And then when they're talking, he said that Alfie's wondering where his mum is, and he goes "Where *is* Sophie?" And we can guess that since he didn't even know Craig HAD a baby, he wouldn't know who the mum was He just assumed 'Yeah the couple I got together stayed together and had a kid' I mean he didn't even QUESTION it he's just like 'Yeah it must be Sophie!'
I remember when I was playing a game and someone had named themselves Stormageddon - Dark Lord of All... I chased the guy down and asked him "Ten or Eleven?" Thankfully he caught the reference or that would have been awkward haha
Same reason that Four would walk around playing with bits of string - or Three would steal wine and food - or nine would play with books and play cards - or Seven would steal mops and hats - the Doctor's brain moves faster than his mouth and (indeed) his body. So, even though he's 'talking' his mind has already moved on and (to keep itself busy) it 'plays' with stuff while everyone else catches up. Eleven especially embodies this with his youthful energy positively boiling over and causing strange 'pepper shaker' moments :P half of which the Director and Moffat came up with and the other half straight out of Matt Smith being... Matt Smith. Watch him in an interview sometime lol

I love how him speaking baby is always played for laughs, but when it’s 11 it’s all goofy and funny, but when it was 12, he was sooo somber about the Viking babies crying and it was still funny when Clara was like “ummm he speaks… baby…” 🤣

And if the Doctor has the power to gag humans with his mind how come we only see him use it in this episode. You'd think he'd use it All the time especially on Amy!! Lol
So from his point of view Stormy has 3 parents: a mum and two not-mum. We know that at the and Craig will be recognize as "dad" but the Doctor still "Not-Mum"
