Literally one of the most versatile ingredients out there. As someone who is plant-based it is one of the staples. I always have a can or bag of dried chickpeas lying around if I need something to eat in a pinch.
Hummus, roasted, sauteed, in curries, the list is literally endless.
Nevermind they are a great source of fiber, protein, B vitamins, and minerals. One of my favorites!
All diets are plant-based, say what you are (vegan, vegetarian etc) plant based is meaningless. You could live on fish and chips and technically be plant-BASED because it’s potatoes.
During my time in Iraq, I learned that falafel with amba/tomatoes, tahina, in a flat bread, is a real staple. And it's bloody delicious.

One time a few years ago I discovered aquafava and decided drunkenly one night to come home from the bar EARLY to hand whip it into meringue (this was during my early 20's baking liberation) and it took an hour lmao my arm hurt the next day but I was accomplished nonetheless.
I really appreciate that we can make all of these with just shelf stable ingredients. I was worried I would live off canned goods for weeks, but these look really healthy and fresh! Thanks Babish!

Babish you legend, you're keeping me sane in these insane times. However, as an Israeli I gotta tell ya, I have met no Israeli, Palestinian, Jordanian or other who makes their hummus with olive oil in the quantity you have man. You always boil the chickpeas in water with baking soda, which breaks them down, rinse that off when they just fall apart, reserving a bit of the liquid, blitz it with more tahini than you think is reasonable (that will replace the fat and lift that the oil would give it.). Good hummus never has anything more than tahini, salt, lemon, garlic, and the chickpeas themselves mate. Trust me, at this point, you will have the most mind blowingly smooth, easy eating hummus you've ever had. But i must say your pita recipe has gotten me through tough times. Keep that up. Oh and you can totally top the hummus with smoked paprika and cumin, and you can put olive oil on top, but NEVER IN THE HUMMUS. you're the man.
The key to peace in the Middle East is a hummus competition, winner takes all but has to feed everyone else for ever at an endless party.

I mean, there's the oil you use to saute the garlic. Because if you're putting it in raw, what are you even doing with your life?

As a small tip for those making the cookies, I tried to make them, and at first the dough came out alright, but I had to leave it on my counter to walk my dogs (Didn't leave the stove on!), but the dough got a very oily consistency. I thought that was bad so I added a bunch of flour thinking that would fix the problem. Long story short, it did not. If you have to leave like I did, leave the dough in the fridge to prevent this weird consistency from happening. I turned my cookies into weird biscuits but they were still good. Even if you get that weird oily effect, they're still fine. Use spoons to dole out the dough on your baking sheets because they were very sticky! Have fun baking! (I'm trying the donuts next!)

Week 3 since the calamity. Today I'm going to show you how to prepare that piece of cereal that fell under the oven 2 years ago.
I think that's great you showed this you should be more like this because people should know how to cook on a budget during quarantine.
I would love to see things like how to spruce up a can of tuna or how many meals you can make out of ramen.

I made a ton of hummus for my husband's work lunches, and I kept the aquafaba to play with. The meringue was amazing and I couldn't stop eating those cakey cookies. I'm gonna try converting that recipe into an oatmeal raisin (plain oatmeal for me) recipe!

I've got a little cool thingy that my grandmom makes. idk what it's called exactly. but you just throw some chillies into a pan with some oil, cook it for a bit. turn down the heat, dump in chickpeas, dump a fair but of grated coconut, add a bit of water and close that shit w a lid. just wait a bit then take it out, season and enjow. it's pretty fucking good ngl
I'm literally in quarantine, at least until I get the test results. I've been spending a lot of time on UA-cam. I love how responsive the UA-cam cooking community has been. All the pantry recipes, all the leftovers recipes, and all the distractions. I love it. Thank you. I can't breathe easily and my lungs hurt like hell, but at least I can pretend everything is okay.

Pro Tip from someone severely allergic to sesame seeds and who can’t have traditional hummus with tahini. Aquafaba makes a fantastic substitute for tahini in hummus recipes!!! My family prefers my allergy friendly version sometimes 😄
IIRC, (extra) olive oil also works as a substitute!
You can also omit it completely! I make hummus very regularly and forgot to add it last time; I knew something was off, but it was still delicious. It's only later I realized I'd forgotten to put it in.

I love how he goes from nonchalantly including tahini in a Pantry Basics recipe and follows it up with "If you happen to have lemons..."
I think having lemons in your pantry is much more likely than tahini.
The thing tho is that tahini is something alot of people have in their pantries from that one night of hummus making. Not to mention the fact that it also has incredible shelf life and can survive for years in the fridge if properly stored.

They're also quite high in magnesium, protein amd fibre. So it's great for those who are vegetarian or vegan.
However they're also high in carbs so if you're watching your carb intake stick to half cup per serving.

I keep about 9 cans in my house at all times. I'll roast 2 cans at a given time and carry them around in a cleaned out, wide short salsa jar. I'll alternate between these and roasted nuts for healthy midday snacks
Yo anyone who's a kid watching this in the future and doesn't know what Babish is referring to, he is referring to Corona virus pandemic of 2020 by saying 'obvious reasons'. Everyone had to stay at home in isolation as much as possible. Thus, canned food lasts long and hold very well especially when the government was telling us to stay at home.

I've learned how to make chickpea salad from my mom's coworker! Drain and rinse, mash, then use ingredients as if you were making tuna salad. It's very good, great on rye bread!

Secret Tip: Add an Indian Teabag to gravy (masala) before adding the chickpeas for around 5-7 minutes (No more) and then take it out. It gives the gravy a classic Indian flavour. :)
Garlic and onions keep for about 3 months if stored in a cool (5 - 12 C), dry, dark place, so it's a great food to use for nutrients once the other fresh veggies go bad. That said, I'm very grateful for new recipies to try as bloody magpies keep emptying the shelves at my local grocery stores. Being inventive with what I have at home is hard, so thank you for new ideas.

Easy.
Triple the onions, actually carmelize them by cooking low for AN ENTIRE HOUR, add garam masala (cinnamon, allspice, clove, cardamom, nutmeg) and add water to keep it from burning. After the onions have turned to a literal caramel, you add ghee, (or butter if you're lazy) tomato paste, and cream. Add sugar to taste. You will eat the whole dish.
