Fantastic video. Can I ask what the size was of the paper moulds you used since your dough was 800G was a 750 mould big enough or did you need a 1kg? Grazie.
That’s the perfect size : 15.5 x 16.4 x 10.6 cm
The yeast on apple skins is a completely different kind of yeast from that found on bread. The bread yeast family has become specialised, over many millennia, to ferment grains. So I am unsure why anyone would want to do this. Perhaps a fun thing to do with the children though.

Hi i love this recipe but i have a question could i leave the 2nd dough in the fridge because i never have 2 days off to bake the bread and was wondering if i can leave it in the fridge to ferment and how long should i leave it out at room temp to bake it

Can you help me? My panettone dough was perfect after the 2nd dough. When I bench-rested the dough, the gluten fell apart & the dough was sticky & breaking apart! Do you know what happened? This is the 1st time this happened to me😢

Thank you for shoring how to make wild yeast water for baking bread. This is easier and doable than sourdough bread and indeed it doesn't have any "waste" (flour) as it is done with sourdough starters which I haven't had any luck with. I will try your recipe and I hope I can achieve baking bread with natural wild yeast from yeast water.

I just started my sourdough starter but also only have one of these halogen ovens. I've baked cakes and such in it but never thought a sourdough loaf would work. Thanks for showing that it can!

If you have an extender ring for your halogen oven you can place the pizza stone on the low cooking rack so hot air can still circulate. This also allows you to put water in the bottom of the oven to create steam.
