I totally relate. My husband and I eat very different food choices and different time-frames... so I'm always struggling to cook for only one of us at a time...instead of the two of us. Husband does cook much of the time and also struggles with cooking for one.
Apple galette for one is a great idea. I like to leave the dough in the fridge at least a half hour to allow time for complete hydration and for a better crust texture. Thanks.

Differences, I was using store bought crust, will now use your recipe. Also, I substitute a little brown sugar for part of white sugar & I always freshly grate my nutmeg because flavor is much more intense! ❤❤
I've had good success making Cornish Pasties, sort of vegetable meat stew in a pastry. This recipe looks highly adaptable and much less work. Imagine one w meat, peas & carrot. The 2nd with apple or another fruit. The two of us visit the big city about once a month and bought meals on the road are never as good as home made and always expensive.

Thank you for this. I was roasting vegetables and decided to make myself a dessert. I cut the sugar in crust and fillung to half a teaspoon and it was the perfect sweetness for me. A delicious recipe and the perfect size so I do not have to restrain myself.

I don’t have ramekins, but do have some small, odd Corningware bakers and some silicone bakers too. Thank you for these small serving recipes, although even if I make regular size batches, I just freeze the excess. But this will be fun. ❤️

hmmm i have red apples so less sugar but also have frozen berries.. the possibilities!. Is there a difference in the galette crust vs pie crust other than the galette is open in the middle? Also, I love Breyers Vanilla. I think like many other food items it was better in the late 60s and 70s. I read Breyers has a claim form and is compensating it's Vanilla Ice Cream customers up to $8 each for false advertising for up to 8 Vanilla Ice Creams purchases from like around 2017 to around 2023.
I have used berries in my galette. The main difference between a galette dough and pie dough is just the shape and structure, ingredients are pretty much the same.
Maybe your apple was too large for the amount of pastry (try eating a couple of slices while assembling:) or your pastry wasn't rolled thinly enough, or maybe a tad too dry so not so flexible?? 👍

I followed the recipe exactly but didn’t have near enough crust to fold up. There was room for only half the apple. I have no idea what went wrong.

You may need to roll your dough out thinner or use less apple if your apple was bigger than mine.
You need to invest in a blender ❤

I like doing things by hand as much as possible. I have a similar pastry blender and it does the job well. Much easier to wash than a blender 👍

À galette is a panke mix that is normally used in Brittany France for Savoury Pancakes. Ham and cheese etc. It can be used for sweet dishes like yours
