Tip: Beat the egg whites + baking powder first so you can then beat the eggs + cream cheese without having to clean the beaters. Transfer of any fat won't allow the egg whites to stiffen. (Learned the hard way.)

If you don't mind it coming out flat so you can use it like a wrap, try it this way. Put ALL of the ingredients in one bowl and blend together with a mixer. Pour onto the parchment paper. Bake. Cut to whatever size you'd like with a pizza cutter. Now you have soft flatbread you can use for wraps, or go Mexican with them and make soft tacos or tortillas. The taste is the same. The nutritional value is the same. They're just not as thick as if you follow this recipe to the letter and I think they're more versatile.

A few mornings I didn't have time to eat, but I grabbed a couple pieces of Cloud Bread, a slice of cheese, and a handful of spinach for a quick sandwich. Delicious and filling!

It's nice to take the grandkids out for a trip and then bring the grandkids back so the grandkids can enjoy some delicious cloud bread. The grandkids often ask me when I am next making some cloud bread for the grandkids and if the grandkids can help me make some bread to share with the grandkids. It's so nice to make, share and eat cloud bread with the grandkids. It's so nice to have grandkids like we do, and share and make recipes with the grandkids. (Apologies ahead of time that this is a little long, but its shorter than the books I read on the subject. 😛) For those beating themselves up when they get carb cravings:
Folks, WHY YOU NEED "CERTAIN" CARBS, or you'll die: People die (all the way dead) without stem cells, and only carbs can make them. Think about that. Long and hard. No other food group can make them. I find that few people know that, just as I didn't know that until I was shaken out of my deep slumber during severe illness. DON'T BEAT YOURSELF UP FOR CRAVING CARBS (but don't unnecessarily fatten your laurels, either), just beat yourself up if you eat a weeks worth of carbs in 30 munutes after intoxicating exposure the pastry chef. As you avoid carbs too much, though, you will crave even more (yes) of the one* carb* (glucose) that can make the other "eight essential" ones that can then make your stem cells, or in other words, your "survival" cells. That is the sentence to read over and over. When someone needs a bone marrow transplant, it's the stem cells in the marrow that they are after, because stem cells are immunity and regeneration, and only carbs make stem cells. Typically, bone marrow is needed if essential glycos aren't being eaten by the patient. Your blood count if stem cells can be almost zero one fine Monday, and after just one week of eating all eight essential glycos, your new stem cell blood count can be trillions--that is lab-tested. Good news, though, you can stop your body from craving EXCESS carbs that convert to excess fat by eating the right amount of essential* carbs, of which there are eight. Your hypothalamus (the Master metabolizer of your body) can then give your body directives because it needs these eight glyco-nutrients (carbs, saccharides) to do so. If you are missing even one* of the eight, it will mis-message and misdirect instructions to your body. The glycos are like braille letters that stick to the outsides of cells. They "read" each other braille-style by bumping into each other, discovering the needs if the body. If they are missing a "letter" of this "alphabet", they will give and receive the wrong messages and delegations, causing vicious cycle responses and/or neglecting real needs if the body. They deal with unknowns unpredictably, often packaging up and storing what they cannot give messaging to break down and exit the body. That causes both disease and autoimmunity, not to mention, cysts, tumors, stones, lumps, rashes and odd symptoms. The Mannatech company is one good source for more understanding on this (I am not being paid by them). MIT called the eight essential carbs "the missing food group". But actually, doctors knew about them around the 1900's, having 100% success in curing any cancers of which they applied treatment. These "glyconutruents" they used are in the back of the PDR still, but do you think doctors have been taught about them? I can only immunologists know if them, even if a little. Measuring carbs during weight loss according to Dr. Barry Sears of The Zone (note, though, that Dr. Sear wrote his book before the re-exposure of essential glucos)... To lose weight best, find out what your body type's protein gram need is per meal (The zone has a good formula). Your carb need will be 1/3 more grams than that, for instance, if you need 15 gr protein per 5 hours, then you eat 20 gr carbs, three parts protein to four parts carbs in meal. 3:4. In 5 hours, you will be hungry and crave carbs again (WHAT!?). That's ok, TIP: just eat your protein FIRST, AND IT WILL STOP YOUR EXCESS CARB CRAVING. But then, you must MAKE yourself eat your carbs (...not the donut variety). Healthy ones would be wiser. Get your protein into your bloodstream/stomach BEFORE eating your carbs (-Dr. Barry Sears), because interestingly, protein STABILIZES blood sugar. Shocking. There is an excess of people out there who think diabetes is not curable. 😉 FDA, I'm not saying it is, but I can know my own results, and others' results. This is how many have overcome Type 2 diabetes, according to them, and heart disease and weight loss, all three at the same time. I didn't claim it was a cure, I just said people and their doctors have reported their diabetic symptoms gone for good. I would courageously add a pinch of carbs to this "bread", making it the ideal ratio you personally need, depending upon what you put inside for sandwich filling. For those putting a burger inside, you can add a bit of flour to the bread recipe. For those wanting a peanut butter and jelly, leave the recipe zero-carb as it is. You and I overcome diseases and autoimmunity by getting our essential carbs. You can try and do as I did and search "foods containing the eight essential gluconutrients, lists". These glycos allow the hypothalamus to give up their tight hold on your fat. Only two of these glycos are caloric! (meaning, the other six are not fat conversion-capable). That means if you eat the six that aren't caloric (it's awesome that they're zero calorie, isn't it?(!), you will stop OVER-craving the two that ARE caloric, glucose and galactose. Those two can make within tour body if you aren't eating those six, but only with a great strain, and not efficiently nor sufficiently. Some essential carbs are right in your pantries already. Cloud Bread is great, and you'll lose weight going no carb, but then afterward you WILL crave carbs like crazy and overeat glucose impulsively again--NOT BECAUSE YOU WE WEAK (!), but because your body needs those carbs in order to replenish your life saving STEM cells. YOU AREN'T WEAK, YOU ARE CRAVING REPLENISHING YOUR IMMUNE SYSTEM TOOLS, STEM CELL-BUILDING GLYCOS. Note: You do not need to OVEReat carbs in order to get sufficient stem cells. Here is one surprise you'll like knowing about: Miracle Noodles (no, I don't sell them). They are made of an essential carb called mannose* (that's also the miraculous ingredient in fresh aloe (not the juiced and packaged stuff, which usually has damaged mannose). These CALORIE FREE noodles are made of konjac root, also called glucomannon if you buy it in supplement form (I don't mean to sound like an ad, I am just wishing this info out there when I needed it years ago). Zero calories are fun, to a degree, just don't overdo it. I really think this Cloud Bread is a bundle of fun and a bit of relief when you need it. I still think though, that I'd like to see a recipe that gives you that yeast flavor with that grain-bakery smell. Wonder if that can be done? To you recipe creators, MY CHALLENGE IS ON! -MTSites'17

