    Ingredients:
    Graham crackers - two sleeves 2 1/4 cups (270g)
    Granulated white sugar - 3 tbsp
    Unsalted butter - 5 tbsp
    Cream cheese - three 8oz blocks
    Granulated white sugar - 1 1/4 cups
    3 eggs
    Sour cream - 1/2 cup (120g)
    Salt - 1/4 tsp
    Fresh strawberries - 2 lbs
    Granulated white sugar - 1/4 cup
    Cornstarch - 1 tsp
    Optional: red food coloring

    I made the "mistake" of making a couple of your recipes for some coworkers birthdays. I have now been the designated birthday cake maker for all work birthdays. Ten cakes a year. Nine are your recipes. You are so talented and fun to watch. I know I'll always be successful with any recipe you put out.       Everybody loves good food, but (I'm 65 yrs old) so many people cop out and say they don't have time for cooking.

    I’m the newbie here I’m learning: I made a couple of mistakes. Not enough butter, the crust fell apart but I rescued it. Put it back in a cooking plate, took the loose crumbs packed it around the side, melted some butter and drizzled on top of the crust and put it back in the oven for about 20 minutes. It worked. Shared this with friends who raved over it! Thank you!

    I made this cheesecake yesterday evening for a family gathering today and it is absolutely AMAZING and delicious 😋 Everyone loved it and wanted the recipe. I am making this again next weekend for my household because I only had a small piece and that is clearly not enough when it's this delicious lol

    Thank you tor giving real measurements. I know a lot of cooks and bakers can eyeball ingredients, but that doesn't help us get the same exact recipe.

    Tip for water bath - place cake pan in large plastic bag used for lining slow cookers
    The water doesn’t seep through.

    Alton Brown via Good Eats: instead of putting the cheesecake in a water bath put a baking pan of water on the lower shelf of the oven while it preheating.... Making the oven into more of a sauna for the cheesecake. This also works well for things like pumpkin pie or any type of custard pie. It also prevents the surface of the cheesecake or pumpkin pie from drying out and reduces the amount of cracking that occurs. I've done this multiple times and it works really well. I don't ever water bath my cheesecake and they all turn out beautiful.

    I made this for work and it was a hit. It was gone in minutes. The best strawberry cheesecake I’ve had. Thank you for the recipe. I’ve also made the pumpkin cheesecake and that was delicious.

      Maybe my work history is uncommon, but everytime I've brought something delicious and homemade to work, it's like a shark feeding frenzy. Something that might have taken 90 minutes to make is gone in 90 seconds.

    Instead of using the red food coloring you can use raspberry or wild berry tea bag.. I put it in the pan and it worked great!! 👌🏼

    We made this yesterday for my mom's birthday and it turned out amazing! We adjusted the recipe for an 11 inch cake tin, but next time we'll have to make 2 because one is not enough, that's how good this is! 😍

    I have very little baking experience, but was able to make this and it was phenomenal. The only comment i would add is dont be afraid to more melted butter to the crust to make it hold together. Following the recipe strictly, my crust was too dry to hold its shape. Regardless, it was really great!

    I literally JUST finished making this and its ABSOLUTELY GORGEOUS! It was actually much simpler to make, however one thing I reccomend is adding butter in the crust accordingly with the cracker dryness. Mine were dryer so I had to pour in more, and even that doesn't seem to be enough. Its still quite crumbly. However, it doesn't take away from the flavour 😋. The full taste test is yet to be had, I'm just waiting for the guests now. I'll update after ☺️...
    Update: I'm a crust person, & the crust was delicious! Especially together with the filling! The filling is on the tangier side and even after being in the fridge for a couple of hours, its tasted...warm, like a fall kinda vibe. The strawberry puree while delicious alone, did not seem to fit the overall flavor profile of the cheesecake. Next time cut down the sugar significantly, especially if already taste good, to amplify the gracefulness flow between the layers. This cake did end up being a beautiful rustic, warm, homey beauty 🥰

    Im seriously addicted to this channel of wonderful challenges. This is the perfect cake to make for a birthday. I'm gonna attempt to add a circle of whip cream around the border when I make this. 🙏 I'm praying it comes out great.

    I made this cheese cake yesterday, “it is delicious” the lemon takes it to another level, l used cheap graham crackers and they didn’t taste great when I was preparing them and they didn’t bind together well, but I was wrong and it really turned out good, I’ll never use another recipe again, I am so excited about it 😂😂😂 Thanks !!!!!!!!

    Hello John! I'm sure you know this trick to crush the graham crackers by hand without any mess, just toss them into a plastic bag, close allowing some air, and crush them using the rolling pin, either by rolling or hammering. If you're aggravated by something I'm sure hammering will be most satisfying... :) And btw, your recipes are wonderful, thank you for sharing.

    Thank you for always taking care to list ingredients in metric amounts as well! Anyone who's making this with a metric mindset, 8 oz or 270g is ONE package of butter, the amount is listed PER BUTTER BAR. I had to wait for another grocery delivery after I realized my mistake.

    My close family loves cheesecake. I grew up with the deliciously dense cheesecakes. I mostly make something in the middle that doesn't have flour or sour cream. This recipe looks delicious and I can't wait to try that topping! 💜

    I did notice that the printed recipe and the video have parts that don't match. but was able to figure it out. the dessert turned out amazing. all the putsyness of it was worth it. everyone love love loved it, it was talk of the car ride home😄. will definelty be making this again.

    John -- glad you brought up using a ramakin with water versus using a water bath! For my past few cheesecakes, I've been filling a large cake pan with hot water and placing it into the oven under the cheesecase. I'm finding this method provides very comparible moisture compared to submerging the foil covered spring form pan directly into the water.

    Like an ardent Star Wars fan awaiting the latest release, I avidly wait for 3:00 T/T to see what new recipe is available. I immediately hit the thumbs up, because even if it were something that I might not make, the presentation is still going to be worth the wait. I love the strawberry recipes, because to me nothing says summer better than strawberries.

    Hi John,
    this was my first trial at your recipes & cheesecake as well. Your no waterbath technique worked so well. I got compliments from my husband such as never had such fresh & delicious cheesecake. I don't eat eggs so I had replaced it with 2 tablespoons of whipped cream & 1 tablespoon of thick plain curd. Thank you for this easy, quick & wonderful recipe.

    I really like the way this looks John this recipe is so easy l add a little Sour cream in my recipe and just juice of lemon Not the zest and l use a plastic bag to crush my graham crackers it less mess and so much easier nice recipe thanks

    OK, I made the blueberry cheesecake because it had only 2 blocks of creamcheese. I substituted strawberrys for the blues. SO GOOD, all gone too! Thanks.
