    Recipe
    Polenta Chips:
    1 l water
    200 gr polenta flour
    3 gr salt
    Cook 30 minutes
    Tapioca Chips:
    1 l water
    115 gr tapioca perls
    3 gr salt
    1 teaspoon squid ink or charcoal powder
    Cook 35 minutes
    Rice Chips:
    1 l water
    100 gr rice
    7 gr salt
    Cook 45 minutes
    Pasta Chips
    1 l water
    100gr pasta
    7 gr salt
    Cook 45 min

    Was looking for this video excellent job man thx ! A question if I have a dehydrater at work what settings do you recommend for a all night drying

      Thanks 🙏. In the dehydrator overnight try the lower temperature setting. Be careful that if drying too much will not puff when frying

    I also got few experiences using pasta and rice ... especially the pasta was not comparable to Postick chip in market 😅 just tasty and crunchy

    Nice video. Worked perfectly. I have a question: I've tried to dry cooked pasta, but I blended like you did with the rice (I was trying to do like Massimo Bottura does to his crunch part of the lasagna). But I get lots of cracks during the dehydration process. Any tips?

      Hi Gustavo, thanks for your comment 🙏. I never try to blend pasta for drying. Usually if it crack it means that the purea was not well amalgamated? Did you overcook the pasta for 40 minutes ? Was it smooth? add some more water if is not. (Don’t use any oil at all)
      Those are my suggestions but I can be wrong since I never attempted to do this technique.
      However have you try to fry fresh homemade egg pasta ? Bottura was using that for the famous lasagna dish ?

    simple, fast, clear
    just my opinion, you can add the balance between water and polenta (usually i make 5 to 1) and the same for tapioca

    Is it possible to dry in the oven? Great video. I want to try it with chicken breast to make chicken breast chips

      Yes it is possible and actually faster. Not over 60 degrees Celsius for at least 5-6 hours

      @@sheunesumeki4930 there was a chef doing chicken skin blended with boiled tapioca pearls, dried and then deep fried. Was very tasty 😋
