It all depends, if you have a mono recording that your mixing, you use mono plug ins. If you have a stereo recording then you use stereo plug ins. You could use stereo plug ins on a mono recording when you have a send(reverb, delay, so on)
When creating a Bus for an effect or whatever it's always stereo unless you are doing parallel compression then I would use a mono bus, but the thing I think you don't understand about mono and stereo, is that a stereo track is 2 tracks that are recorded with some slight differences I.e an acoustic guitar can have 2 microphones recording and each one aimed a different spot and one mic panned Hard Left and another Hard Right, recording vocals you always use One Mic, so the track is always gonna be mono so always use mono plugins, and a mono signal will sound centered so if you out a mono to stereo plugin it will process the left channel and right channel a bit differently to make it sound like it's wider and recorded as a stereo track with two microphones

One thing about you is, you're complicated, but you're good, you know your craft and settings and plugins. I found that one thing with following your way, it works but it is too much (to much weight). I would love something simple, like it works and that's it, then add what you need to, I don't know if am wrong or right here just expressing a feeling, well done for helping us, :)

Love your tutorials brother. You do a great job of showing tips and tricks that one can use for their own mixing projects. I noticed that you bus the output of the recorded track and on that aux track you placed your delay sends etc. and the aux track was then routed to the master bus/track. Ive seen other mixing engineers applying sends to the recorded track(s) but they bus the vocal recorded track(s) to a vocal, dub, bus. Why did you use this method? is the method a much easier way to do things? is that the way you were taught or taught yourself? Just curious. Everything sounds great, so I am not complaining at all.
Make a seperate channel named delay on the mixer and just send the main vocal chain to it...now you can mess around with the delay channel without altering the main vocal chain. This also works for other things like reverb, saturation, etc.
