Cinnamon Roll Cake | Small Batch | 2-4 people

- It has all the flavor of a cinnamon roll but in cake form. There is no waiting for dough to rise!

Cake:
3/4 cup all purpose flour
pinch of salt
1/4 cup sugar
1 tsp baking powder
1/4 plus 2 Tbsp milk
2 Tbsp beaten egg
1/2 tsp vanilla
2 Tbsp melted butter
Cinnamon Topping:
3 Tbsp softened butter
3 Tbsp brown sugar
1/2 Tbsp flour
1/4 Tbsp cinnamon
Glaze:
1/2 cup powdered sugar
1 Tbsp milk
1/4 tsp vanilla
Directions:
Preheat oven to 350 degrees F.
Grease a small 3 cup baking dish and set aside.
In a medium size bowl combine all the cake ingredients in the order listed. Do not use the whole egg, use only 2 Tbsp of beaten egg.
Pour batter into greased baking dish.
In a small bowl, combine topping ingredients and mix together until well combined and smooth,
Drop topping by small spoonfuls (about 1 tsp ) onto the top of the cake batter.
Take a knife and cut through the mixture, allowing cinnamon to incorporate into the batter. Do it lengthwise and widthwise.
Bake for 24-25 minutes.
While baking mix together the glaze.
In a small bowl combined glaze ingredients and stir until smooth and a nice glazing/drizzling consistency.
Remove cake from oven and allow to cool partially before adding glaze otherwise the glaze will melt into the cake.
Drizzle glaze over the top and enjoy!

I love these. I live alone and these are great portion sizes. I get enough for a couple days, and enough to freeze so there's a bit of variety in the freezer.
Best bit is if I want a larger portion if I have more people, i just double or triple the recipe.

What size baking dish are you using?
It is a 3 cup baking dish and measures about 4 1/2 by 5 1/2

Could I use self-rising flour? I bought some for biscuits and I have a lot left over that I need to use up.

Can you use the egg whites of one egg instead of two tablespoons of one beaten egg?
I have never tried it
Can you please do a small patch gluten free ? Almond flour
If you use cup for cup gluten free flour you could substitute that for the all purpose flour
Does a double batch need to be baked longer?
Yes it will need 5-10 minutes longer

Where do I get a pan that size?? I looked on your website and it states I could use an 8 x 8 pan or a loaf pan but to double the recipe which defeats the purpose of a small batch.
