I've made this chips in work few days ago. My cooks was so impressed by this and our customers loves it! I used them to garnish a dish: Pork tenderloin on roasted shallot puree with confit potatoes and green vegetables with mustard sauce. Absolutely stunning!

It probably wouldn’t be enough starch to form the gel, but if enough starch is extracted it could possibly work. Potato starch water is great for thickening sauces and broths.
@@HomeChefSeattle it did actually work. I just boiled one russet in minimal water, use the handheld mixer to agitate the starches, then filtered it and blend it with the agar and water mix.
They can be eaten without frying but will have a firmer texture and not so crispy. In that case is best to spread them out as thin as possible before dehydrating.

The dried chips can be saved for a good while in an airtight container away from humidity before frying. Once fried it is best to consume soon.

It is possible, but without frying they are firmer and harder in texture so make sure to make them really thin.
