MY SUBSTITUTIONS:
1. I sifted the almond flour
2. 1 tsp unflavored gelatin in place of xanthan gum
3. I used Truvia granular in place of Swerve (3/4 cup)
4. I used vanilla flavoring in place of vanilla extract
5. For the glaze I used 1 1/2 TB of lemon juice instead of 4 TB.

No need to hurt yourself with the keto diet. It is just a matter of calories in, calories out. Following a structured and balanced diet like the Agoge diet helps a great deal though.
I'm not a strict keto person. Actually I'm more careful about the carb count in my foods because I am a diabetic.
I've never heard of the Agoge diet.

We eat keto because of diabetic blood sugar and insulin resistance. Cals in cals out doesn’t work for menopausal women, hormones turn that method (cals in cals out) on its head and many older women can’t understand how they eat low fat and do gym, and still don’t lose weight. It used to work when they were young.
It’s because the universal advised diet of low fat just means high carb, but they don’t tell you that. High carb is the worst macro for older women, many of us become prediabetic and diabetic at menopause, and many don’t discover it for years. There is a diabetes epidemic because of people eating low fat high carb for the past 60-70 yrs.

Just made this and it’s the best batch of keto zucchini bread I have made so far. I followed the original recipe. I have tried several different recipes and this will be the base for all zucchini bread going forward. I added 2 tablespoons of poppy seeds to this batch and YUM! Next batch will have cinnamon, cardamom, butterscotch chips and orange zest instead of lemon.

Loved your recipes so much . I changed it again kept the two cups of almond flower ,and one up gluten free flour, added cinnamon,three bananas,sugar free chocolate chips, and one half cup sour cream . I doubled the rest of your ingredients ,left out the zucchini and made two yummy loaves. Thanks so much .also I tried it with pumpkin it definitely needed more moisture next time I will make sure to add sour cream or apple sauce to that one , I thought you might like to try theses thanks again

Oh yum ... That looks delicious! I never knew that Swerve made a confectioners sugar, I will have to check that out. This is definitely added to my "to make" list. I've had regular zucchini bread before but never a lemon zucchini bread ... Yummy!
I think Swerve just came out with it this year. It is not in all on my stores even now.

If you have a nutribullet or something like it you can turn any sweetener into powder in seconds.
They also make brown sugar as well.

I like using parchment paper because it preserves the pan. You can lift the cake out of the pan and there is minimal clean up. I am allergic to coconut and I am wondering what other kind of oil you can use.
Honestly I think vegetable oil or avacado oil would work just fine 🙂
I used avocado oil and it turned out well.
Do you think we can cook this in the Dash bundt pan maker? It's so hot here in Central California and I'm wondering if this would stick? If I can I'm ordering that bundt maker right now. :)

Sandra I have looked through your videos but I think it was on another channel where you did a video about the overhead camera that you had made for your table could you give me a link to it if you still have it we were sitting here looking at this video and Bobbie was saying something about the table top and I told her wait a minute she's got a video that shows more of the table and I knew it was in that video.

I don't know the calories but you can google "nutritional facts calculator " and find a free online calculator that will calculate it for you 🙂

I wish I could be of some help but unfortunately I've never tried it with coconut flour.
Be Aware she says "1/2 cup" of xanthan gum. It is 1/2 teaspoon!!!!!! Don't follow her on this video ....follow the recipe she posts. OMG
I mispoke and said cup instead of tsp on the xanthum gum but I also clarified that I was using unflavored gelatin instead of the xantham gum. Using the unflavored gelatin in place of the xantham gum worked perfectly in this recipe and I gave the accurate measurement for the unflavored gelatin. I have all the details listed in the description box below the video. People make mistakes, it happens.
I love this I didn’t see a sugar measurement so I put 3/4 of monk fruit. It tasted great
