Wife (Cathy) : Just wanted to share that when I make a batch of this pasta dough - I make 30g nests of noodles (serving size) on parchment line cookie sheet which I FREEZE for 30 minutes and then move into FREEZER plastic bags. ( Bag holds 6-8 noodle nests) they FREEZE well and when needed go from FREEZER directly into boiling water … just adjust your cook time a bit. Very convenient.
I just tried this recipe and method for spaghetti tonight, my diabetic husband has been wanting pasta so badly but is carb sensitive. Victoria you just gave him the best Christmas present ever. We have tried so many recipes with aweful results. UNTIL NOW. no folks its still not like the real thing, but this is as close as you will find anywhere. We are highly impressed !!! Thank you Victoria you just helped in making our life with a little bit more promise for a better future while I watch my husband enjoy his taste test I was about in tears. I just made a batch of your pasta. I’ve been making a keto “pasta” using eggs, cream cheese and xanthan gum. It was ok, but I always felt it was a bit foam like in consistency, and I missed the toothiness of pasta. Yours is very good! It tasted more like the pasta I left behind. Almost reminded me of whole wheat pasta in texture. I made a simple cream cheese sauce and mixed it up. Holds up nice. Another excellent recipe! Oh, I didn’t use my pasta maker, I simply rolled it out, and used my cutter to make noodles. Thanks again!

Been making Victoria's recipes since I found her UA-cam channel about 6 months ago. I just found this pasta recipe and made it yesterday! It was my first time and I made it too dry. The noodles broke up in the water. It ended up being only about 1" long or a little less, but with my homemade spaghetti sauce, it worked fine and was so good! It is GREAT to have keto pasta!!! Thank you Victoria!!! My non-keto husband, also said it was good too!!! ***I had an idea when the noodles broke up so small, that I will try it for a rice substitute next time I make a stir fry! :)
My wife and I do, what we call, old fashion noodles. Roll out your dough as you like, roll it up in a log and slice the noodles as wide or as narrow as you like. Break the noodles down about half length and toss in boiling water. We like this for beef and noodles, and now my wife is excited to try your recipes for her noodles as we've never been able to find one that works right or tastes that good. I made this pasta recipe with your recent keto flour (w.w. einkorn flour, oat fiber, egg white protein, Xanthan gum and ground psyllium husk. And it was dry and tough. Have you made pasta with the new version of your flour Victoria?
I have made pasta before doing keto. Victoria, I would like to share a few hints to help. Make the dough even before running through pasta machine. All of pasta will stay on the pasta drying rack. Don't really need the drying rack. You can just put in a circle until ready to cook. I wanted to share because you have so graciously share your knowledge with us.
Update!!!! I made the pasta in my Phillips pasta maker. I only used the extruder and made the dough in my kitchen aid just like Victoria. Omg - it came out perfect!!! I'm so excited that this recipe worked!!! I made beautiful rigatoni, they hold up great in the soda water . In the past I had recipes that would fall apart in the cooking process. This is perfectly stable. I did go a little longer on the cooking time, since rigatoni are a little heavier pasta. I'm up to 5 min. Cooking time. Just like Victoria said, this is Victoria's Kitchen Pasta, and it's great for us doing low carb or keto. It reminds me of a egg wheat pasta. Delicious!!! ☺️❤️☺️
@@d56alpine just use the extruder function, I used varies recipes in my Phillips and the water flour ratio never seemed to work. Just make the dough in a mixer...☺️❤️☺️
I have a Phillips pasta maker that I had given up on. I’m not quite sure how you use the extruder only function? Do you make the dough the same as Victoria and then throw it in the machine? It’s been a long while since I’ve used this machine so, hopefully, I can figure out how to use the extruder only function.
@@sandraslater1367 yes, make the dough and place it in the pasta machine. When u turn it on push the extruder button on the left from automatic to manual m...it will push the dough out. If the dough just spins around, open the machine and put the dough towards the extruder...the pasta disk. I did that a few times, but it was no big deal...hope this helps ..☺️❤️☺️

Hello Victoria, I made the pasta recipe and used my pasta press attachment making macaroni. I used Paula Deens Mac and cheese recipe. It was wonderful eating Mac and cheese again. It reheated in microwave very well. It is delicious. The pasta does taste good with the cheese. I think next time I may try adding a small amount of powder cheese to pasta recipe. Yay! Now I have a reason to purchase the attachment. I'm happy about the recipe, but also love that there's a "how to" instructional for the attachment. There's other keto noodle recipes (not half as good as yours, I'm sure) where they have to roll out the dough and slice the noodles by hand. This is great! Thank you!

That is the only flaw (from what I can tell) in an otherwise perfect presentation. Lovely. I think you are giving me the motivation to get these attachments for my Kitchenaid mixer. Pasta is easy storable food that has been off my diet for years. Think I will change that - so much can be done with your keto flours that this is going to be a real adventure.
I want to say I love your channel I've been doing low carb or keto since 2017 and many people go on the program because they thought it was a fact for me it really didn't help me. However due to pressure and not being focused I end up leaving the lifestyle behind but it really helped me that and the great of Grace of the Lord. But I see my more people just gave it for fats they created UA-cam channels just to get yours but then I'm leaving lifestyle. I have been waiting for this type of video for some time. As I am writing this, I made my first Victoria's pizza keto crust and will be covering it with toppings for dinner. It was pre baked and then goes into the oven for final cooking. I will let you know how this turns out. As far as the pasta goes, I have a pasta extrusion machine that I have not used in nearly 49 years so I will give your pasta recipe a go also next week.

