This is a pretty amazing experiment and kudos for doing it. It looks 100% completely raw in the middle. Maybe that's just what the camera picks up and how it looks. But it seriously looks exactly like the raw meat next to it when he cuts into the steak.

Not really. "Rotten" is the stage at which food has been decayed by bacteria to the point where it's no longer edible. Plenty of foods can be funky and not even old. Onions smell funky. Garlic is funky. Certain vegetables have sulfuric compounds that break down when you cook them and make your kitchen smell like shit.
The fact that humans literally breed their food beyond the general laws of nature for maximum flavor is the perfect representation of how we are different from the rest of the Animal Kingdom.
I’m all for dry ageing but if you look at the pale whitish green bit on the side at 2:53, that is not a good sign. That usually means the dry age process was not done correctly and mould has started to develop. You should always check that it hasn’t spread further into the meat but usually you would discard if this happens. Looks great otherwise though 👍🏻

WOW!!!! At 10:50 you mention the edge piece has so much mold/fat that it almost smells like pee. There was a time I ate at Peter Lugar's where I insisted the steak had a urine-type smell to it. Not overpowering mind you, but subtle. Everyone at the table thought lost my freaking marbles. So thank you for verifying an experience we've both shared and can ensure anyone else that it isn't uncommon for a high-end steak to have that type of odor.
