    I’ve made this cake a couple of times and I have to say, it turned out excellent. I used the measurements as listed in the recipe, however; I made a couple of small alterations. Firstly, instead of using melted butter, I instead creamed room temperature butter with the xylitol/erythritol sweetener blend for approximately 5 minutes until it was light and fluffy. I also substituted the lemon extract with a tablespoon of lemon zest, as I didn’t have any extract and it had perfect lemon flavor. Because I wanted to use allulose for the glaze, as I prefer the taste, I opted to make a glaze that did not require to be heated. Instead, I used a half cup of allulose, 1 tbsp lemon juice and two teaspoons of keto milk ( I use Fairlife). Stir until you achieve a glaze consistency. Note it will be stodgy at first but will eventually thin out with stirring. Drizzle when the cake is warm. The best lemon pound cake I have ever made!     Being someone who also doesn’t have the patience for all the steps to be done as a recipe calls for - I would probably poke holes in the cake while still warm in the loaf pan, and then pour over the warm runny icing and let it soak in and cool before removing it from the pan. It’s just me here, and I have no problem eating it with a spoon directly from the pan if the icing makes it not come out easily after cooling. =) I so, so miss Starbucks Lemon Loaf, so thank you for coming up with this. 👍🏻

      I was thinking the same thing when Victoria was saying to let it cool completely..."Just poke some holes in the cake and pour the glaze over it"! That's how I used to do my honey bun cake.

    Keto is so forgiving that you can indulge, and without guilt jump right back on because it is not like a low fat diet where you do good for two weeks and when you indulge you lose all the work you put into those two weeks, and that can crush your spirit and motivation to even try again!

    Hubby was diagnosed with Type 2 diabetes I'll never know HOW and it's caused him to go from 200lbs solid muscle to 112lbs of skin and bones. I've been making him home made egg nog, your keto bread and started making his favorite Hungarian Cherry Cake with your flour mix, plus many other things. He said the bread and cake is better than what his Hungarian Grandpa used to make and he was a professional baker 😊😊😊 Now I'm definitely going to have to try this one 🤗

    Xylitol is absolutely lethal for dogs in any amount! The amount used in this recipe, even the crumbs would likely kill a dog. If you have a dog, best to keep Xylitol out of your house.

    I can't WAIT to make this!!! Question_....at some point can you do a regular pound cake I don't remember you doing one also the new flour (Almond, Bamboo, egg-white powder Xanthan and psyllium) Measures differently I noticed with the pound cake (grams) I know your busy but I have trouble making older stuff I am hoping that some updates or conversions are in the making or should we just do the newer recipes with the new flour...?     When I baked the cake this morning the batter didn’t have a good rise and the center fell when it cooled. For this kind of keto cake recipe, I usually whip the egg whites separately and then fold them in after everything else is mixed. I’ll try that next time.

      You can do it using her NSKF 2.0 but instead using bamboo fiber, use oat fiber, and add also pumkin spice and cinnamon to the mix. (and the carrot obviously 😅) and it's going to taste wonderful

    I love your recipes but I wish they contained the nutritional values- I’ve tried multiple app for calculating the carbs etc. but I have a lot of brain fog due to dxs and I can’t ever figure them out. Thank you and God bless you and your family. Pray for you

    Did I miss a video somewhere along the way where you did another flour measurement revision? Last thing I heard you say was 70g per cup, but did the math on this one and came up with 82g per cup.

    Thank you for this I have been meaning to ask if you could make a 7UP type of pound cake & your post came in for this cake...would a bundt pan work out for this recipe?

      Might work but it will be small cause the batter isn’t quite as much as I would want for using a Bundt cake pan. However, if u have a small Bundt pan that would be best 👍🏼

    Reading through the recipe, you say to use "Victoria's Keto Flour" (which has Psyllium Husk)...Can we use your New Standard Keto 2.0 for this recipe WITHOUT the Psyllium Husk or can we substitute the Psyllium Husk?

      Yes but it will be far darker

      It would be pretty dark. I don' t use Allulose in most of my baking because it gets too dark for me and the tasted isn't right.

    Your video calls for 1 cup sweetener your printable calls for 1 cup powdered sweetener, which is the correct one to use? Love all your new flour recipes!

      I just made this cake today. I used granulated sweetener for the cake / powdered in the icing. Worked out fine. My icing was very thick, not a glaze at all so next time I’ll try using a smaller amount of sweetener. 😊 Very moist cake🎉

    I just made this and when I took it out it fell. I don't know what happened. I did however use your new standard keto flour 2.0. Is that why it fell?

      @@victoriasketokitchen I appreciate all you do and you are my go to channel for keto recipes but I sill have questions about the flour. I thought cookies, cakes, brownies etc.. could be made with the Keto Flour 2.0 yet this pound cake is made with your VKF which I understand to be used with gluten free bread type recipes. Expense wise I find it hard to have 2 types of flour ready for use. Is it possible to use your 2.0 and what else would need to be added? I keep watching the video where you explain the use of your flours BUT it does not answer this question unless I totally missed it.

    No one asked, but xylitol gives me severe stomach issues! Actually, all the sugar alcohols ending in “itol” bother me.

      So sorry. You know my first try with xylitol made me sick too. I tried it “different brand” 3 years later after being keto for those years and didn’t have any problems. Could have needed the length of time before adjusting to it

    That lemon cake looked delish, I love anything lemon sweet and savoy. My only concern is the xylitol sweetener, it's my understanding very deadly for dogs and having 2 fur babies as much I avoid dropping any food accidents do happen. My babies love to hang out in the kitchen when I'm cooking just waiting for some food to "rain" and race to get it lol lol. It also makes me think if xylitol is dangerous for pets how safe is it for humans...just sayin. Anyway Victoria thanks for all your great recipes God Bless.