Definitely going to try this. I made some other youtuber's recipe tonight. It was so bad, I threw it out in the yard, hoping at least the animals will eat it. That was an expensive mistake.
This is the closest to "regular" pasta I've ever had. The key I think is getting the pasta to the right thin-ness (so I definitely hope to get a pasta press) without it being too thin, and I also dehydrated my pasta for a fairly long time, about seven hours (with an hour at 145°F, then I reduced the temp. So I may even try a 12 hour dehydrating time, if I'm wanting something I can store for quite awhile). I like this better than any of the other ones I've tried, including the lupin flour pasta I tried, this is the best.

Hey! Something to try here. I know you use xanthan gum in your flour recipe. When we make pasta dough we knead the dough until the gluten bonds stop working. So making a "pasta" version of your dough recipe without the xanthan gum might result in a much less sticky experience! Just an idea :) Thanks for the recipe!
This is exciting. It sounds like it would taste like egg noodles or rivvels (I don't know how to spell it). I have a pasta maker that I never had a chance to play with before I turned keto. Now I can use it. I tried making your buns with the perfected flour but it didn't work because I used cups instead of weighing it. The batteries in my scale were dead. But now I have batteries so I'm looking forward to making all the things.

Yes!!!! It worked. I made the pasta dough in my mixer then transfered it in my Phillips pasta maker and just used the extruder function. I used my rigatoni disk and it came out perfect! I cooked the rigatoni for 5 minutes in baking soda water. Perfect!!! I will increase the salt in the recipe to 1 tsp for more flavor.
Struggling with this one…. My pasta felt very grainy/gritty. Would it make sense to blend the flour more? Or sift it? My other thought/question is if the pecan flour is less gritty than the extra fine blanched almond flour I used? Flavor was good though, much better than the lupin flour pasta I’ve made. Both recipes used almond flour and that is really what I believe destroys the mouth feel….
This be great to try, but I have to figure out a different way to cut them up because I don't have the nice machine like you do. So I'll just have to practice I guess. 😊

Yay! Now I have a reason to purchase the attachment. I'm happy about the recipe, but also love that there's a "how to" instructional for the attachment. There's other keto noodle recipes (not half as good as yours, I'm sure) where they have to roll out the dough and slice the noodles by hand. This is great! Thank you!

I love your channel and your great positive attitude. Please don't be offended if I encourage you to explore a different microphone system. That is the only flaw (from what I can tell) in an otherwise perfect presentation. I want to say I love your channel I've been doing low carb or keto since 2017 and many people go on the program because they thought it was a fact for me it really didn't help me. However due to pressure and not being focused I end up leaving the lifestyle behind but it really helped me that and the great of Grace of the Lord. But I see my more people just gave it for fats they created UA-cam channels just to get yours but then I'm leaving lifestyle. I have been waiting for this type of video for some time. As I am writing this, I made my first Victoria's pizza keto crust and will be covering it with toppings for dinner. It was pre baked and then goes into the oven for final cooking. I will let you know how this turns out. As far as the pasta goes, I have a pasta extrusion machine that I have not used in nearly 49 years so I will give your pasta recipe a go also next week.
The pizza was delicious. It was a break from the low carb tortilia pizza.

This is the closest to "regular" pasta I've ever had. The key I think is getting the pasta to the right thin-ness (so I definitely hope to get a pasta press) without it being too thin, and I also dehydrated my pasta for a fairly long time, about seven hours (with an hour at 145°F, then I reduced the temp. So I may even try a 12 hour dehydrating time, if I'm wanting something I can store for quite awhile). I like this better than any of the other ones I've tried, including the lupin flour pasta I tried, this is the best.

Hey! Something to try here. I know you use xanthan gum in your flour recipe. When we make pasta dough we knead the dough until the gluten bonds stop working. So making a "pasta" version of your dough recipe without the xanthan gum might result in a much less sticky experience! Just an idea :) Thanks for the recipe!

What is the "My Perfected Keto Flour"?
This is exciting. It sounds like it would taste like egg noodles or rivvels (I don't know how to spell it). I have a pasta maker that I never had a chance to play with before I turned keto. Now I can use it.
I tried making your buns with the perfected flour but it didn't work because I used cups instead of weighing it. The batteries in my scale were dead. But now I have batteries so I'm looking forward to making all the things.

Yes!!!! It worked. I made the pasta dough in my mixer then transfered it in my Phillips pasta maker and just used the extruder function. I used my rigatoni disk and it came out perfect! I cooked the rigatoni for 5 minutes in baking soda water. Perfect!!! I will increase the salt in the recipe to 1 tsp for more flavor.

@@jamiesmith8967 baking soda gives the pasta more texture. I have a dutch oven full off water and put 2 tsp. Of baking soda

Struggling with this one…. My pasta felt very grainy/gritty. Would it make sense to blend the flour more? Or sift it? My other thought/question is if the pecan flour is less gritty than the extra fine blanched almond flour I used? Flavor was good though, much better than the lupin flour pasta I’ve made. Both recipes used almond flour and that is really what I believe destroys the mouth feel….
This be great to try, but I have to figure out a different way to cut them up because I don't have the nice machine like you do. So I'll just have to practice I guess. 😊

It helps the elasticity but these aren’t as elastic as regular noodles due to no gluten

I just bought my wife a new kitchen aid 7 quart pro for Christmas. We are wondering if this pasta attachment is worth it. You are number 1 in your field and have loved everything we have made. What would you recommend. Go for pasta or stear clear of the pasta? Keep up the good work!
