Looking for another eggless cookie recipe? Shortbread cookies recipe uses only 3 main ingredients i.e. butter, flour and sugar giving a nice light, tender and crumbly texture. This recipe has dried cranberries added to it for extra flavour and is also great for new bakers.

I had made this cookies 3 days ago and absolutely love it! I didn't had the rectangle mold so I use a similar mold for taco. Its turned out so good and my bf can't stop eating. Thanks for the inspiration Eddie, you're the best 👍

I think it's not necessary but you can try and experiment if you like.

I tried a small batch,( a third of the recipe amount)and it turned out very well, super happy with the taste and texture. I added some almond niblets. My problem was slicing the dough to same size, some thinner ones had browned more but still tasted good. Any tips or tools to slice the dough evenly?
Thank you for your feedback. You need a very very sharp knife to be able to cut evenly especially through the almonds. You can also make tiny evenly spaced markings with your knife along the length to guide you.
I try follow exact formula but the dough turn up to be soft and running, its bcos of use the wrong butter? I ran out of butter and use buttercup instead.
Possible because buttercup is actually not butter.

I'm not sure, have not try freezing it but I think should be OK. How long can it be kept? I don't know.

Yes you can. Thaw it slightly until the dough is manageable before cutting.

You can leave out the salt
Can use granulated or castor sugar instead of powdered sugar?
Better to use powdered sugar for a smoother texture.
My cookies turn out to be crumbles easily. Which steps did i do wrong?
I wouldn't know since I don't know what steps you actually did. If you followed exactly as per the recipe then the cookies should not crumble easily. Make sure that your butter is really soft before creaming with the sugar. Also chill the dough in the fridge before slicing them. Hope that helps.
Hi, made these cookies last night. They are very pretty and tasty.
However, the chopped cranberries became hard bits in the cookies. Is this normal? I followed the recipe exactly. Baked at 62.5 C for 20 - 22 minutes. Please let me know where l' ve gone wrong. Thanks!
It should be Bake in preheated oven at 160C until lightly brown. About 15 to 20 mins for ¼-inch thick cookies. About 10 to 15 mins for ⅛-inch thick cookies.
Anyway, My guess is your cranberries may have been kept too long and became too dry. There could also be different types of quality brands. It shouldn't be hard after baking. Maybe you can try soaking the cranberries in water for awhile before mixing with the dough. So far I didn't have this issue before.

Not very sure but maybe your oven temp a bit too hot.

Why my cranberries is dark and hard when cookie is baked?
Cranberry is not red colour. Did you soak it in water ?
I used dried red cranberries and not fresh ones.
@@ShiokmanEddie i use dried one too but it's very dark red and very hard texture when it's finished
Sorry I'm not sure why. Never had that situation before. Perhaps different quality of dried cranberries. I bought mine at Phoon Huat (Redman brand)
