    🧑‍🍳 INGREDIENTS:
    Caesar Dressing (this makes extra, but trust me - you’ll use it!)
    • 2 egg yolks
    • 30g dijon mustard
    • 20g anchovies
    • ½ clove garlic
    • 20g cornichons
    • 10g capers
    • 20g apple cider vinegar
    • 5g Worcestershire sauce
    • a few dashes of tabasco, to taste
    • 50g lemon juice
    • 200g grapeseed oil
    • salt and white pepper to taste
    Croutons:
    • 90g stale bread, crust removed
    • 25g extra virgin olive oil
    • 100g apple cider vinegar
    • salt and black pepper to taste
    The Rest:
    • 120g speck, sliced like prosciutto on a meat slicer (ask your butcher)
    • leftover roast chicken, shredded
    • 2 heads of baby cos lettuce, washed and separated into leaves
    • 2 soft-boiled eggs, quartered
    • 50g parmesan cheese, finely grated
    • 6 anchovies, split lengthways
    🧑‍🍳 METHOD:
    Preheat the oven to 160°C.
    To make the Caesar dressing use a stick blender or processor to puree all ingredients except the oil, then gradually pour in the oil while blending to emulsify. Season with salt, white pepper, and, if needed, extra lemon juice to taste.
    For the croutons, tear stale bread into irregular chunks. Toss with olive oil, vinegar, and salt and pepper. Bake at 160°C until deeply golden, about 10 minutes. Turn the oven up to 200°C.
    Arrange the speck slices in a single layer and sandwich them between two flat trays. Bake at 200C for 15-20 minutes or until crispy.
    To make the salad, coat the lettuce leaves and shredded chicken with the caesar dressing and arrange them on a plate. Squeeze some extra dressing on top if you're feeling saucy 😉
    Place the boiled eggs on top, then the croutons, crispy specks, and anchovies. Finish with freshly grated parmesan cheese.
