- Recipes of India - Raita - Himalayan style
Food and people are the two integral parts of any travel. This raita is from one of the grandma’s of the Rupin- Supin region in Uttarakhand. I first ate this on a trek on a hot summer afternoon. The local kakdi and the pahari herb jakhiya, meet the curd, to turn into a crunchy, simple but exotic accompaniment to a roti-sabzi or dal khichdi or pulao.
Take some dahi and beat it a bit to turn it into semi solid. Take a little mustard oil and add it to the beaten curd. Then chop the cucumber into tiny pieces or grate it and add it to the mixture. Pound the jakhiya into a paste, heat a Kadhai with some oil (mustard if you want the authentic taste), add the jakhiya paste, some pieces of green chilli and salt. Keep the flame low so that the tadka doesn’t burn. Add the tadka to the beaten curd mixture, your raita is ready and the Kumaoni grandma is smiling.
Cucumber is a summer - monsoon produce, it cools the body down, keeps acne, bloating and constipation at bay. Jakhiya is a wild Himalayan herb, it’s used in the cuisine to add a crunch and celebrated for its many medicinal properties.
Cucumber has the fine distinction of being a vegetable that is allowed in fasts and jakhiya tadka goes well with aloo, Arbi, Suran, colocasia leaves.
1st recipe from the year long project.

Great receipe
I am from uttarakhand. We grind the mustard seeds and put it in raita along with jeera powder to bring that classic taste.Awsome summer side dish.
Yes same here..we are from Gujrat..we never give tadka to raita...and that grind mustard tastes heaven in raita...
Beautiful mango colour shirt. Very apt for this season.
Thanks for promoting jakhya ,we used it regularly in our kitchen, from Uttaranchal👏
What's the name of Jaika in English.
Jakhya? English name
@@shrideviraokodati6660 no, it's garhwali name , used for tempering in Garhwal himalayas dishes.
@@shrideviraokodati6660 no English name dear, it's a local herb only found in Himalayan region of Nepal,Uttarakhand, Himachal
@@shrideviraokodati6660 in english it's called Cleome viscosa seeds
I just loved it.. it's look really yummy ...I am gujrati and my mom make little similar to this but my one is with normal cucumber which is available whole year. Grate cucumber and add in curd and add some roasted crushed ground nut , fine chopped green chili, fine chopped fresh coriander, roasted jeera powder, salt and some pomegranate seeds, little sugar and keep this in fridge for 15 min so and just eat with anything.
She's so adorable with cucumber peels on her face. Best nutritionist❤
Adding mustard oil is something new I am definitely going to try this. Thank u ma'am
Oh you are truly a great grand mom love you love your tips, recipes thanks for starting this new recipes topic💕👍😘🙏👌
You are so adorable with those dishes and spatulas mixing those ingredients.. Clearly visible that its not your forte to be a typical ‘cooking person’ but to ensure goodness of food and tradition reaches everyone you are trying to enjoy cooking as well.. Loved this unusual cookery show..❤️❤️
Its so good to see you relishing dishes from Uttarakhand, especially using our very own and favourite jakhya
Never heard of this jhakya..is it a,spice ? Can make it only if its available online 😙
What is jhakiya
jakhya and rai are same or different?
Jakhya is used for tadka actually. More like rai but very different in taste. It has an aroma which makes the dish special
I am ur big fan! Appreciate your sharing recipes with great explanation of local food etc . Thanks 🙏
Such a grounded lady with so much knowledge
Loved your beauty tip..you do have great complexion :) The Kaccha oil tip made the difference. Always wondered why mine was not the same.
Yaha milti h ye wali kakdi, summer season me, mujhe bahut pasand h, I used to cut the edges of both types of cucumbers, rub it then cut with the skin. Curd is my all time favorite, raita is the easiest thing to make. Thank you ❤for this yummy😋🤤 cool recipe🥰
You always keep things very interesting. Your raita recipe looks delicious. I will try it. Keep up the good work. Love from Pakistan🇵🇰

Good morning from Belgium. Cannot miss Rujuta's recipe of India.
Thanks for the recipe & i love your sense of humor & language that makes it so interesting to watch & smile.
Always loved your videos, and eagerly waiting for the next one.
Jhakjiya also tastes great with baingan and cabbage sabji. Specially in cabbage it adds crunch....we uttarakhandis grind राई it's a cousin of mustard smaller in size and use it for raita. Let it sit as the flavour gets stronger with time.
Is it yellow mustard? Jhakjiya means?
@@RituJoyee no it is black in color and different from mustard.
@@RituJoyee no it is different. It is black and much smaller than mustard.
you aren't a Amma you are affordable love u always ❤

You are a versatile person. Whatever you do, will be excellent👍
I’m biggggg fan of yours and follows all your instructions.. now this khamang kakadi (maharashtrian name fro this raita) is also my all time favourite
This is not khamanga kakdi. Khamanga kakdi does not have mustard oil, jakhiya and curds.
I normally don't peel off the skin, but if I do than I make a face pack out of it. It is so nice to the skin feels fresh and hydrated. 😁
شکریہ 🙏 Thanks for suggesting to eat at Iftars

Love you ❤️Rujuta God bless you 🙏
Mam ap bhut cute ho sachi love ❤ you mam apk tips ne meri jindagi badal di hai sach me
Thanks. Great dear. Love you. From Kerala
Thank you for starting this series.
Instead of mustard oil we can add mustard seeds powder ...it will bring the same taste
I also add mustard seeds powder aur vah bhi ताजा-ताजा kutta hua 🤗
Instead of anything you can add anything since its a raita. Point here is we need to stick to original recipes and not substitute with other things since that's where taste and health lies.
@@pank-7423 mustard seeds powder can be more healthy than that of mustard oil
In original recipe mustard seeds is used not mustard oil ( oil is used only when mustard seed is not available)..Seeds give more sharp taste ..Its not a substitute of oil ...This raita is a delicacy of kumaon uttrakhand .
@@dishapandey8809 In that case what she showed here is not authentic and original. Your point is correct if mustard seeds are originally used. Rujuta stands corrected here!
Thanks dear for sharing tip n tricks healthy recipe
Thank you for sharing this recipe
Even my granny used to rub cucumber top to cucumber so that it doesn't get bitter
I am from uttarakhand ,but i live in plains so we don't use jakhya,it's primarily a hill spice ...but after watching this definitely going to give this a try❤️
Mam, you are very humble
Adding raw mustard oil is something new I will try it
Please mention who avoided and why❓always with you rujuta.
Thank you ma'am. Please keep sharing more recipes
Main apke bataye 5 morning stretches roj karti hun, uthne ke ekdam baad ke. Mujhe pasand hain vo.
'Rai'is used to make raita that's why it's called raita lauki, kheera, kachnaar ke phool etc kisi bhi raita main traditionally rai ka powder use kiya jata hai
Mam the recipe is superb but if u could provide purchase links for the products shown in the video to atleast to those products which is available on Amazon or any sites or the places where u think is available and or show the products in the video it would be really be very much helpful to everyone. Because there are so many so called organic brands available we are really confused as in which to purchase. We would like to use the same items as u consume 😃and grow and be beautiful as u are from inside and outside. Please be kind enough to accept this request.
Ma'am I just love your videos 👌 💞👌
It is best way to make raita with kakdi 👌
My grand mother always used to put mustard poder and banana and curd raita
Jakhya is ❤️...uttrakhand ☺️☺️
