    Today I'm going to show you how to make healthy carrot cake.
    This healthy cake recipe is also no-sugar, no flour, and most importantly it is so moist and delicious.

    Here's what I cover in this video:
    First, we're going to make the cake batter. It's simple and quick to make, you just have to combine dry and wet ingredients, and bake it in the oven.
    Carrots work well in desserts, and thanks to the carrots this oatmeal cake is naturally sweet and moist.
    Enjoy this carrot cake for breakfast, snack or even dessert.
    I like to top mine with orange cream cheese frosting. Just mix together 1/2 cup cream cheese, 1 tbsp maple syrup and 3 tbsp orange juice. You will love it with this healthy cake.
    Also you can drizzle it with some honey or melted dark chocolate.

    OATMEAL CARROT CAKE RECIPE
    Ingredients:
    1.5 cups ground oats (or oat flour) (150g)
    1 cup quick oats (90g)
    1 tsp baking powder
    1 tsp baking soda
    2 tsp cinnamon
    2 cups carrot, finely grated (200g)
    2 eggs
    1/2 cup honey (170g)
    1/2 cup melted butter (120g)
    1 cup Greek yogurt (285g)
    1 tsp vanilla
    1/2 cup chopped walnuts (65g)
    Preparation:
    In a bowl, combine wet ingredients, eggs, honey, Greek yogurt, vanilla and melted butter.
    In a separate bowl, grate the carrots and incorporate into the egg mixture.
    In another bowl, combine together the dry ingredients, ground oats, quick oats, baking powder, baking soda and cinnamon. Pour dry ingredients into the wet ingredients, mixing together to combine.
    Pour into prepared baking dish 8 by 8 inch, smooth the top and bake at 350F (180C) degrees for 35 minutes.
    Let it cool completely in the pan, then remove to the cutting board and cut in desired shapes.
    Serve with cream cheese, melted dark chocolate or honey.

    If you switch out honey with calories free sweetener, you'll save 43 calories per piece.

    I made this for my girlfriend and she LOVED it!! Made a cream cheese icing with a bit of powdered sugar, vanilla, and splash of milk and came out perfect.

    Tried this recipe today and my family loved it. I used brown sugar instead and reduced by about 1/4, using 108g and added 5g more yoghurt. Also accidentally forgot to add eggs, however the cake still turned out moist and was sweet enough for us! Thank you very much for this healthy recipe, will definitely be making it again

    This is an amazing recipe and very forgiving. Instead of honey, I used stevia. I recommend 1/3 cup if using stevia. I added raisins. I added one egg and one chia egg because I did not have enough eggs and thinned out the batter with almond milk. It came out very moist and exactly like carrot cake. I made the cream cheese and orange icing and it was perfect. I made them in cupcake tins and it yields 15. I will DEFINITELY make this recipe again and recommend it to everyone.

Can you tell me about it, after you've started to use stevia, does it influence the overall taste of the baked goods?       @@HowToCookSmarter I tried to change to stevia in my coffee, and a friend gave me some dried leaves which i ground. Sorry to say I did not like the taste, but I am willing to try again in cooking, just not in drinks!

    My fam is currently quarantining so I had some free time and luckily had all the ingredients for this recipe and it came out amazing! I made normal carrot cake cupcakes a few weeks ago with white flour and sugar but this was just as good, if not better and it had healthier ingredients in it! My dad doesn’t even rlly like carrot cake but he loved these! I will definitely be making again

    Thank you for putting the measurements in grams in the description, I've never understood the "cup" measurement it seems very relative and inaccurate.

      @rxp56 given baking requires more precision than regular cooking, I like the accuracy of grams as measurement.
      To each their own I suppose.

      I second this. I HATE cup measurements. It's incredibly in accurate and always messes up my final product.

      @@poochyboi I used to hate it too but I also never used it correctly. After buying a kit that contained cups+spoons meant for measuring i never had any issues. As an European I do prefer gram+weighing. But sometimes cups are just far more uncomplicated (especially when it doesn't have to be too precise).

    This turned out pretty good and allows experimentation. I used plant based alternatives, almond milk and dates for sweetener instead of a bunch of honey, but it wasn’t sweet enough. Also (pro tip) it’s cheaper to just buy rolled outs and grind them in a blender than buy oat flower. I might get vegan yogurt and just use turbinado sugar next time and make a vegan cream cheese topping.

    I just made this cake now but into muffins instead for a healthy snack and it's so yummy...thanks sooo much. Really glad I came across your channel. Always looking for healthier recipes but not compromising on flavours. I just started using ground oats to bake with so this will be my new favourite channel. I made some tweaks though because not a fan of so much honey so I replaced it with date paste and substituted butter for canola oil and still came out delicious 😋

    I made this recipe a few days ago but in cupcake form and managed 15 cakes. I didn't have quite enough carrot so added some apple, and sultanas because I like them, plus cinnamon gives me heartburn so I made half and half with nutmeg. They were delicious, as agreed by my son, my friend, her daughter and her mum and aunt who both used to be school cooks! Well done 🧁

    This was THE BEST carrot cake I have had in my life! I also substituted raisins for half the honey, and used strained yogurt instead of cream cheese! IT worked marvelously! Thank you for this brilliant recipe!

    Just have to say!
    I have not eaten sugar for nearly 3 months and still going strong.
    I baked this tonight and it is absolutely delicious.
    I used dates instead of honey and a few sachets of artificial sweetener and it came out delicious! AND THE FROSTING 🤩 WOWOWOWOW!

    Great Video, This is a good healthy version of cake.
    I love eating cake and coffee for breakfast but the ones I eat are loaded with sugar and very high in carbs.
    I see that you use honey for the cake and maple syrup for the cream cheese frosting, Awesome👍👍

    I had high expectations about this recipe, and it so did not disappoint!! I had a good feeling since it was the very first healthy carrot cake recipe that didn't include raisins (I hate raisins lol), I know I can just not add them, but the fact they were not on the original recipe spoke to me lol. This is delicious and super fluffy! Just made it last night and loved it!

    So I was making this and trying to rush to get it done.... I put it in the oven for about 2 minutes when I realized I never mixed in the melted butter!!! So I drizzled it over the top, then glanced over and saw the walnuts sitting on the counter! Sprinkled those on top also, it all turned out fantastic! I’m going to make it again, with my messed up directions.

Ok, you messed up, it happens, but what you did was brilliant, drizzling butter all over the top, I would probably go with as it is and later try to enjoy eating a dry cake:) I agree, you can go wrong with adding walnuts, they go so well in any oatmeal recipe.       ALSO, do make sure to squeeze all the water from the shredded carrot before mixing with the batter. If there's excess water it will seep at the bottom and make it more soggy, while the top will be perfect. That was my first time mistake, so I knew the fault was mine instead of the recipie.

    I have tried most of your recipes and I have never been disappointed... this carrot cake is a keeper.
    I subbed the melted butter with a mashed banana and applesauce and reduced the honey; it turned out delicious, moist and flavourful. My whole family loved it. Thank you for sharing and keep them coming👏

      Sorry, I don’t quite remember… At that time, I happened to have some applesauce leftover which I mixed with 2 bananas. Then tasted it and added the honey (maybe 50g?).
      Just check that the final texture looks the same.

      I am always very happy to read other viewers’ comments on how they subbed and even switched some ingredients from the original recipe… so, just follow your instincts and make some fun baking experiments😜
