydrate. Please repeat after another 20 minutes. The chicken is ready when it's hard and dry.
      The go ahead with grinding and bake one more time to ensure it's dry. Grind again and sift.

      Hello Vicki, lovely to meet you. I was so excited to try whole egg powder too. I bought two big bags, but when I opened and smelled the powder I just couldn't use it and ended up throwing it away. I'm sorry I don't have a single recipe using it. I've only ever heard of it being used in Protein Sparing Bread like in the recipe below.

      You can use oat fiber but a warning...it has a bitter taste to it compared to the bamboo. You are 100% correct about the chicken flour. The process minimises the chicken flavor but also the bamboo fiber then further reduces the flavor. It has a slight chicken flavor and it's delicious in breads, tortillas and such ❤️

I am curious if I make this flour, is it important to weight the ingredients or using your provided cup measurements will still make a quality flour? I hear sometimes that if I don't weigh the ingredients that the recipes won't work well. (I really hate weighing, but will do so if I need to)

    Wow! First time I’ve caught one of your videos! Amazing! Has anyone tested the effects of this flour on a continuous glucose monitor? Theoretically it shouldn’t have any effect, however, I’m leery of adding back too much processed food….even if it is clean ingredients. Thanks for your patience in engineering this recipe! By the way, how much chicken did you begin with in making your chicken flour and how much flour resulted?

      Hi Bonn...so they are both all fiber and very fine...but Bamboo is white and more nutritious. I was attracted to it at first because it contains silica which promotes collagen production as I was saying in the video. It also helps to regulate cholesterol. There are other great things about it too like it's tasteless whereas oat fiber has a bitter taste to it. I also left a link to more info on it in the description box so we can all learn about it 😊
      You're most welcome. I weighed up the cost (it's not cheap) vs the nutrition and for me it's worth getting.

    Hey Mel, I wonder if you could take that flour mix and add in a whole egg some vanilla extract, and maybe some heavy cream to make a tasty pancake? it seems since going full-on carnivore the only 2 things I miss are a good pancake and something I can use for a breakfast sandwich like a biscuit or English muffin.

    I made a double batch of CK (almond flour) Keto Flour this afternoon. Waiting on UPS to deliver my Pullman pan. Tomorrow morning early (before my first “live”) I plan to make a loaf of bread. Forecast to be 105° real temp here in central Texas. Ovens are not used often. 🤦‍♀️🤦‍♀️😂

      For xanthan gum please use 12g. I'm not sure about the amount for agar agar as it's quite potent but if you know the conversion you sure can use that too 😍😍😍

    My egg white protein arrives in a couple of days and my bamboo fiber, next week....and thanks to Chef Fat Farm..... Chicken flour without the oven.....so hot right now and cannot use regular oven.....so that is an awesome use of microwave.

    Hi Mel, love your videos I just made my chicken flour and got your recipe for ck flour not sure about the ck chicken flour/almond flour. How much almond flour do I need to have that recipe for making pyllo dough recipe...thanks for all your great recipes

      Okay you will need 180g of almond flour and 180g of chicken flour to make up the CK Flour with almond/chicken. I love doing half and half too. You're welcome 😊

      Hi Jeanette. You can substitute the bamboo fiber with oat fiber. The chicken flour substitutes are almond flour, Pecan flour and some have used lupin and other meat flours

    I made the chicken flour. Weighed all ingredients in grams. The single large cookie recipe was dry and very dense. I will bake less next time. But it was still very dry as well. 🤔wonder if the bamboo fiber needed more liquid and that was part of the problem. Anyone else had a similar result?

      I have noticed that we need to lower the temperature by about 15 to 20 degrees and keep an eye on it towards the end as it needs a little less time to bake.

    This was a really funny video. I really like the concept of chicken flour but I don't think it is for me and I'll probably go with the almond flour sub.
    The ready made chicken flour is pricey and while making my own is doable, I do not have the patience if I am being totally honest. Thank you for the hard work. Making keto stuff that works and tastes good is HARD. You are appreciated

      Essentially it needs to be beef powder or beef dehydrated and ground to a powder. 😊😊😊

      Curious if you tried making this using the beef protein powder? From watching numerous videos, what I gather, is beef protein powder absorbs liquids differently. It might change the texture vs using beef flour. But it would be nice to know this since I have the protein powder myself. Maybe try it with a very small batch first and see what happens?

      Oh that's a fantastic idea. If you divide the recipe by 10 it should make 55g and there are 1 serving recipes you could try it with. I don't think we can get beef protein powder here

    Ok so you don't have to use psyllium husk or xantham gum? I have noticed that they having an adverse affect on my stomach.

      Yes that's right Lilly. The bamboo fiber as well as the omission of those two products should aid in a healthy digestive system. I found that out doing research on Bamboo fiber. So I thought it would be an absolute travesty to add xanthan gum 😊😊😊
