The Supreme Chicken Caesar Salad with bacon in water trick

- The Caesar Salad - a popular restaurant lunch dish. It’s been adapted a few times from the original which was more of a side dish. Today, we’re going to make it the way I like to eat it - as a main with crispy skin chicken and crispy bacon. I’ve listed the ingredients and recipe below, follow along and make it at home!

Ingredients
Salad
- Chicken breast
- Baby gem lettuce (traditionally done with romaine lettuce)
- French stick
- Streaky bacon
- Eggs
- Parmesan cheese
- Room temp water
Dressing
- 2 egg yolk
- Grated parmesan (around 20g)
- 3 anchovies
- 1 heaped tsp Dijon mustard
- Worcestershire sauce
- 100ml olive oil
- Juice of half a lemon
- 1 clove garlic, finely grated
- 3 turns of the pepper grinder
Prep your proteins and croutons
1. Fill a small saucepan with water and place over high heat to boil (this is for your eggs) so it’s ready to go for step 5.
2. Then, start with a cold pan with some olive oil on the bottom. Turn the heat on.
3. Season your chicken breast with salt and place it skin-side down in the oil. Let the pan come up to temperature. Once it comes up to temperature, turn the heat down to low so we render the fat out slowly to get a crispy skin.
4. In another pan on the heat, add your bacon and a little bit of water (room temp).
5. Add your eggs to the (just) boiling water you prepped in the first step. Timer on for 6 minutes. Once they’re done, run under some cold water so they stop cooking.
6. Check the bacon and if the fat has rendered, flip it over to cook the other side. Flip again, just to get some extra colour on both sides. Remove from pan onto a plate with a paper towel.
7. Check your chicken and if it’s golden on the skin side, turn over. Check the temperature. Now, you can finish your chicken in the oven or in the pan depending on where the temperature is at. My chicken was only at 38°c so I finished it in the oven for 7-8 minutes at 180°c.
8. Next, task your french stick and slice about 1cm thick. Give them a little drizzle of olive oil and season with salt. Place in a 180°c oven for 10 minutes.
Dressing
1. Add 2 egg yolks to a bowl, followed by 3 anchovies and smashed them up with a fork so you don’t get large lumps.
2. Add a heaped tsp of Dijon mustard, grated parmesan (around 20g), couple dashes of Worcestershire sauce, a small amount of grated garlic (optional), pepper and give it a mix.
3. As you’re mixing, pour in the oil one quarter at a time and mix until homogenous before adding the next amount of oil.
4. Finish with a squeeze of lemon juice and check the seasoning at the end.
Make your salad
1. Carve your chicken.
2. In the same bowl as your dressing, add the washed lettuce and mix.
3. Arrange the lettuce in a serving bowl, followed by the croutons, bacon (broken. up), egg (chopped in half) seasoned in salt, chicken and one last shaving of parmesan.

Yes, they use garlic in the original dressing but use lime. Still a hotel there in Mexico and still make it table side. Awesome channel, Andy! Love it!

Looks great! I do mine very similar, but I start the croutons in the pan after cooking the chicken in the fat before I put the croutons in the oven.

Found you from a short making this dish. Love it. Curious, am I the only person who likes tomatoes added to my Caesar salad? I always add it. When I do the croutons, I heat the oil with a few cloves of garlic in it first before putting the oil over the bread. Perfection!
I was watching another video and saw this and had to watch. When you cook in that restaurant setting, where is that. It has a neat set up. Restaurants have some of the coolest kitchen toys. Not sure why seeing you cook so much in cast iron at that restaurant surprises me. At home yes. For something so simple it is hard to find a good Caesar salad. Appreciate the video.

I agree. When a good quality chicken breast is cooked with care and the skin is 'rendered' well' it is a thing of beauty. Delicate texture, moist and flavourful. Mouth-watering. Paired with all the umami goodness of a crisp, well dressed salad w bacon/parmesan... choice!
That is the most delicious looking Ceasar salad. I might try making that without anchovies tho cos I'm just not a fan. Made your stroganoff last night amazing and I'm not a chef!!! Easy to follow, great to enjoy. Well done mate.

Caesar salad is a favourite, and I also have learned to do mine myself. I never use chicken or egg though, but bacon and fried mushrooms and sometimes half a mozzarella in slices, otherwise pretty identical to Andys. The most important part for me is the dressing. Take no shortcuts and be generous!
I wish my Nana had chickens! Also, I eat raw eggs pretty regularly. Whether it be in cake or cookie batter, or just a raw yolk in some ramen... 38yrs old and never gotten sick from it in my life. Tbf though, if I ever do, I probably will never eat them again! 😂

Def one of the best home cooking channels. Andy you could do something about your lighting for the shots when you're at the bench. In this vid you have the natural light maxing out behind you and it's distracting. Natural light looks nice on the stove shots but we want to see you and your cooking not your overexposed window

Andy, we live in San Diego and have been down to the hotel where the restaurant still
operates. I think Caesar was a waiter at the restaurant who made the salad. There is no raw garlic but anchovies are a must. It’s very simple as you say, and delicious.
Down to Tijuana that is.
There are conflicting stories on who technically “created it”. Max Miller does a history episode about it. ^_^
