350°F at 15 minutes per side did not work for me at all. I had to take the foil off and cook for an extra 25 minutes, turning at every 10 minutes. I am using a gas oven and a silicone bread mold from Pampered Chef. I wish I could add a picture to this comment because it turned out beautiful!!

oh wow you're the 2nd person that had to bake it for longer. I don't know what to do about that because half an hour was okay for everyone else so I'm sorry about that.

I used a glass loaf pan, 5 egg white from a carton, and 1 whole egg (only because I ran out of the egg white carton), 1 tbsp baking powder and 1/2 tsp of salt. I had to bake it for an additional 15 minutes and I didn't any additional baking time uncovered. I was pleased with the results. However, I had a question about the carbs. How is this keto? Each serving size of Skippy peanut butter has 6 grams of carbs which means 1 cup has 96 carbs for the whole loaf (16tbsp x 6 grams). So, if I cut a 1/2 inch slice of bread, using a 8 1/2 long loaf pan, I have 16 slices. Every two slices is 12 grams of carbs which is the same amount of carbs in regular store bought white bread! Sorry for if it sounds like I'm ranting. My head is spinning from the math....but this delicious slice of bread is worth it (just not for my diet 😭)

I can't thank you enough for this incredible recipe! I have been testing so many of them to try to make a keto bread that doesn't taste awful like they all do and finally I find it thanks to you! I followed your recipe and it is PERFECT! With organic peanut butter at 7.6g of carbs per 100g, that's 19g for a whole loaf of bread, less than 2g a nice slice! I have eaten it with just a little butter and it is a joy! (I am French and so delighted to have found you here!). Many thanks to you! ❤

Hello Mel, I must admit I was so sceptical using peanut butter, I tried 1/2 portion in case I don’t like it.
I put chia, sunflower and pumpkin seeds, and guess what I don’t feel peanut butter at all and I am so glad this recipe doesn’t not require rocket science 😀
Under 30 min and bread is ready. I followed instruction even with the foil. It turned out perfectly. Thank you so much .

I just made this with SunButter (sunflower butter). It turned greenish but I read that's normal and harmless. It's just a reaction with the baking powder and chlorogenic acid in the sunflower seeds. I also used 6 whole eggs. I can't believe how well it turned out!!! So fluffy and airy. I bit on the bland/bitter side so I might try more sugar or honey or something else next time, but WOW. Thank you for the recipe.

Ok, so I gave up on finding my loaf pan. I baked this in an 11"x11" aluminum pan. IT'S AMAZING!
The only thing I'll do differently next time is to spray the underside of the foil with some oil because it did rise enough to stick. Sort of had to peel it away along with the nice smooth brown top of the bread (which I unabashedly scraped off with a fork and ate). It took a bit of coaxing out of the pan but eventually came out in a nice perfect loaf. I immediately devoured a slice with some Brummel & Brown yogurt spread. Then I cut a slice and toasted it. Buttered toast has been my comfort food since childhood. FINALLY I've got a keto replacement that is oh so satisfying. She wasn't kidding ... this toasts up real nice.
I'm not exaggerating here... I may never eat "real" bread again!
Some recipes really are life changing.
Now I'm wondering what would happen if you added yeast or a sourdough start?! Would it give it that homemade bread taste?
      I will be experimenting.
      I'll post any successes here.
      Thank you again!
( I'm going to get another slice... )

The recipes and videos you are presenting are outstanding, truly. I admire your hard work and efforts. The issue of macros, in particular carbs, seems to be causing some stress. I make my own peanut butter. Peanuts in the food processor and that's it. Salted/Roasted red skin peanuts. I can tell you that 1 tablespoon of my peanut butter has a little shy of 1.5 carb, based on documented macros for peanuts and getting it all converted into measurements for comparison. So, if you take 256 grams of peanut butter, divide by 12 (the serving count), you get about 1 1/2 tablespoons of peanut butter per slice which is about 3 carbs with a net set of carbs of around .75 (ish). And you can use raw peanuts, unsalted, etc. So this bread is pretty keto and pretty tasty. This isn't an exact science (aka I hacked this math/conversion) so your mileage may vary. This is an outstanding recipe and I again thank you for putting in this hard work.

    • @CookwithMel1
      @CookwithMel1  2 роки тому +5

Oh thank you Rick what great info!!!
I have not altered the macros because some people are considering only the peanut butter and most don't consider subtracting the fiber...then they say it's not keto lol. Even if they have an issue using peanut butter there is still other options which could suit them and again will affect the macros. This why it should be known that nutritional info should a guide only and truly this recipe is so versatile...one should really work out their own, and its so simple to alter the macros by switching out the ingredients. MFP has served me well for all the years...it can't be expected that I should change it when they don't consider all these factors.
Thank you for making my day and I love that you make your own ❤❤❤

Hi Judy it's lovely to meet you. Oh then I think you will enjoy this bread very much.
Well I tried so many times to make the PSMF bread, bought whole egg and egg white powder but wasn't happy with my results. Plus it's nice to have more options available to us.
Really appreciate your support, thanks so much ❤️

    Amazing, thank you!
I've made it today according to this recipe. I had to keep it in the oven a little longer, but that might be my oven working poorly.
The bread is very soft, delicate, but doesn't fall apart at all. It has noticeable peanut flavour (duh), but its not overpowering at all, even just butter+salt hide the taste. On its own its a bit dry, but who eats bread on its own? I've had some with cream cheese and it was just delicious! I would recommend this recipe to anybody on keto.
PS- if you toast it, it becomes somewhat brittle, but it makes for a great cookie with some low-carb jam or keto chocolate spread.

I wonder if using the foil tent on the more traditional egg white bread loaves would prevent the misshapen loaves that are so common.

    • @CookwithMel1
      @CookwithMel1  2 роки тому +3

Interesting!! My only addition is the rise out of the tin and I dont know if the foil would interfere with that. But one could wrap the foil like a parcel around the entire tin with a dome on top I guess.

This Bread Is A Gift From Heaven 😇
I just made this bread & it is absolutely delicious!!
I added a lil pumpkin & apple pie spice with a lil vanilla & butter extract, I used almond & peanut nut butter and added in some chopped slivered almonds.
I used about 1.5 T of Swerve. It wasn't "cake sweet"
It taste just like very nice bread like you would get out of the store in the bakery dept w/o the bad carbs 😁.
I wanted to make a remake "Popeye Bread" at first with this bread recipe because that's my favorite bread but I wasn't too sure how overwhelming the peanut/sweet taste would be however it's most definitely game on now 👍☺️.

Red bell pepper, cheese, onion, garlic, spices/herb, & spinach added to bread mixture makes it Popeyed Bread. I wouldn't go to heavy on the ingredients but just enough to test what I'm thinking. I would use smoked red pepper & dry it really good as well as the spinach & use the yellow/white cheese of choice preferably one to hold up well during baking.
Good thing about your recipe. You can make it sweet or savory.

@@CookwithMel1 I made a sweet version of this on the weekend (not pumpkin) and can't stop eating it! ❤My organic peanut butter was runnier than yours, so added some PB powder, added extra brown sugar swerve and caramel stevia drops. Also made some honey & maple butter (keto, of course) to spread on the slices. Next time I'll make the pumpkin version. Thanks for the recipes!
