I have made this hundreds of times. I have found that once you put the bottom layer of the crescent rolls in, that if you back that for 5-10 minutes before you put the cream cheese mixture in that the bottom isn't as prone to being soggy.

So delicious! I found this recipe in an old “Pillsbury Bake-Off” cookbook decades ago, and have made it too many times to count. Always a treat, and have never received anything but compliments.
The little “pop” effect on the crescent roll can that you accidentally popped was such a nice touch
I have seen Pillsbury cinnamon rolls rolled out flat to make pie crust. I would be tempted to do that also.

I’ve made this and put a cream cheese filling topped with canned cherries before putting on the top layer of dough. After it baked I made a powdered sugar glaze. Really good

As someone who used to make packaging, you wouldn’t believe the work that goes into making even the simplest cartons and boxes, you would never just open a box and discard (hopefully re-cycle) it again without examining it completely 😊 and appreciate the effort it’s taken to get it into your home 😊

I used to make a variation of this amazingly easy and very delicious cheese cake, flavored with lemon. It is the same recipe, different flavor. Now I want to make it again. I don't remember if the top was frosted or left plain. So yummy.

Update: I made this and it was super delicious and easy to make with the Pillsbury crescent rolls. I brought it to work and the entire tray was gone in a day. I also used a glass pan to make it and it worked perfectly fine. Thank you for the recipe. I will 100% be making this again. It was tasty both warm out of the oven and chilled from the fridge

Whenever I hear/see sopapilla, I always think of fry bread -- like you get at the Fry Bread House in Phoenix or from the Tohono O'odham vendors at San Xavier Mission. I know there are multiple versions. Here in Michigan, a sopapilla dessert is a sweet, soft fried tortilla chips with cinnamon and sugar.