Vegetables and fruits are enough to cover your carb needs. I think it's really stupid how many people look down on low carb diets. They equate low carb with no carb, which is definitely not the case. A keto diet essentially erases sugar and wheat from your diet, but it doesn't erase natural carbs found in fruits, veggies, and other things that you can eat whilst on the diet. A keto diet is also the one diet that I've found I wouldn't have to change my whole lifestyle to fit around. Most of the foods you can eat, you already do, just substitute the rice with cauliflower or the bread with oopsie bread or low car tortillas or pasta with spaghetti squash.

Alyssia, come here girlfriend we need to talk....you are quickly becoming the UA-cam love of my life. The watermelon juice, the flavored waters and now this bread. I started the Atkins diet two weeks ago and the no bread is KILLING me. I am the type where I would get a slice of bread put some honey butter on it and then hit the door on my way to school. Now since I started the diet I have to get up early and actually cook!! Never just for myself by the way because no matter how early I wake up the vultures (people in my house) smell the food and come sniffing around. So instead of me making one order of eggs it's 9 orders of eggs and my dad is not satisfied if there isn't any meat in the dish. I am going to go to the store when I get off work get some cream cheese and try this recipe, because if this is a win I am going to be making this on a daily basis... You could make herb bread by speading basal paste on it, or make it a pizza base, it's just a bit bendy that's all :) I'm on keto and not a big fan of cauliflower, although if you shred cauliflower enough it isn't too bad for pizza.

I made these exactly as the video instructed, but they weren't quite as fluffy as you would have wanted. This recipe is far better than the traditional keto bread recipe. And also, you need at least 20 to 25 minutes if you're going to cook these at 300°. Probably a higher temperature would be recommended as well. But they went well in place of bread as far as sandwiches go. I will definitely make these again-- Next time I think I'll try adding some yeast to make them rise a bit more and give them more of a bread-like flavor.
